Hey Kereene……. I’m in Houston and had the same problem. But my Pastor that is Asian took me to his Asian supermarket they have all the Caribbean spices, peppers etc yam. Look for a China town in Atlanta and find mega type of grocery stores either Vietnamese or such👍🏾
You can use all vinegar if you choose but that’s just too tart for me . The sugar will also balance the acidity levels. If you google Jamaica pickle peppers recipe that all call for water and sugar.
I like that this is under 7 minutes. Some of these others is in excess of 10 minutes for something so simple.
I have a short attention span so I try to make them as short as possible 🤣🤣

Yes, I use a mandoline slicer or any kitchen tool that can cut carrots evenly.

I assume this has to sit for a bit after you've put it in the jars, for maximum flavor? How long?
You can use it right away because the heat from the liquid will extra the flavors.
