His coaching style is fantastic. Leads them to their own answers instead of just giving them, is brutally honest but never comes across as mean spirited in any way. Walking that line betweent telling someone you know they can do better without making them feel like they've failed is super tough. He's an excellent teacher

People who truly care about what they do want to help others do well in that field. All of the chefs and normals on sorted do this, and you can tell they all like each other. If your guy friend isn't screwing with you, that's when you know you aren't really friends. Guys screw with each other, it's in the DNA.
But being snarky or insulting isn't bad, if it's done in good fun.

The great thing about this format is that it shows that you can cook a fairly decent dish even if you are a normal, but it clearly highlights the differences between a trained chef and home cook. Sometimes when it is only Ben or Kush cooking, their methods and thinking seems so obvious, but this simultaneous stuff really directs the attentiton to the differences that can add that extra touch.

for a one-off not really all that much, unless you take away tasting before serving too, there's no real hard comparison to hold it against, it should at least be held against some baseline
but if you're going to crank out thousands of dishes and have it consistent eyeballing it, yeah there's a level of skill/learning curve to that,
or having a gigantic batch so they're still uniform and therefor the baseline lol

So fun things about being trained and having a lot of experience for the most part. Even if it's not exact. Generally we can just eyeball it or measure it in our hand. Need one pound of pretty much any type of meat I can cut it. The granted a pound of beef is not the same size as a pound of chicken or a pound of salmon or a pound of tuna or swordfish.

Home cooks can learn it too. If they have a tendency to make a lot of the same dishes, they will eventually learn how to make them without measurement. I will always measure baking stuff though. I can tinker a dish and make it delicious even if I mess up. Baked goods are not so forgiving. That really is kind of a science with those ones. It is literally Chemistry. And food science is a thing.

Grandmothers the world over are giving you the side-eye, I suspect 😂
In my part of the world, family recipes are always a 'measure with your heart' situation!

So... Exactly how has Kush got 17 years cheffing Michelin start restaurants while still looking like he's in his twenties? What did they feed him in there, virgin blood?!?
I freaking love these cook offs, they're simultaneously competitive and wholesome and I would've absolutely lost myself laughing at the infinite loop of pasta if my partner wasn't trying to sleep in the same room. We've all thought about it, Kush just said it out loud.
