    I just tried this with my first attempt at Lion's Mane cooking. slam dunk of flavor. This method is legit AF. I made a buttery demiglace with shallots, Worcestershire and a very small dash of wine while it was in the convection stage. Superb.

    I have been a vegetarian all my life; hubby has been one for 50 years or so. When I first tried this method of preparing the Lion's Mane mushroom, I had nothing to compare it to, but hubby was super impressed with the texture and its similarity to steak. He gave it 2 thumbs up; so today I began experimenting. I did a couple of 'press & flips' with a minimum of salt only. Then took each steak and dipped it into aquafaba (replacing egg dip), and then dredged through a breadcrumb/seasoning/flaxmeal mix, and popped back into the pan. A couple more 'press and flips', then set aside and used the remaining aquafaba to loosen yummies on the bottom of the pan, reduced to very thick, and then added a nutmilk to that to a sauce thickness, and served with the steaks.Excellent entree for those special dinners-for-two!
    It's a good thing we have a local Lion's Mane grower...it is going on the regular home menu!

    Just wanted to note your comments about how you enjoyed cooking before and wanted to continue enjoying the entire process after going vegan is a great answer for folks who question why vegans/WFPB/vegetarian people like to use veg, shrooms, tofu etc to make items they call "steaks" or "Cutlets" etc. Along with cooking and eating enjoyment, it also completes our traditional looking meals on our plates visually - a main dish with accompanying sides. Anything to make it easier for people to make the move to an animal free/vegan/wfpb lifestyle. I don't know if I explained that well but I wanted to toss it out there.

      The reason you call your veggies “steaks” and enjoyed cooking real meat is because our bodies are MEANT to eat meat. Humans are carnivores by nature, not herbivores or omnivores 👍🏼

      @@amyk6028 as a meat eater this is patently false; eating meat alone will cause malnutrition (and a very adventurous gastrointestinal experience). even up north in the artic where indigenous peoples wouldn't eat much carbs (see keto), they still needed berries, greens, etc.. to stay healthy
      also, we aren't MEANT anything; we evolved to fit whatever niche we found ourselves in

      Our bodies will either adapt to our diets or fail to some degree. Vegans and vegetarians have figured out how to get the nutrients they need for survival, and animal-eaters do the same.
      It is so bizarre when people take other people's food choices so personally.

    I just made this for my first time trying Lion's Mane and I'm blown away. It's a dead ringer for a loin chop. It's so close it was scary. Find it if you can and make it for all your carnist friends. Show them how amazing food can be without animal products. 👍

      Hmm I'm going to raise some lions mane for fun and grill it. But the two best dishes I've ever ate in my life were slow roasted prime rib and polynesian pit bbq. I've tried lots of food from tofu, pig blood in the philippines, salted fish, almond milk, and fake bacon. I just haven't found nothing in the vegan world that has made me want to abandon meat taste wise. I raise my own beef in a large pasture. I think it's bad to raise animals in tight spaces and for them to have a bad life sure, but I've not been able to abandon eating meat especially when I raise my own beef and chickens etc. Now if vegan meals actually were say the best meal i've ever had I'd probably consider going that way. It's like I was raised on raw milk as a kid and now I still drink milk from the store, but it's subpar. It's lower quality being pasturized and not fresh, but the government and all claims to know best. My taste buds however still has me liking raw milk when I get the chance to get some.

    Made this tonight and was blown away with the taste and texture! I miss ‘steak night’ with my husband. It takes a bit of coordination to get the cast iron pans working, and we were just a bit worried I’d set the fire alarm off. It was worth it. Excellent technique. I served with roasted Yukon gold potatoes and cast iron pan seared broccoli spears. Delicious! Next I’m going to make the Citrus Garlic Butter King Mushroom Steaks.

    Fantastic recipe and step-by-step walk-through. The result far exceeded my expectations. Lions mane has amazingly meat-like color and texture while having a mild flavor NOT reminiscent of earthier flavors cremini or portobello. This recipe came out visually stunning and incredibly juicy.

    Thank you for the great video! I'm getting ready to prepare the Lion's Mane I just harvested. I was in the backyard vacuuming off the coils of the AC condenser of all things and spied a bright white "flower" from over the fence in the woods. The cauliflower sized "flush" was on the end of a 4ft long tree trunk, the remains of a 65ft tall beloved silver maple that had died and had to be cut down. And on the other end of the same log was an even larger fruiting! With luck, the Lion's Mane will fruit again to provide more meals! Even though that tree is gone, it's still bringing joy to our lives.

    Huge respect for your attitude towards keeping the cultural elements of meat eating alive without any of the animal suffering. I've been vegan for a couple of years now and I do find that it's those little things that contribute towards people feeling like going vegan is a huge change.

    I think this video might have just turned me into a vegan from a vegetarian, purely because I just love mushrooms & the vast amount of plants, cheese alternatives & also milk alternatives now available too. You just cooking & this video alone has inspired me, love this & also love the assortment of spices you’ve used. I can not wait to get back into the kitchen & start cooking👍🏽😁

    I have tried cooking lions mane before and didn’t like it. So yesterday I decided after following your channel for a while to give another shot. Picked up some lions mane and tried this recipe. OMG. I haven’t had steak in over 25 years, and these steaks looked felt and tasted just like what I remembered. Absolutely delicious, and no one is harmed. I called that win-win.     Love your recipes and your manner. I just bought Lion's Mane mushrooms at my farmers market in Chicago for $24.00 a pound. I asked the young lady how much a box was and she started showing me how much made a 1/4 of a pound. I remined her I asked about the box. She apologized saying most folks buy 1/4 or 1/2 a pound. Mine will go into the convection toaster oven.

    Went vegan due to IBS. Seen some of your brand at the grocery store. This looks amazing. I will have to change the seasons (also due to IBS) I'm going to use smoked paprika also. I find if I use smoke paprika it gives every mushroom I've tried a meaty hearty feel. I wish I had stumbled on your yt channel sooner. Thank God for mushrooms and cast iron cooking!

    Hey Derek. I just discovered your channel. I've been a sous chef in kitchens and just became pescatarian in 2021. Anyway, i almost always add spice to my dishes. Not only are they tastier, but the health benefits increase with spices and peppers in general. Great channel, but i hardly find your products here in LA or at least where i live.

    The lion's mane really is a fantastic mushroom. It tastes delicious, has so many health benefits. Almost to good to be true, but it is. Currently I am trying to initiate some lion's mane mushroom spawn to grow some at home, because due to them loosing a lot of weight due to water being evaporated it can be pretty expensive if you wanna feed a full family.

    Just grew some lions mane and finally it was ready to be cooked. This recipe was gold! Absolutely loved the seasoning and the way you cooked it, I probably should’ve left it in the oven a bit longer but all in all I loved it and my Omni boyfriend loved it. Great cook can’t wait to try your other recipes!

    I like just enough spice to warm the palate slightly, thus amplifying the flavors, but when cooking for others I make a sauce without heat, then split that into another dispenser *with* heat for those who like it. This allows people to determine the amount of heat for themselves. I have one grandchild who can't handle heat no one else can even detect!

    Fun fact: leave mushrooms in direct sunlight for about 15-1hour depends on how long you can have them out to increase the vitamin D on the mushroom.

Yes putting mushrooms in direct sunlight can increase Vitamin D sometimes 10,000% depending on the variety of mushroom. Do i need to research this for you? No. Go Fukk Yourself 😊

    Made these last night and they were delicious! I purchased the Lion's Mane at the Petaluma Farmer's Market. My husband thought it was Ahi tuna at first. I will definitely be repeating. They gave such a meaty, earthy, rich flavor, just like a steak. Thank you!

    This gave me an idea. I could make "pork" chops German style, the way my Dad used to make. As someone else suggested, it involves breading and frying and served with apple sauce. I'm going to give it a try. We have Asian markets here that carry all sorts of mushrooms I'm sure I can find them there.

    Question and a special request.
    Can I bulk cook these mushroom steaks and freeze them? Plus I would love to see a cast-iron care video since you are the master. I have cast-iron but I'm unsure if I've seasoned them correctly and unsure how to properly clean them. Would love your take on the matter. Thanks for all you do and I've tried several of your recipes and all have been delicious.

    Love tasty, flavorful food 😋 The lions manes look great. Loved all the tips you shared. I could use some mushroom education ... seeing the different ones, hearing about textures and traits so that I can choose with more awareness as to how they would "act" in the recipe. We didn't grow up in an area where we had access to any mushrooms except for canned 😅🤣😂 so cleaning and storage tips would be great too. Thanks for sharing this.       where do you draw the line of cruelty? i love fungi but also meat, however more lives are lost in the consumption of fungi. is it not cruel to eat the fruit of an intelligent organism that spans kilometers underground and can feel every incision? it's a pointless thing to suggest, killing for food is not cruel it is baseline reality. killing for sport, is cruel.

    Hi! Like the video thank you, as a chef myself I am curious about options since I have never cooked this mushroom. Do we need to finish it in the oven? Or can it just be seared?
    If marinated will it affect the texture, even is a dry rub?

    This Lion’s Mane Mushroom recipe works👍👍👍👍 This was my first time cooking with any mushrooms as the main part of the meal. It’s a forgiving recipe . I used a tad too much oil, but worked out. Thinking that teriyaki sauce might be a nice addition. 😋😋😋😋😋😋😋

    I've been watching your Lion's Mane videos (among others) for a while now and I finally picked some up at the Mushroom Hub store here in Detroit. I used this method to prepare it and it was unbelievable! The owner is a great guy and anyone in the Detroit area should check out his store!

    Just made these last night and I had a considerable amount of water come out. Damn near submerged half of the mushrooms. Would you recommend pouring off the water if it's this excessive? Thank you. They were amazingly Delicious btw and super tender in certain parts.

    I love spicy food and also cater to kids so I learned balance.
