  • This Chinese bakery inspired savoury cookie recipe is filled with scallions and meat floss, bursting with umami flavour that is simply irresistible.

    Scallion & Meat Floss Cookies
    Meat floss 20g
    Scallions (green part) 5g
    Corn oil 2 teaspoons
    Unsalted butter (soften) 50g
    Icing sugar 10g
    Whole egg (room temperature) 18g
    Cake flour 90g
    Almond flour 20g
    Sea Salt 1g - 1.5g
    Egg wash
    1. Finely chop scallions, add 2 teaspoons of corn oil to chopped scallions and stir to coat them with oil. Set aside.
    2. Finely chop meat floss, set aside.
    3. Let butter soften until you are able to make an indentation easily with your finger.
    4. Mix butter with a silicon spatula until smooth, add icing sugar and mix until well combined.
    5. Add ½ of the egg, mix well before adding the next batch.
    6. Add remaining egg and mix until well combined.
    7. Sift in cake flour, almond flour and salt, mix until combined, do not over mix.
    8. Add scallion and meat floss, knead with your hand until it comes together.
    9. Wrap dough with cling wrap, flatten the dough with rolling pin.
    10. Refrigerate for 1 hour.
    11. Preheat oven to 170 degree Celsius.
    12. Roll dough into 18cm * 18cm square.
    13. Cut into long strips with the measurement of 9cm * 1cm.
    14. Transfer them to baking tray lined with perforated baking mat.
    15. Brush them with egg wash.
    16. Bake in the preheated oven for 15-20 minutes.
    17. Remove from oven, let them cool down slightly, when the cookies are warm, transfer to wire rack and let them cook down completely.
    18. Store them in airtight container.

    咸香香葱肉松条
    肉松 20g
    香葱 (绿色部分) 5g
    玉米油 2 小匙
    无盐黄油 (软化) 50g
    糖粉 10g
    全蛋 (室温) 18g
    低筋面粉 90g
    杏仁粉 20g
    海盐 1g - 1.5g
    蛋液
    1. 香葱切碎,加入2小匙玉米油,搅拌均匀,备用(油可以防止香葱出水)。
    2. 肉松切碎,备用。
    3. 黄油室温软化至可以用手指戳出个洞。
    4. 用硅胶刮刀拌黄油至顺滑,加入糖粉,搅拌均匀。
    5. 加入一半的蛋液,搅拌至完全吸收,再加入剩余蛋液,搅拌均匀。
    6. 面粉,杏仁粉和盐过筛加入面糊中,切拌至无干粉。
    7. 加入切碎的肉松和香葱,用手揉至成团。
    8. 面团用保鲜膜包好,用擀面杖擀平。
    9. 冷藏1小时。
    10. 烤箱预热170摄氏度。
    11. 把面团擀成18厘米 * 18厘米的方形薄片。
    12. 切成9厘米 * 1厘米的长条。
    13. 把切好的面团转移到铺好烤垫的烤盘上。
    14. 刷上蛋液。
    15. 入炉烤15-20分钟。
    16. 出炉后稍微晾凉,不烫手就可以转移到烤架上凉至完全冷却。
    17. 放入密封罐保存。

      18g egg less than half, the remaining egg can be used as egg wash
