Hi there! I would like to ask if I can assemble the topper and keep it in the fridge a day before delivering the cake? Will it create water droplets on the isomalt?? I love love love your tutorials

hello, congratulations for the video. For decoration, If we don't have isomalt, can ordinary caster sugar do the trick?

Hi I tried to get of my imperfections i.e bubbles before I placed my cake in fridge is there a reason why u use hot scraper after cake has been in freezer?

What cream are u using?
Actually Swiss Meringue Buttercream do not desolve with cocoa powder as per my observation. Do you use American buttercream cream or double cream. instead of isomelt can I use plain sugar.pls advice.

It's not granulated sugar. Ask for it in a cake shop. It comes in different forms so you can Google it to have an idea what it looks like. Hope this helps!

Your cakes are beautiful, thanks for sharing. What can I use in place of isomalt? Can I use granulated sugar?
Yes, you can also use sugar to make a sugar sail but the difference is u have to get the temperature just right. If you over cook the sugar, you get a cloudy sail and you cannot recook the sugar but in the case of isomalt, you can just reheat it if the sail breaks or the shape does not come out the way you want it.
