    Been thinking about making this jaimacan pickles for a long time, as my step father used to make them when i was a kid, but never new what he did. Good food times, used to have them with fry dumplin and coat fish. many thanks again love your recipes ;)

    I eat jalapeños and other peppers regularly so this is a special treat. I will no longer have to buy them in grocery stores. :)

      Karen Cas the pickle will be a treat. I WOULD NOT recommend that you eat scotch bonnet pepper the way you eat jalapeño. Especially the red or orange ones.

    I like your cooking style and decided to make your Jamaican Hot Pepper Pickles. I needed the Choyote and Dried Pimento Berries (whole allspice). I grow my own peppers (Habaneros). I got up early thinking it was going to be difficult to locate these two items. Went to Walmart and they had the squash and the dried berries. It's going to be a spicy Thanksgiving and Christmas at my house. Thanks for posting. Today is Sunday, next on my list is your recipe for Jamaican Rice and Peas. Thank you for sharing.

    I opened up a jar of my Jamaican Hot Pepper Pickles because I wanted to taste the cho cho, never had it before. I now understand your warning even though I didn't use Scotch Bonnet Peppers. Oh my! Spicy Hot Hot Hot! The heat lasts a long time but is manageable. This is going be so good with some fried fish, or anything else I like spicy hot! TFS

      Hey I dnt like the vinegar too hot because it discolours the ingredients and cook them too much make this a few days in advance the vinegar will do it's jobs and the ingredients will have a little crunch to it. The texture is noticeable between cooked and uncooked veggies. Hope that helps .

      Anika, I am never out of Scotch bonnet pepper. I get it from my friend's farm in the summer.

      Grow your own. All it takes is two plants. I use the same pot they use for window herbs, four plants, they last me a year.

      +Nobie Smith Celery isn't a typical Jamaican veggie, but should be great pickled. If you want to add garlic I recommend using whole cloves.

      It's what Jamaican call chayote squash. Same thing

      Most of the Caribbean call it christophene or Hispanics call it chayote
