OMG we just made our first batch of tamales ever, and they were FANTASTIC. We added one tablespoon of sweet corn extract to your recipe. We made 21 tamales in one 4 cup almond flour batch. Yes I made it exactly how she made it, the only difference is that I used a different meat. Oh and for the dough at the end I ended up adding a little bouillon and cumin. I made about 30 tamales, but I still had leftover meat. It was my first time wrapping a tamale so they were a little small 🤭They were small but very tasty and flavorful
I loved seeing your mom in the kitchen with you. When I was about 7, a woman named Lupe taught me to make traditional pork burritos. I still make them the way she taught me 53 years later. What does Texas have to do with tamales lol .. it’s a Mexican meal depending what type of Tamal is being done .. cause they can also be from Veracruz or El Salvador, Honduras

This Texican gal feels this. You ain't gotta be Mexican from Mexico to enjoy Tamales. But Christmas for us is definitely the time that we spend in the kitchen making all of our favorite foods because it is not usually hot. Although this year, it is 75 at night and humid. I still have tomatoes growing 😆 You know what else is good? Fajitas, a big ass pot of frijoles, grilled tortillas, salsa and sipping on that Don Julio and dancing until you fall over. 👌 Girl, enjoy this time of year and eat what ever you want and celebrate it BIG !
We love tamales! I don’t know if it makes a difference with the almond flour but my mama said try whipping the lard or shortening till it’s kinda fluffy then continue with the rest. I think that makes them fluffy but they look yummy to me!! Thanks for sharing Myra! Tell your mama thanks too!

So, I finally made these…took me all day! I don’t like too much spice, so I took out a couple of the spicer chiles, and added in a large one of the milder ones. The pork mixture turned out great! My husks were small pieces, which made it hard to wrap them, and some came open when steaming. I wasn’t too fond of the texture, but after putting them in the air fryer and crisping them up some, they were amazing! Next time I’ll make the meat mixture the day before so it’ll go quicker! 💖
I don’t like things too spicy. If I were buying salsa in a store I would stick with mild to medium spice level. Did your substitution of chiles make it more like a medium spice level? Can you clarify which types you removed (and how many) and what type you added (and how many). I’m COMPLETELY clueless about peppers.🤣 I was wondering how spicy her recipe is. I have made these several times including today and wanted to thank you for introducing them! I assumed tamales were off my menu living low carb and was so happy to have them again. I use a scoop (like an ice cream scoop) and press my “masa” balls in a tortilla press to get them flat and uniform. I can knock out a couple dozen in 15/20 minutes and they steam up awesome because they are the same thickness. Got some pork, some black bean and jalepeno, and chicken and cheese for dinner tonight. Always a crowd pleaser and my family (even those who are not low carb) like them as much as the masa tamales I made years ago.
Garbanzo bean flour is keto friendly and tastes just like corn meal. I make a keto cornbread that tastes exactly like the real thing! I would love to try this recipe with a little of that added in. Looks so delicious
My brother and I made these today and regular tamales for his wife kids and suegra. We used the keto meat and sauce for both sets and it all turned out amazing. Thank you for the recipes, we also make a salsa verde for half of them.
Omg I'm dying to eat this! I LOVE tamales! And my family gathers at my grammas every Christmas Eve for tamales, rice and beans. This year I don't think it's going to happen because of Covid and it's so depressing. This video is great and looks so close to the real thing. It lifted my spirits. Thank you! I cook my puerco in the crockpot, it comes out perfectly. Sure it take a long time, but there's nothing like that smell! You can start it at night and by next morning it will be done!
Tried this recipe. Taste and texture is darn almost identical! Equally delicious! Some tips: 1) I used the water from canned corn, with half the kernels to steam the tamales (and added water of course).. This added corn flavor and probably catbs, but I justify this that these are still probably significantly less carbs that the real deal. 2) The cheese adds a lot of salt. If I were to do this again I would add the chicken buoillion only and incrementally add the remaining salt and perhaps omit the salt altogether. 3)I used melted butter to spread on the corn husks instead of lard. If I were to do this again, I’d use unsalted butter. This added a bit more salt than I would’ve liked but worked great and added a nice flavor. Thank you sooo much for this recipe! This is officially my most favorite keto dupe recipe! Sooooo so good! I don’t even think there’s much of a difference.

What is in the bottle on the tray with the masa spices? Looks like it says “Corn Bread” flavoring. I was thinking of adding some Amoretti Sweet Corn extract because that’s what I use to make my keto cornbread.

Thank you so much for answering an unspoken prayer. I was just discussing this very topic in a recent conversation regarding traditional family recipes that are linked with the celebration of our Savior’s birth. The “many hands” makes for quick work. I recalled the aromas of my Tia Eva’s kitchen in Corpus Christi, Texas when my father took us down there for a family reunion. I have Barrera, Trevino and Dominguez in my bloodline when my grandmother fell in love with a tall, angular, ivory-skinned Irish man fresh off the boat. They had sixteen (16) children. My father had many, many stories but his favorite were of helping his mother in the kitchen. When I was watching you, I was thinking you are so lovely to do this for all of us out here wishing we could enjoy the foods of our memories but avoid the issues of diet-related illnesses such as T2 Diabetes, cancer, heart disease and more. Muchos Gracias, my dear! You asked for suggestions, so here are mine: 1.) Cube the pork shoulder while the salted bone roasts in your 500 degree Fahrenheit oven for 25 minutes 2.) Season with salt before pan-searing the cubes of pork shoulder, fat-side down to render out the fat and crisp the exterior. The Maillard Reaction of the caramelizing fat and meat will give an intense flavor to the puerco. 3.) Toast the dried chilis in a dry skillet over medium heat to release the oils and deepen their flavor. 4.) Place the golden brown pork bone and the chunks of seared pork in your pressure cooker with the pan jus. 5.) Pan Jus: Use the drippings from the pan-seared pork to sauté the onion and garlic before deglazing the fond in the skillet with warm water. 6.) The cooking time will be MUCH shorter since it’s in much smaller pieces. 7.) Remove the chunks of soft pork to a bowl before adding the toasted chilis in the resultant broth in the cooker before blending with a stick blender. Taste for seasoning (add your cumin, salt and pepper at that time). 8.) Pour over your pork and stir to quickly shred the meat into the sauce. I love the fact that you used fathead dough as your masa. I had been watching that pan of cornbread on your stove thinking you’d use it to become the basis of your masa as that’s what I plan to do. I use a 50/50 portion of CarbQuik and almond flour with baking powder, corn extract (Amoretti’s), salt, eggs and melted lard to make a big batch in a hot cast iron skillet (browning the bottom into a yummy crust). Afterward, grind it up and combine it with the melted cheeses for a much more dense and flavorful masa. This was a labor of love on your part and I cannot thank you enough. We’ll all do things the way we learned it but to make it Keto, you’re right...we have to do things a little differently. Make sure you are spreading the masa on the smooth side of the ojas (husks). This helps the masa not stick. :)

We love tamales! I don’t know if it makes a difference with the almond flour but my mama said try whipping the lard or shortening till it’s kinda fluffy then continue with the rest. I think that makes them fluffy but they look yummy to me!! Thanks for sharing Myra! Tell your mama thanks too!

So, I finally made these…took me all day! I don’t like too much spice, so I took out a couple of the spicer chiles, and added in a large one of the milder ones. The pork mixture turned out great! My husks were small pieces, which made it hard to wrap them, and some came open when steaming. I wasn’t too fond of the texture, but after putting them in the air fryer and crisping them up some, they were amazing! Next time I’ll make the meat mixture the day before so it’ll go quicker! 💖
I don’t like things too spicy. If I were buying salsa in a store I would stick with mild to medium spice level. Did your substitution of chiles make it more like a medium spice level? Can you clarify which types you removed (and how many) and what type you added (and how many). I’m COMPLETELY clueless about peppers.🤣 I was wondering how spicy her recipe is.

I have made these several times including today and wanted to thank you for introducing them! I assumed tamales were off my menu living low carb and was so happy to have them again. I use a scoop (like an ice cream scoop) and press my “masa” balls in a tortilla press to get them flat and uniform. I can knock out a couple dozen in 15/20 minutes and they steam up awesome because they are the same thickness. Got some pork, some black bean and jalepeno, and chicken and cheese for dinner tonight. Always a crowd pleaser and my family (even those who are not low carb) like them as much as the masa tamales I made years ago.

Garbanzo bean flour is keto friendly and tastes just like corn meal. I make a keto cornbread that tastes exactly like the real thing! I would love to try this recipe with a little of that added in. Looks so delicious

I cook my puerco in the crockpot, it comes out perfectly. Sure it take a long time, but there's nothing like that smell! You can start it at night and by next morning it will be done!

Tried this recipe. Taste and texture is darn almost identical! Equally delicious! Some tips: 1) I used the water from canned corn, with half the kernels to steam the tamales (and added water of course).. This added corn flavor and probably catbs, but I justify this that these are still probably significantly less carbs that the real deal.
2) The cheese adds a lot of salt. If I were to do this again I would add the chicken buoillion only and incrementally add the remaining salt and perhaps omit the salt altogether.
3)I used melted butter to spread on the corn husks instead of lard. If I were to do this again, I’d use unsalted butter. This added a bit more salt than I would’ve liked but worked great and added a nice flavor.

So eager to try this out! I haven't been able to eat, much less cook, tamales for the past 20 years because of a corn sensitivity. Had been wanting to try our family's traditional pork filling with a masa typical of Puerto Rican pasteles, but then I went keto. Now, I have renewed hope! What is in the bottle on the tray with the masa spices? Looks like it says “Corn Bread” flavoring. I was thinking of adding some Amoretti Sweet Corn extract because that’s what I use to make my keto cornbread.

I was just discussing this very topic in a recent conversation regarding traditional family recipes that are linked with the celebration of our Savior’s birth. The “many hands” makes for quick work. I recalled the aromas of my Tia Eva’s kitchen in Corpus Christi, Texas when my father took us down there for a family reunion. I have Barrera, Trevino and Dominguez in my bloodline when my grandmother fell in love with a tall, angular, ivory-skinned Irish man fresh off the boat. They had sixteen (16) children. My father had many, many stories but his favorite were of helping his mother in the kitchen. When I was watching you, I was thinking you are so lovely to do this for all of us out here wishing we could enjoy the foods of our memories but avoid the issues of diet-related illnesses such as T2 Diabetes, cancer, heart disease and more. Muchos Gracias, my dear!
You asked for suggestions, so here are mine:
1.) Cube the pork shoulder while the salted bone roasts in your 500 degree Fahrenheit oven for 25 minutes
2.) Season with salt before pan-searing the cubes of pork shoulder, fat-side down to render out the fat and crisp the exterior. The Maillard Reaction of the caramelizing fat and meat will give an intense flavor to the puerco.
3.) Toast the dried chilis in a dry skillet over medium heat to release the oils and deepen their flavor.
4.) Place the golden brown pork bone and the chunks of seared pork in your pressure cooker with the pan jus.
5.) Pan Jus: Use the drippings from the pan-seared pork to sauté the onion and garlic before deglazing the fond in the skillet with warm water.
6.) The cooking time will be MUCH shorter since it’s in much smaller pieces.
7.) Remove the chunks of soft pork to a bowl before adding the toasted chilis in the resultant broth in the cooker before blending with a stick blender. Taste for seasoning (add your cumin, salt and pepper at that time).
8.) Pour over your pork and stir to quickly shred the meat into the sauce.
I love the fact that you used fathead dough as your masa. I had been watching that pan of cornbread on your stove thinking you’d use it to become the basis of your masa as that’s what I plan to do. I use a 50/50 portion of CarbQuik and almond flour with baking powder, corn extract (Amoretti’s), salt, eggs and melted lard to make a big batch in a hot cast iron skillet (browning the bottom into a yummy crust).
Afterward, grind it up and combine it with the melted cheeses for a much more dense and flavorful masa.
This was a labor of love on your part and I cannot thank you enough. We’ll all do things the way we learned it but to make it Keto, you’re right...we have to do things a little differently.
