Can someone please tell me the difference between a regular mayo and Kewpie mayo? Almost every recipe I want to try has Kewpie mayo in it and it's like an important ingredient. I want to know if it's possible to substitute it with regular mayo or not.
Kewpie mayo is just a brand, they differ a bit because its thinner than regular mayo. but its still mayo. if it tastes good with normal mayo then, why not
Japanese mayo like Kewpie is made with egg yolks only, no egg white. It's creamier, and not as sweet as most American mayos. If you can find it, it's worth it.
According to some views, it's permissible since the amount of alcohol is minute eg 1% and doesn't intoxicate you. There's always some alcohol presence in fermentation depending on the process ie alcohol percentage. If in doubt, please check with your local Imam. Just like it's permissible in Islam to use white, red or balsamic vinegar. The only ruling is Muslim can't produce them as it'll require them to process the alcohol which is HARAM. You can find Halal gochujang and other various seasonings online.

FYI, authentic Italian parmesan isn't HALAL due to the use of animal rennet. In Europe, there're protection laws regarding cheese origins and names.
