Thought I’d never see a tamale on keto ever again… then watching you was like seeing family gathered around the table talking and laughing again so thank you for sharing your little flavor secrets and a huge thank you for bringing forgotten Holiday memories back!!!
So I just made tamales using this masa recipe. I made cheese and jalapeno, they came out delicious! The tips came out just a lil dry so I may need to cook them in less time or add more Manteca. Overall, they are delicious! Thank you Mayra, coming in clutch as always!!
I made the tamales last Sunday. I make glass bowls with masa, chicken, cheese, jalapeno and masa on top. Wrap in foil and steam. I eat them for lunch at work and omg, this recipe is the bomb!! I warmed up my tamale bowl at 325 for like 45 mins and it was crispy and the hot sauce on top provided just enough heat! I could've ate an other bowl of it but I'll save it for tomorrow 😊 bravo! Love this recipe and I will be making it again
Nunca pensé comer tamales otra vez en mi vida…..doing keto for a few years now, love tamales. The only thing I can say is…I Love You!! For doing this, seriously sos la mejor!! No soy mejicano soy uruguayo Mexico tiene la mejor comida del mundo! I suerte I’m so excited I’m doing it this weekend…..thank you….thank you
A little note. Mexican tamales are made in banana leaves and corn husks. The type of "wrapping" dependes on the region of the country. In some areas, corn husks are very popular while in others, the traditional tamales are only wrapped in banana leaves. This is one of the things about the variety of Mexican cuisine. I am going to try your recipe for the masa!! Thanks!
My mouth is watering, like I haven’t had tamales in 2 years. 😢 now I can 🎉eat them without worrying about the carbs. Yes 🙌🏻 thank you this looks delicious
In Ecuador we wrap tamales in Achira leaves (a kind of large leaf Canna lily) and they are delicious. However, the BEST tamales I ever had were Mexican tamales wrapped in corn husks!
Good Sunday morning Mayra. As always, those Birria tamales look so much better than store bought. I'm definitely going to have some for lunch today. My mouth is watering in anticipation. Thanks for sharing another great recipe.
In central America like El Salvador from where my mom is from, they wrap tamales with banana leaves. I've had Mexican tamales that were wrapped in banana leaves as well so it really depends on what region in Mexico it was made. I've never had birria tamales. My mom makes some bomb birria and we eat it like that or make birria tacos or quesadillas. I will like to try out your keto masa looks delicious and I won't feel guilty that my blood sugar will spike after.
you absolutely hit me at home with these tamales so i can have these for Christmas but much prefer pork over birria but that is our preferance..love your videos....:) :) :)
A restaurant near me makes the best birria. I could just buy a plate to my o and use it. Use the juice instead of water and may be ad a bit of powdered pork rinds to the masa
Yes, make them all by yourself. It isn't hard, it's repetitious. Cook the meat the day before. Don't make them tiny like in the store but fill those corn husks up leaving only a bit at the bottom to fold up (the small end is the fold up end). If you don't have a tall pot to stand them up, you can lay them flat on a steamer thing in the bottom of a big pot. Add water just to the steamer thing so you don't get water in the tamales. Check after half an hour and add more water if needed.

Taste the dough and adjust seasonings if necessary. Prepare the Corn Husks: Spread a thin layer of lard on washed corn husks, followed by a layer of the prepared dough. Set aside. Cook the Birria Filling: Shred the cooked Birria meat and heat it on the stove with the blended sauce for about 5 minutes, until well combined. Assemble the Tamales: Place a portion of the Birria meat mixture onto the dough in each husk. Roll and fold the husks to enclose the filling. Steam the Tamales: Fill the bottom of a large steamer with water. Arrange the tamales standing upright in a circular ring. Steam for 1 hour, or until the dough pulls away cleanly from the husk. You make it sound like it’s absolutely delicious. They look really good, I don’t know if I could do it by myself though? I have never made homemade tamales. I would love to try. Maybe one day. I’ll let you know if I do. ❤❤❤

I’m so happy I found this recipe before the holidays start but I saw on the online recipe it says Mexican cheese…may I know what brand because I’m confused on that part 😊
Mexican Tamales are also made out of banana leaves ?? It's tends to be made out of Mole (tamales oaxaqueños) / spicy red chicken you haven't tried them before? They are bomb .
Mayra an we use butter instead of lard? My sons girlfriend is vegetarian and I thought I’d use jalapeños and jack cheese as the filling instead of meat. Bu the masa I’m worried about. How would we do an equivalent in measurement
🫔❤️ wow what a great idea worthy of more research. Grew up in Tucson and a favorite was white masa with jack cheese and pabalano strips. 🤔 suppose you could try a small batch with ½ or ¾ butter but that sounds really good
Since u stopped adding ingredients in the description all your ingredients most of time are wrong in your website .... i recommend you bring back the ingredients in description or u will start losing audience
I don't understand the word you are calling the meat filling. You said you would include the recipe in the description box. I am not seeing it there. But since I can't understand the name you are calling it perhaps I don't know what I am looking for.
Have you ever made sweet tamales? I had them in my 20's. They had some raisins and were sweet. Would some cornbread extract give a bit more masa flavor?
Wait a minute. The way you rolled that, you can see that you hesitated then just rolled it up where it's going to stick on the paper. Like it did and you cut out of the video 🤣🤣🤣
@@EMVelez They are called pasteles and they are made with banana leaves and the filling is not corn masa but made with a mixture of yautia and verde plantain masa. The center is usually pork or pollo con garlic, olives, and other things added. I was simply saying that we wrap them in banana leaves.
@@katrinaperez5254 Dude..,I’m Puerto Rican. You don’t need to tell me what pasteles are or how they are made 🙄. I was agreeing with you and pointing out that she incorrectly mentioned South America using the banana leaf.
Where do you get a good meat lard? The lard at the supermarket is basically nasty margarine. They call it shortening but it’s that messed up horrible vegetable oil that’s been hardened in some kind of lab process. Maybe they don’t do it the way they used to but it’s still just as bad if not worse, I’m sure.
I was saving the fats from my cooking, but chicken fat is not healthy. It’s omega six mostly because they are fed grains. And beef fat also is not great unless they are grass fed, which is very very expensive where I live. $15 a pound, even though I see other people posting that only pay seven dollars a pound. They take advantage of us here in New York City.

Making tamales with my family are some of my favorite memories ❤
My family made tamales yesterday and I was the only one that couldn’t eat them. Now, I’m on RUclips looking up tamales keto recipes. Thank you!
But it’s only one time

In Ghana both corn husk and plantain leaf are used in wrapping for steaming corn meals
Never made tamales with birria, but I will try it. Just made a ton a regular pork and sweet tamales.
There's NOTHING like a good ol' tamale 🫔!!!
Thanks, Mayra!♥️♥️♥️👏👏👏
You are welcome ☺
We need to make this asap. Thanks for the tip on the lard smeared on the corn husk. We made normal tamales last year and ours were sticking a bit.
That’s what I’m here for, sharing my tips 😊You are welcome!

Central Americans also use banana leaf for tamales. Much more sustainable than foil😊
They look great. Thanks Mayra.
In Honduras (Central America) we use banana leaves and olives in the mixture 🤌
These look so good and so excited they are no corn! Corn is toxic☠️
I need to make this 😍
What would be the instant pot cooking time?

Awsome thank you for the recipe ❤. I’m excited to eat this I thought I was going to miss out on tamales 🫔 this year

Do you make your own verde y rojo salsa para tu tamales 🫔???

Where did you get that tamale (steamer pot)?! I don’t see it in your Amazon storefront.

I read the recipe, but I'm not sure what you mean by Mexican Cheese. There are lots of mexican cheeses. Which one?

Mexican cheese
Can we use bacon grease if we can't get lard?
Can you freeze them?
Is there something that can be used to replace the lard?

Birria is typically goat meat but you can use beef.
