  • If you're wondering how to dehydrate sliced potatoes, this video is for you! Dehydrating potatoes for long-term storage is a big part of the plan for my prepper pantry. Dehydrated potatoes shelf life is about 5 years, when stored properly, so you can dehydrate them today and put them away for future use. If you're interested in food storage long term, dehydrated potatoes are a great addition because they can be used in so many ways. This is a great dehydrating for beginners' video because I show you each step of the process.

    I just used some of my dehydrated potatoes for making scallop ones, they were so good. I added garlic powder, onion powder and paprika, salt and pepper skim milk and water. They were better than making fresh. I love them. used russets.

      Are they always supposed to snap? So if rubbery then not done? Im doing red onions now...canning potatoes next, but my try dehydrating potatoes too

    dehydrating 2 store is an amazing book..quick tip for your new to dehydrating viewers is the first time they do sliced potatoes is " if the center of your slice comes out black is only because they were not Blanched long enough..I sell these at the farmers market an they sell like hot cakes I.do all types of potatoes also i put them in lemon water to cool down it keeps them white.     Came here while searching for wafer dryer. Dried potato wafers are common in India. It's a very tasty snacks eat after frying especially on fasting day. But the processing is more refined to keep them white even after frying.
    We soak washed thin potato slices 1-1.5 mm thick in 3-5 liters of water added with 1/4 teaspoon alum dissolved for over night. Then washed, drained and boiled just like as you said but added with same ammount alum, water and sufficient salt for taste. Then wafers are dried in shade then under sun for final drying. Can be stored for 2-3 years or more without degradation.

    I also have Russet, do try Russet potatoes as oven baked potato chips. Less starch makes them great for chips. Be sure to rinse 4-5 time before you bake so watch some youtube first.

    Girl! Get yourself a mandolin! I have dozens of potatoes, onions, and other veg to do for a commercial dehydrator. It would take DAYS to cut but hand. At least, get a chef’s knife for cutting with less difficulty. My hands ache for yours. Great video. Thank you!

      I actually do have a mandolin now, which is awesome! One thing I tried that you might want to try is I used a mandolin to very thinly slice potatoes, and then dehydrated them. (You have to blanch them first, or they turn black.) I rehydrated them and made potato chips, and there were delicious! I'm going to have to do that again. Thanks for your kind words.     Thank you for your video.
    I've dehydrated a lot of sliced potatoes and the "wasted" space in the glass jars I used for storage drove me nuts, ... it's the little things eh?
    So I started dehydrated frozen peas to use as filler. I can get two cups of dried peas in a full Quart jar of dry sliced potatoes.
    This year they will be cubed just because I have oodles of sliced.
    The dehydrator is filled with a squash type pumpkin right now, ... I never heard of the thing before but I like both so why not?
    Anyway, I'm stocking for a long term event, ... that being said, there's all kinds of potatoes left in the farmers fields free for the digging. It was a wet fall and they couldn't risk getting the equipment stuck so wet spots were left and now they are dry again.
    I gleaned abut 200 lbs so far and that's enough for now. I want to can in quarts this fall too.
    The carrot factory has bags of ugly carrots, AKA Horse carrots, for $5 a bag, ... those horses eat some good. I canned up the first bag and got the second to dehydrate.
    But it's almost over, ... just the clean up left. I can get all the Pie pumpkin my little heart desires, seven so far, .. and there's still lots of beets and small turnip left too.

    I have that book as well and I agree that some of what I’ve done and and has been a success, is contradictory to what she says..so I use it as a guidebook when I haven’t done something before but always with a grain of salt and always use several references when available

      I totally agree with you! It is a great guide, but sometimes you have to do things your own way. Me dehydrating russet potatoes is an example of that! Even though she says not to use them, they turn out great for me, and they are cheaper and more readily available, so why not?

    This is so awesome. We recently got a Cosori dehydrator which is a huge upgrade from our old dehydrator. I did some beef Jerky in it and that was amazing. I might have to try the potatoes next. Take Care, God Bless and Merry Christmas!

      I wish I had read comments about the Cosori earlier, since I just bought another Nesco. Now I've been loving my Nesco, so I don't regret buying it, but I looked at some Cosori's but since I didn't know anyone that used one, I was hesitant to buy one. Now I just need to justify having 3 dehydrators. . . .

    I have a old fashioned slicer but after nicking my fingers I chose to do your slicing method lol looking for a slicer that I just pull down and put my weight on it to cut thru potatos fast as my slicing wasn’t that great lol

    When i boil them I throw in garlic powder, Salt, And Liquid smoke (5 to 10 drops per cup to 2 cups) This gives them a light smoke favor You can always add the smoke after boiling ..

    Another great video! I'm doing about 20# this weekend...Storing them in jars (have to do quart; can't find 1/2 gallon at the moment) and vacuum sealing as well. Excited to see your scalloped potato video when you get to it; I'm new at all of this and now have the tools to preserve the food (food saver, canner, mylar, etc)...just not the 'know how' to prepare it if/when we'll need it! It's a process and I'm learning slowly! lol

      Thank you, Steffani! Isn't it fun to learn new ways to preserve food? It will be interesting to see how many jars you end up with with 20 pounds of potatoes. I'm tempted to buy a 50 lb bag. There is a store in town that currently has 50 lbs for $12.99. That seems like a good price, but I have a feeling I'd feel overwhelmed with that many potatoes. Plus, I don't know that I have room for them, even dehydrated. Hopefully you can get the half gallon jars at some point. I do like them for storing things like this that take up more space, but quarts work well also.

      @@GailsSouthernLiving next time! Good news is, they do keep for awhile after you buy them, so you can buy next time you go to the store and then dehydrate them when you can. I try not to let them sit too long before dehydrating, but it's not like some things that I try to do within a day or two after buying. I'm actually in the middle of dehydrating some potato cubes right now.

    I never had any like with the Dehydrator...don’t know why...tried apples, but my husband did do deer meat and it turned out ok ✅ for him...I thought it made the house smell awful! Nicely done!

      Sorry to hear you haven't had luck with the dehydrator. I like mine quite a bit. If something smells bad, it's okay to put it outside. I dehydrate onions outside. The Purposeful Pantry channel just put out a video on dehydrating outside, so if you're interested in giving it another try, I'd recommend checking out her video.

    Yes, you have to try what you like, i did not like for example dehydrated peppers, I turned them into a powder. LOL, Nice tutorial

      Oh no! I had good luck with peppers, but with things like putting them in chili. I actually also did some bell peppers in strips and rehydrated them and fried them on cast iron and used in fajitas. No one realized they had been rehydrated. I also did jalapenos and they worked out okay. I think making powder is a good idea.

      I'm not 100% sure, because it was a long time ago, but I vacuum seal pretty much everything, so most likely, yes! It's not required, but never hurts.

    I did this not too long ago and really liked the results. I generally do what ever type of potato I am over stocked with. I have a mandoline when I slice them and end up with thick pieces I usually just use those for supper that night unless I have too many.I have never done sweet potatoes. Have you? If so has your experience with sweet potatoes been successful?

    Thank you very much for the video. We are going to be living the Nomadic life for about 6 months or so and I need to dehydrate some vegetables. I also want to dehydrate leeks to go with the potatoes 🥔. Do you have a recipe for dehydrated leeks?

      I dehydrate my white rice and various type of pastas so I don’t have to waste water cooking and draining while on our mortorhome. I buy the 5# bag of mixed frozen vegetables at our Costco Business store to dehydrate and they hydrate perfectly. I mix that up with my white rice as a side dish. Keeping the weight down on the rv is important. Safe travels.

    I got myself a mandolin on Amazon for $24.88 I haven’t tried it yet but I’m gonna dehydrate potatoes and I was wondering can you fry the potatoes after you have dehydrated how would you fry them do they soften up all your frying or do you have to soak them Thank you for your video

    You really need an Excalibur dehydrator. 9 very large shelves and they last forever. I have had mine over 30 years and still going strong.

      I have considered that - though lately, I'm really enjoying Cosori. I have also heard that Excalibur dehydrators made in recent years don't last as long. This seems to be an unfortunate trend among many products that used to be made to last and no longer are. I will say that my Nescos are still going strong as well, and I know many people who have them for 30 years plus. Again, this is probably changing as overall quality isn't what it used to be.

    Can you leave the peels on?

      Yes you can. I did have a problem with dehydrating cubed potatoes with peels on. They dehydrated fine, but kind of turned a yellowish color. They didn't turn black or anything really bad, but didn't look as nice as the ones I peeled. I'm not sure why. So maybe try a small amount and see how it goes for you.
      Edited to add: if you do decide to leave the peels on, be sure to scrub them well before cooking and dehydrating.

    If you ground those dehydrated potatoes up, could you make mashed potatoes from the powdered remnants?

      From what I've heard, home-dehydrated potatoes that you try to use as mashed potatoes turn out really gummy. So so far I haven't tried it. For mashed potatoes, I just buy potato flakes (instant potatoes) from the grocery store.

    How to you keep your potatoes from turning black when you can them

      There are different ways to can potatoes but I just do a raw pack of russet potatoes and recently tried them to make potato salad and it passed my husband’s taste test. As I like to have foods for prepping purposes I find it a game to replicate our regular menu and will rate on a scale of 1-10 each dish. I bought the freeze dried diced onions and celery, canned black olives, regular dill relish, have store bought mayo and mustard but will be ok without the hard boiled eggs if necessary. We gave the potato salad a 10!

      @@StockingMyPantry Sure, I use golden potatoes, not that their best, just like them. I make a not so deep cut all the way around, just enough depth to cut through skin. Then blanch in boiling water for roughly 15 minutes. I place them in ice water for about 10-15 minutes, and just twist off both sides of skin. That’s the reason for the cut all the way around. I cut them into chunks because I like to use them in beef stew. I steam them for about 20-30 minutes, until my fork slides through easily. Take them out and place them on dehydrator trays. Set temp to 130-135 and dry for about 10-12 hours, maybe more, depending on how large my cuts were. Like to have something to chew on! After they are crisp and dry, where you can crack them in half and see no moisture, I let them cool down for a few, because where they’re going, you don’t want any moisture, heat, humidity. I prefer vacuum sealing with my Nesco, then let it sit on the counter for a day or two, to ensure no leakage. If all is well, I place them into a Mylar bag and then throw in a food grade bucket, which are DIY insulated to keep heat away. That’s it!

      Great question! Just pour boiling water on them and let sit for about 15 minutes. Then drain and cook in whatever way you want. Or, if you're making something soupy, you can just add them to whatever you're cooking and simmer until rehydrated.

    I would think that you could even use a meat slicer to slice the potatoes evenly.

      I now have a mandolin which works well, but I'll bet a meat slicer would work well also.

      Potatoe with the e was the proper spelling when I was in school. The rules have changed on some words and potato is one of them.

    I believe you're not going to do nothing with him because you like everybody else don't show us rehydrate and using them in a recipe I believe that this is fake and it's a waste of our time. If this really works you would have showed us it working in the end product after you rehydrated them
