It's not granulated sugar. Ask for it in a cake shop. It comes in different forms so you can Google it to have an idea what it looks like. Hope this helps!

Yes, you can also use sugar to make a sugar sail but the difference is u have to get the temperature just right. If you over cook the sugar, you get a cloudy sail and you cannot recook the sugar but in the case of isomalt, you can just reheat it if the sail breaks or the shape does not come out the way you want it.
