Yes! I've learned to take notes when I'm splodging things in--because that happens! 😅 You accidentally make something amazing, you want to be able to duplicate it 😊
How Mike salvaged that sauce from being a gloopy thick red substance that tasted like gravy granules to become a smooth, runny, layered and perfectly balanced sauce that was the plates best component was an absolute miracle 😂😂
its funny, I saw him use a bergamot and immediately knew it would be bitter af. Knew Ben went too far you really have to experiment with that thing to get it right, the fact people didn't get stomach issues after should make him feel good lol
@@timm4008 Well, the spoiler was in the video..... but you can't really judge them can you.... or he thought your comment was a spoiler (it wasn't) in which case you are right.... don't read comments before watching a video.
A great chef can keep things 'relatively' simple but do them far better than us normals could, a normal trying hard will see that extra time as an opportunity to try to be creative. The extra time is an illusion, elevating a dish to another level while being quick/efficient/whatever is what a restaurant needs to survive first, then thrive, unless they are aiming for a L'Enclume-type experience but that is fairly niche. An amateur thinks in terms of ingredient over time expediture, a professional thinks in terms of time over ingredient expenditure, getting the most out of simple concepts is the bulk of the restaurant business and gets people to eat dishes out (and pay a premium for) that they could make at home.
That's why they are no longer normals. Mike has enough sense of what works to take the sauce from bland to something tasty just by adding different ingredients. A true normal would end up with something awful.
@@nanoflower1 on that note. Though I would argue they are still normals. I would like to see a future expansion through the addition of „newbies“ or similar (for good, a season or a subseries). Where then challenges like experienced normal vs newbie + chef can happen.
I haven't even seen who won yet, but I wanted to pop up and say I'm delighted to see Mike playing things by ear and just trying stuff. He's becoming very skilled and as he learns to trust his instincts, I expect him to make some truly brilliant meals.
Poor sweet Mike was so on edge that brought Baz on edge which brought me on edge, loved this one 😂 Also, Baz helping Mike just show us their friendship and camaraderie ♥
An interesting video idea would be a chef vs. chef (Ben vs Kush) mystery box Battle, where the normals prepare challenging boxes. Maybe revisting failed pass it on combinations and see how the chefs work with them
I think it would be interesting to have a chef vs chef battle with an assortment of random mystery box ingredients, but the caveat is that both chefs have to randomly choose a normal to partner up with from the spinning wheel! There could be challenges like swapping the person on the team in the kitchen after an amount of time or something else but would be entertaining seeing how the chefs collaborate with their normal
These are great, because Mike really encapsulates what it feels like to be a home cook. The chaos, undercooked meat, making split second decision on whether to commit to an idea, throwing everything into a pot trying to balance the right flavours. And it also shows the gap in skill and knowledge that chefs have from us regular home cooks.
I think an interesting battle would be a long-lasting recipe battle - they get a lot of time to make things that last a long time in the fridge/freezer/pantry, then after a week or two of the ingredients being stored, they get 10 minutes to reheat and assemble.
Not gonna lie, I think the part I enjoyed most about this episode was watching Mike improvise by gradually piecing familiar flavours together to something unfamiliar and new to figure out whether it'd potentially work or not. It's still based on fundamental knowledge, but has that intriguing part of the unknown that makes you wonder whether the theory follows with the practice.
I encourage you to look up the traditional Catalonian meal Calcot - a spring feast centered around those green onions charred and cooked in a wood fire. It's a fantastic regional meal not a lot of people have heard of!
Seeing this video I would love to see the boys compete for a "Butcher's Badge", identifying different raw meats and maybe breaking down a big slap of meat into different cuts. It could be followed by a blind taste test to see if they can identify the meats by taste and texture alone. As always I love the content and can't wait to see what the team does next
The more I watch of y'all's videos, the more I enjoy listening to you talk about how flavors work together. Trying to make something, discovering that it isn't working, and just figuring out what it needs on the fly is something I'd definitely struggle with. I'd be more likely to toss it, but that's...well, that's food waste, and we hate that. I've got a lot to learn.
Inspired by how the normals TOTALLY didn't cheat a little bit here to help out the Huttlestorm by prepping his oven and giving suggestions... Have a Chef v Normal battle but the normals absolutely blatantly cheat to make a premium dish. I just wanna see Ben's face when they pull out a stag feast and Ben got chicken and dumplings 😆

So interesting to contrast how Mike handles the time pressure with how Ben does. Mike seems like he’s let frantic take him over, but Ben (being a chef) is so used to pressure that though he’s clearly activated, he’s focused and thinking ahead.
Love the use of pheasant I know some people are against it but as someone who loves going out shooting and everything that comes with it would love to see you guys work more with the game style meats Like pheasant, partridge or something which is incredible if you can get hold off it Muntjac 😍
Great battle! I do like it when Ben comments on the dishes after the judging is over. I would have loved to hear his insights and perhaps even compliments on Mike's dish from a cheffy perspective. Also, Jamie playing at the pretentious judge was hilarious 🙂
I don't know what Baz's mystery box dish will end up looking like, but I feel like it has to include eggs in the box. Within all of the panic, you know he's going to make something fun with them!
I love that you found calçot's. Though over here with that precise type of "onion" we usually just throw it into a fire, or on coals so the outside gets charred, then peel the outer layer and eat it with a Romesco sauce to dip. DELICIOUS!!!!
It's been a while since we've had a classic Huttlestorm. Both dishes look awesome. I think Ben's was better but given that Mike didn't have a clue where the dish was going until it arrived it was an excellent effort. I'm a little bit in awe iof Mike's "MacGuyvered" Jus.
Ben's relief at winning it is so good to see :D you literally see him breath out there 😂 but well deserved. that extra knowledge and skill came in handy and obviously playing to Jamie's preferences didn't hurt either. just from looking at it, I think I would have preferred to try ben's dish as well. Well done both of you though. Can't have been easy for Mike with none of Ben's knowledge when it came to the meat and fish.

Chef vs normals challenge - refer to Nigel Slater's Appetite cookbook (or any of his cookbooks really). I think he is an amazing cook for seasonal British cooking ideas (and dishes from other cultures) and he is a great storyteller. One thing that I appreciate is that while he provides recipes his suggestions with amazing photos for inspiration are great for 'normals' who love to cook, like myself. Low stress. If you can get him as I guest I would watch that immediately too. Note - I have all of his books (a lot).

Calçots in Spain are typically barbecued whole, then the charred skin is stripped off before dipping them in romesco sauce. Delicious. Never seen them cooked any other way.

Then we get to actually experience and taste your skill. I genuinely think it's a good idea, and I would definitely come by if I ever visit Britain!
I literally had a salad last night with tomato and apple together with a sun dried tomato dressing. It’s odd in theory but was pretty tasty in practice, it was a fridge clearing salad so there were a few odd things😅
Mark’s weird salad idea reminded me that Apple and pomegranate go beautifully in a salsa sort of salad with leafs of choice, diced tomatoes, diced onions (any kind but red goes wild), lime, green chillies, bit of olive oil, black pepper, salt Pair it with a dip made of cilantro, mint, green chilli, salt (all blitzed up) and yogurt
As a Filipino, I can confidently look at a random fish and go: eh 🤷🏽♀️ Because it can either be fried OR put back in some water and made into a soup 😂
In the Southern United States, Green Tomato and Apple Pie is a thing. But it's not really the same flavor mix as using ripe Spanish winter tomatoes, I wouldn't imagine. The tart green tomatoes balance the sweet apple, but a ripe tomato isn't going to have that slightly bitter, tart flavor.
i do feel that the biggest advantage that chef Ben has in these challenges is composure, sure he has more skill but Mike is not a bad cook but he runs around the kitchen in a flurry of chaos. but great video none the less :P :)
