I want to thank all of you guys, and James as well. My wife and I watched cooking videos while we ate lunch or dinner. I lost my wife on Sunday Feb 26, and this is the first video I've even attempted to watch without her. I'll have to come back to actually watch it, because I couldn't see it through tears, and couldn't pay enough attention to know what all happened. But I want to thank you, and a few other content creators for the memories I have of sharing meals, laughs, and learning with my wife while watching your videos. Thank you all.

I would love to see Ben and Kush each create a dish from the same ingredients not necessarily in competition, but without consultation.
I think as a video, it would be lovely if given some ingredient and told to 'celebrate' it, and create a small dish out of it, a few times. It would be a great platform for getting their thoughts on what makes that ingredient special, and getting their thoughts on how to best celebrate it would be quite interesting.
For short cooking times, I'd LOVE to see an edit that actually shows the full open the box all the way to meal done for Ben. I think that would be a fun thing to watch

Not Barry forgetting that aquafaba can be used as an egg replacement when the chickpeas are sitting right there😂
ill give him credit though the technique he did do is a very popular and delicious one for vegan breaded foods as its basically tempura coated in breadcrumbs
I'd have used something like chickpea to make an eggy type mix but they didn't have it and not sure blitzing the chickpeas would have worked
Edit: watered down tahini might have worked
I was thinking that the banana watered down with coconut milk 9r even just some water, made into a paste, would work in place of the egg as well. Might be a bit too sweet, depending on the ripeness of the banana though.
Just the fact that Ben can talk through his process in a 15 minute battle and not get sidetracked is amazing to me.

I love how the box was very Asian (i thought: maybe some kind of curry) and they both made dishes that I very much associate with the British. 😆
The green sauces were very intriguing - makes me want to give it a go.

Clever of Barry to play to Mike’s palate. Ben’s cheffiness really did shine.
Gotta love Baz asking J for an alternative to egg for pane, when he has a can of aquafaba which is very commonly used as an egg alternative in things like cakes or.....pane.
This video really showed two different views on vegan food in my opinion. Barry right from the beginning thought about meat substitudes and what he could use as "chicken", compared to Ben who thought about a meal that is vegan.
IMO it is way easier if you don't think about how to replace meat and instead just think about how to use vegan ingredients.
100% agree. And they’re usually also the dishes that taste better given that they’re not trying to be something else.
As a chef who mostly eats vegetarian this is a continuing frustration with a lot of vegan/vegetarian food and restaurant offerings. It doesn't always have to be about some sort of faux meat. When you go into a vegan restaurant and they don't offer a succotash, ratatouille or some other great vegetable stew/soup but instead is offering a bunch of highly processed fake meat you have to wonder about what they're thinking.
When I lived abroad I had a friend who constantly complained about the lack of vegan products in that country - but they had absolutely everything but fake meat!
@@KenS1267 I would say as a hungry hungry vegan all I seem to get are vegetables and it leaves me feeling so unsatisfied, so many places don't add any protein to dishes and it sucks 😥
As much as I like Ben's approach and I like that thinking better, the carnivore in me would like Barry's food better. If I'd ever go vegan or vegetarian, it would not be because of the animals and those excuses some pretentious vegans uses but because of my health. As it is now, I have limits on what meat I eat and how much. Going full on meat substitute and slowly transitioning to more uncamouflaged vegetable would be ideal for me. I love beans and some vegies so the problem is more on how they are cooked and not because they are vegetables.
I would love to see you do one of these with a gluten free challenge. As someone who has recently been diagnosed with coeliacs. The charity Coeliac UK has been super helpful in terms of recipes and I would love to see what you guys can come up with!
If you're intimidated by where to start, certain cuisines (Indian, Asian if you get the right soy sauce, and American southwest) lend themselves more easily to GF cooking than the typical US diet (personally can't speak for the typical UK diet). Baked goods like brownies can sub in GF flour with no issue but any yeasted recipe will need a specific GF recipe. If you're trying to not go broke, aim for naturally GF carbs like rice and potatoes (another reason Indian/Asian work so well) instead of the fancy expensive pastas and stuff. Hopefully that helps! I remember how overwhelming it was at first.
Yes! Came here to say something similar! Its overwhelming in the beginning. But if you think about it, a lot of stuff you already eat is gluten free! Typical Sunday rost, just swap for a different gravy (i like Bisto caramelized onions) and then your dish is gf! There is gf breadcrumbs to fry stuff etc, just change to gf pasta and do as usual really! :-) it gets easier over time!
Also, i don't know where you live (ofc but the most supermarkets in the European countries have lots of gf stuff. In UK i think Tesco or Morrison is best, here in Sweden the Ica is really good 😊
@@evelina4909 I'm glad im not a coeliac. But after a closer inspection of my diet, I realized that most of the stuff I eat is already gluten free. This week I ate mostly stew and potatoes. If you like pasta, try buckwheat pasta.
However, I got a nice deal on TooGoodToGo for bread, so I plan on making a bread soup tomorrow.

As much as I love Ben’s dish and I respect him for doing so much in 15 minutes, he did make beans on toast and ensured all sauce was green. Barry’s was a mess balance-wise but it was creative and for that I applaud him
I would love to see the unedited 15m/30m as well as seeing a version where Ben's side doesn't start until the "normal" has had their 15 minutes for a contrast as to what they use the extra time for...
i can't imagine turning out a proper meal in 15 minutes, the lunch I made to sit down and watch this video took 20 and it's the simplest wrap you could imagine haha. awesome!
While I loved the actual content (especially Ben's little "Oh!" when he heard he had 15 minutes) the video plug for Sidekick was my favourite part of this video. That kid nailed the "Where's the Dish" delivery! ❤️

I would love to see Ben, Kush and the food team do some sort of video on how they create recipes, like what they think about, how they come up with new ideas, how to build a dish and so on.

I would love to see you guys do a beat the chef, but it's a normal with a meal kit with instructions, and a chef with the same ingredients but no instructions. I would actually love to compare the two- if a meal kit like Chef's plate can actually compete with a chef.

Loved watching this as someone who struggles with dairy. I've been experimenting with silken tofu in a few ways and loving it, though the idea of blending it with spinach never occurred to me. I'll definitely be trying it.
The mango chutney in a quick pickle was downright inspired. Loved it.

Flax seed powder mixed with boiling water to replace eggs.
1 egg = one tablespoon of flaxseed mixed with three tablespoons of water and allow to sit for about 5 minutes

I love how when people talk about a plant-based diet the first thing they think of is lack of nutrients, which is not totally unfounded but it is quite off-base to think that it would be somehow always be worse than a regular diet, all diets can be terrible depending on how you do it, I think I should start calling out the stuff regular people eat for having lack of nutrients from now on >:) Then we'll see how they fell when the roles are reversed. Plant's are some of the the most nutrient dense things you can eat lol.

Another twist to try to throw off the judges is to have the normal sitting on the side plate the chef's dish while the competing normal plates his own

I love how creative these were. My go-to is a stir fry with similar ingredients, so it was great to be inspired, especially because they only took 30 minutes or less.

I like to see what you can do up against a creative challenge and time, something where you can refine your thought process from all the ideas into flavors, textures, appearance, style and execute them just the way You think You should similarly as you would an art piece, letting your ingredients be the medium and let your creativity bring it all together!!

I think the issue with the "time limit" format is that it tends to point towards dishes and cuisines that lend themselves to being cooked quickly. I don't think that forcing Ben to have half the time really balances things because he can just work around that, in the same way that everyone always makes Asian food because it's easier to cook faster. I think you should probably extend the time limit to an hour so that other cuisines get a look in and hobble Ben by forcing him to cook with only one instrument (microwave, hob, blender, oven, toaster). Nothing against Asian food. I made a curry yesterday. Probably it's my favourite continent food-wise, but not every time.

You know, most of the peels and ends can be made into a healthy broth, even vegan broth. The rest of us would add bones, raw or cooked... I'm sure there is something not safe, but I haven't heard of it yet. This broth can be used in place of water, which means whatever you are cooking is healthier.
Chickpeas and spinach is a classic combo! There's an amazing Tapas recipe that combines those. (With, ofc, a metric shitton of olive oil 😁)

Those ingredients just screamed "mid-week curry" to me, as they are what I cook anyways daily.
I used Kush's tip to make a flour water mixture instead of egg for breading chicken. Worked like a charm! Will do this from now on!
I really liked the sidekick ad. The video was interesting but not sure I would ever make either recipe.
a substitution for egg would be ground flax seed with a little bit of water. So one tablespoon for ground flax to three tablespoons of warm water (this is enough to sub out for one egg) let it sit to thicken and then whisk. the more you whisk the more eggy it'll be.
I loved the look of the one Baz did. I'm more likely to buy that than Ebber's. This is the best part of my birthday so far. Thanks, guys
