If I am not mistaken, Edward took two leaps of faith while on the island. Once when he was chasing the assassin, and the next when he was trying to rescue Bonnet at the end of that stage.

Yes but this video is based on scenes where the game forces you to do a leap of fate. All synchonizations that are outside of missions are your own choice. Meaning the game isn't forcing you to do it. And with the amount of quest in AC Odyssey that have things to do with the leap of faith, it wall depends on what quest you choose to do first

There’s also the Watch Dogs Legion Assassin’s Creed crossover DLC. Pretty sure Darcy performs a leap of faith in the mission to acquire her uniform. I’d count that DLC as well, just because the producers do not consider that DLC canon doesn’t mean that the developers don’t and do not have the intention to connect the franchises

Heading to the statue of Zeus on kaphalonia is optional, if the game is played as intended in adventure /discovery mode and not in guided mode then it is helpful to do the Zeus statue to find wher one is headed but it is also possible to avoid it and just stumble upon Marcus vineyard using Ikaros or blind luck
I do miss them, but I adored Origins & Odyssey just as much in a different way. I don't mind reliving the early AC days but I do want to eventually get back to open world (even if that world is a little smaller)

i think haythem's jump in ac3 has the best build up cause the ac3 theme is one of my favorites by far, (just below black flag) but arno's has the best actual leap with the panning shot into the title card.
I think it’d be crazy if a future AC game has you play as a character and like 10 minutes in he does a leap of faith but fucks up and dies, and then it switches for the rest of the game to the real character I think that’d be funny as fuck
