Hi Joel and lovely Li ☺️💓. Wonderful video as always. I absolutely love the flavours of Pad Thai . I'm allergic to both shellfish and peanuts so probably the worst dish for me but I still have it 🤣. Two strong antihistamine tablets before and then I only have to spend half the night talking to the big white telephone in the bathroom. I'm clearly a rebel. I won't stop eating something I'm allergic to unless it will actually kill me. Love the variety of pad Thai. We literally only have Pad Thai with shrimps here. Interesting fact about traditional dishes. Congee or jook actually originated from India. Not actually China or Thailand. It was a way to stretch rice rations and broken rice was often used so rice porridge was a good way to fill you up while using less rice. Also a fan of soft cooked eggs so my breakfast was three scrambled eggs cooked till barely set with a side of sautéed greens and a small fillet of hake fish and a glass of fresh beetroot juice. I grew some beautiful garlic so had some with my breakfast. I start my day with my ginger and turmeric shot, then either green tea with lemon or now coffee thanks to you. I stopped drinking coffee for a very long time but watching your channel made me try it again and now a good espresso in the morning goes down well. My husband's birthday today so making his favourite dinner. crumbed deboned chicken wings and some steamed mixed carrots (purple, white, yellow and orange)and some thinly sliced veg crisps. Steven! Hey man 👋 well, I was with you for many years (and I never even had any Thai food BEFORE coming to Thailand either!). So I definitely wasn’t coming to live in Thailand to just “eat Pad Thai” …. But man, just the local vibes and this guys character and charm were unbeatable:) haha what a place!!
You’re right. It’s hard to have a good version of pad Thai outside of Thailand. Most restaurants make it so sweet and some even add ketchups. My in laws and friends only eat my pad Thai version because I make it with authentic ingredients: palm sugar, tamarind extract, fish sauce for sauce. Dried shrimps for umami flavor and salted daikon for the crunch.

Knew this was going to be good as soon as I saw a tree incorporated into the building. That's a bit of Thai culture I really love, too bad the west is so quick to cut them down. Yeah! That is some Pad Thai there! Never seen Sapparot (Pineapple) and sweet Chinese sausage it it either! AND banana flower! That makes is "next level" ! Too few places put banana flower in. Looks REALLY good! A few places in Chiang Mai claim to have the "Best Pad Thai!" Of course, that's a bit of hype. There IS a lot of really good Pad Thai out there. It's still one of my favorite go-to meals when I can't be bothered/can't afford to find some special, exotic place while out. He looks like an amazing character. As usual Joel's "Food Radar" is perfectly tuned to find the best Snack Shack around!

JoBe!!! I know this dish and that is very interesting, I would love to find out more history about this but yes I know the one you were talking about. It is a local dish I don’t even know if you could call it isaan food, it’s native to Korat only :) and the name is “Pad Mee Korat,” ‘mee’ being the type of noodle used.
Wish you have done this video in January 2019. Our family was in Chang Rai in January 2019 to help a missionary to train the local church leaders Biblical Counseling. We would have checked this place out. I agree with some comments here about pad Thai. Not many can get it right. As for me, I think I nailed the recipe down to the T after combining various recipes and techniques I learned from Thai friends in our Bible study and RUclips. A good pad Thai should taste a salty first, then tarty and then sweet. To me, the salted daikon and dried shrimps are the keys to bring pad Thai to its superiority. Have a blessed time there.

PAD THAI, the dish for backpackers, no locals really call it their favorite dish and this looks pretty low grade. you need a super hot wok hay, even then its not the best dish in Thailand, I think you changed the title of the video?

I wasn’t introduced to pad Thai until I ate in a restaurant with American friends. Pad Thai is not a common dish made in my Thai family. We like our food painfully spicy and that is a mild dish.

Hi Joel and lovely Li ☺️💓. Wonderful video as always. I absolutely love the flavours of Pad Thai . I'm allergic to both shellfish and peanuts so probably the worst dish for me but I still have it 🤣. Two strong antihistamine tablets before and then I only have to spend half the night talking to the big white telephone in the bathroom. I'm clearly a rebel. I won't stop eating something I'm allergic to unless it will actually kill me. Love the variety of pad Thai. We literally only have Pad Thai with shrimps here. Interesting fact about traditional dishes. Congee or jook actually originated from India. Not actually China or Thailand. It was a way to stretch rice rations and broken rice was often used so rice porridge was a good way to fill you up while using less rice. Also a fan of soft cooked eggs so my breakfast was three scrambled eggs cooked till barely set with a side of sautéed greens and a small fillet of hake fish and a glass of fresh beetroot juice. I grew some beautiful garlic so had some with my breakfast. I start my day with my ginger and turmeric shot, then either green tea with lemon or now coffee thanks to you. I stopped drinking coffee for a very long time but watching your channel made me try it again and now a good espresso in the morning goes down well. My husband's birthday today so making his favourite dinner. crumbed deboned chicken wings and some steamed mixed carrots (purple, white, yellow and orange)and some thinly sliced veg crisps. Many blessings and have a super day 🤗❤️🙏
My son is allergic to shrimps too but somehow he’s not too allergic dried shrimps so I add dried shrimps to dishes so his body can get used to it.

Finally as to the drone, the entire city is in the airport restricted zone and so there are no shots that I could get without shaking or cheating and I thought, the video before and after this is very drone shot-heavy so “why not have one that’s just on the ground level only?” :-)

Steven! Hey man 👋 well, I was with you for many years (and I never even had any Thai food BEFORE coming to Thailand either!). So I definitely wasn’t coming to live in Thailand to just “eat Pad Thai” …. But man, just the local vibes and this guys character and charm were unbeatable:) haha what a place!!
You’re right. It’s hard to have a good version of pad Thai outside of Thailand. Most restaurants make it so sweet and some even add ketchups. My in laws and friends only eat my pad Thai version because I make it with authentic ingredients: palm sugar, tamarind extract, fish sauce for sauce. Dried shrimps for umami flavor and salted daikon for the crunch.

Got my first two tattoos from Khun Noi way back in 2011 while rambling ok my own for 80 days in Lanna land and Lao. Came back in 2019 and got another tat! Truly talented, caring and genuine dude.

Good reminder man, are usually do not eat dishes like this just because they are so ordinary and easy, I always try to find more complex local food but… You are correct, these dishes do still very much deserve their place at the forefront of famous street food in Thailand. Knew this was going to be good as soon as I saw a tree incorporated into the building. That's a bit of Thai culture I really love, too bad the west is so quick to cut them down. Yeah! That is some Pad Thai there! Never seen Sapparot (Pineapple) and sweet Chinese sausage it it either! AND banana flower! That makes is "next level" ! Too few places put banana flower in. Looks REALLY good! A few places in Chiang Mai claim to have the "Best Pad Thai!" Of course, that's a bit of hype. There IS a lot of really good Pad Thai out there. It's still one of my favorite go-to meals when I can't be bothered/can't afford to find some special, exotic place while out. He looks like an amazing character. As usual Joel's "Food Radar" is perfectly tuned to find the best Snack Shack around!

It is a local dish I don’t even know if you could call it isaan food, it’s native to Korat only :) and the name is “Pad Mee Korat,” ‘mee’ being the type of noodle used.

Wish you have done this video in January 2019. Our family was in Chang Rai in January 2019 to help a missionary to train the local church leaders Biblical Counseling. We would have checked this place out. I agree with some comments here about pad Thai. Not many can get it right. As for me, I think I nailed the recipe down to the T after combining various recipes and techniques I learned from Thai friends in our Bible study and RUclips. A good pad Thai should taste a salty first, then tarty and then sweet. To me, the salted daikon and dried shrimps are the keys to bring pad Thai to its superiority. Have a blessed time there.

PAD THAI, the dish for backpackers, no locals really call it their favorite dish and this looks pretty low grade. you need a super hot wok hay, even then its not the best dish in Thailand, I think you changed the title of the video?

I wasn’t introduced to pad Thai until I ate in a restaurant with American friends. Pad Thai is not a common dish made in my Thai family. We like our food painfully spicy and that is a mild dish.
