      It can be eaten immediately or as long as whenever. The vinegar acts like a preservative.

    what was the spice that you use?And is there any alternative of Cho-cho that you can adice?I don`t think I can find it...thank you anyway...it`s a joy to watch and listen!:)

      The only spice used was pimento seeds and you could try using zucchini instead of the cho cho

    How long do you let it process/ferment before opening it?

      You can open it right away, But the longer it stays it's the better it's going to be... The color will start to go brown but it's still good it's just the brine bleeding the veggies and the all spice berries.

    YB, do you have to peel the cho cho? I put it in my rundown with the skin on and it was fine.

      John Dough yes you do because you're going to eat it raw. the skin is tougher when it's raw.

    A canele knife is best to make the design for the carrots, therefore no risk of cutting your hands

      Some people ad a little sugar but it's purely up to you! Nothing is wrong with adding some to it.

      The pickle should have a vinegary taste but the peppers should be strong and the herbs or pimentos should be strong too! You can boil the vinegar a little to reduce the level of acidity!

      sue Whitfield depending on your container. I used 2 carrots 1 onion and 1cho cho the peppers was about 3 to 4 and as much pimento seed as you want.

      Shar Barnett yes you can! cucumbers, zucchini, turnips, string beans, beets, all of these can be pickled.

      Scotch bonnet is a little bigger and much harder to find.

    hi Yardie they look like Scotch bonnet peppers but they're not from Jamaica the Bonnet pepper is the real Jamaican Scotch bonnet and those Peppers that you get in the supermarket are not as hot but it will work irie mon

      People please be careful with peppers you don’t want it to get to your private places some bad shit I use 3prs of gloves and wash my hands for hrs , my friend I think you have a mixture of peppers habanero and scotch bonnet good luck foreign carrot cute i laughter I almost piss mi drawers
