Mushroom grow kit (in the U.K.) provided by Marvellous Mushrooms marvellous-mus...
For the US we’ve been using HiFi Mycology in Auston, TX www.hifimyco.com/
Recipe/RnD:
To make this dish, all you'll need is one large Lions Mane Mushroom and a bit of vegetable oil for the pan. For the marinade, I used a blend of pre-cooked beets, olive oil, Wicked Kitchen BBQ Beef Seasoning, garlic, white pepper, black pepper, and fresh thyme. After blending all the ingredients (except the thyme), simply strain the mixture and use the liquid as your marinade.

LOVE LOVE LOVE having a legit meat alternative that isn't full of questionable "Natural Flavors" & a bunch of unnecessary crap. THANK YOU for the amazing recipe & instructions!!
Just be sure to pair it with a protein like some tofu based pepper corn sauce or a garlic chickpea puree! Means you will feel full after and hit those nutrient targets! Enjoy!
Where did you buy mushrooms
THANK YOU! THANK YOU, THANK YOU THANK YOU FOR THIS RECIPE… I JUST MADE IT AND MY MOUTH CAN’T COMPREHEND WHAT I’M EATING… I’VE BEEN VEGAN FOR 10 YEARS AND THIS IS TRULY 100% THE BEST THING I’VE EVER EATEN. MY LIONS MANE STEAK IS JUICY AND TENDER AND JUST AS FLAVORFUL AS A RARE STEAK THAT I USED TO EAT. Truly, I think you from the bottom of my heart, because this was an up most beautiful experience of making something that reminded me of my childhood and yet with all the compassion… Thank you thank you thank you.
Happy to be of help. Thanks for watching.
what taste is it? so curious!
@@fenektt5533 it honestly tastes like the most delectable mushroom “steak” I’ve ever tried. In may I’ll be a vegan for 11 years and it’s the most impressive whole food I’ve eaten. In the marinade the lions main mushroom takes on the flavor components amazingly well.
@@tyquiamboa wowww thats so cool!! thanks for the answer! ill have to try it someday
Came for the Marinade
Cooked the mushroom
Just finished eating it
And wow was so good

The transformation is astounding. You would never know it was a mushroom. It looks perfect to me, so I cant wait to see how it comes out after you have perfected it. You are the mushroom king.
cap on never knowing its a mushroom. I'd still eat it tho
Thanks, Agnes! It's true people eat with their eyes and sometimes the illusion goes a long way to getting people to try something different. Appreciate your support!
I just got 3 mushroom kits and started growing. I can't wait to try these recipes!
Amazing! The grow kits are great!
Have you cooked with chanterelles yet. They're delicious. I hike into the mountains with my dog and come back with a bag full. Great to dehydrate to enjoy out of season too. Loving your videos!
That looks amazing! I can’t wait to see you perfect it. Thank you so much for the videos. I have the manifesto and it has been so helpful. My goal is try all of your recipes.
So glad to hear you downloaded the manifesto! (Do you have Vol I and II?) We'll keep the recipes coming...thanks for your support!!
Hi Derek, what if you poke some holes in it with a tooth pick before you marinate it?
You’ve inspired me to buy some Lions Mane mushrooms today. I will let you know how these turn out. It just looks like a lot of fun.
We need another video that shows us exactly how to click our tongs together the way you do❤😂 #newsubscriber
I’ve been wanting to try those mushrooms, but I just can’t be bothered to grow them myself and anyway my tiny flat is north facing. 😕
Thanks for sharing this, is your restaurant in London? I will come to try out your menu 😊🙏🏾🌿
Thanks for watching. We have a space in Austin, TX wickedkitchen.com/events/
Can you marinade them then freeze them?
I’ve always eaten them, they’re so good! So they’ve not made it to a freezer yet
The clicking of the tongs makes my blood boil! Cheers!!
There's more coming. Welcome to the fam!
So, you only get two mushrooms out of the kit, and then you have to buy another kit?
Hmmm, perhaps the darker pink center you archived the first time was possible due to marinating it raw? Searing this one first before marinating possibly made the marinade harder to reach the center? Regardless, thank you & your team for creating these BEAUTIES!
Thanks so much. Was waiting for the method since seeing the short 🙏🏽
Happy to help! Thanks for watching.
This is so amazing!!!! Looks so good! I need to go vegan…❤
Thanks, Selinna! We'll always keep you covered for vegan inspiration over here!
I just did a grow for the first time... sauteeed in butter and montreal steak seasoning.... seen this video AFTER... ill say mine was delicious and tasted like steak...i was suprised... will try your recipe next. Really enjoyed trying this... even moreso when it tasted like actual steak!
Hate your videos. I'm left drooling at the sight of gorgeous food and yet unfulfilled as my culinary skills are severely lacking.
They taste horrible tho. I’ve tried frying with butter, Chinese curry. Indian curry. They might be super good for your brain. But they are Absolutely honking!
Wrong
wtf I literally thought this was clickbait. That turned out amazing !
NEW FRIEND.
Watching you really motivates me to change my eating. I love, love, love steak. One thing I can't let go. The way you cook can help trick my sight and taste buds. 😂😅❤
When I tried to cook these on high heat they burnt to a crisp… not sure what I did wrong.
You got this. Keep trying.
recently stumbled across your channel and I gotta say, this stuff is really impressive. I like your chill vibe and minimal editing style videos. great source of inspiration for plant based cooking
is there anything I can replace the beetroot with to make it look like well done steak or could I just leave it out without messing up the flavor? Back when I ate meat I never ate it unless well done, never liked the bloody pink look or taste.
You are a true wizard!! I have made a version of these twice now and everyone was seriously wowed, and I have you to thank! Great video as always, though you mention the marinade ingredients listed below but don't see em :-).. If you could please provide that would be fantastic! Thank you
It’s all written in the description,if you scroll down. Glad I could help! Thank you for watching.
It looks fabulously delicious 😋
@@DerekSarnoChef haha.. Maybe the mushrooms can cure my blindness. Thank you :-)
That looks incredible! I may be a bit biased, though, because I LOVE mushrooms!
Maybe you will tell us the story how you and your brother became vegan? me and my brother we became vegan together .
Actually this partial staining of the beet sauce reminds me of the Chinese Char Siew.
I'd never want to eat a meat (replacement) that's bleeding on the plate. 😳🥺 In saying that, wow, what craftsmanship! 👏🙏
I made it and it was mind blowing delicious! I didn’t have beet powder. Better than beef!
@@kamilakennedy2686 great to hear! ❤️
Me either.
You get 2 mushrooms from that bag?
I got closer to 4 large all together - 2 flushes
@@DerekSarnoChef I'm very tempted to do this. Also oyster too
Very instructive presentation
Thank you for sharing your knowledge
Glad you enjoyed it!
Looks delish🍄
Thanks, Dalton!
10:34 looks more like tuna steak
Amazing! I'd love to try some! Mushrooms are the future of culinary. Especially for vegans. Can't wait for more!
Thanks for watching.
I tried dropping a 🔗 for easier navigation but RUclips wouldn't let me. You can source lions mane from @benjidelics. He's on
Why go through all this trouble making it look and bleed like a steak??? I don't understand! If you want a steak, just eat a steak!!!!
I can understand your confusion! Making a mushroom steak that looks and tastes like the real thing is all about providing an alternative for those who choose not to eat meat. It's about offering options and expanding our culinary horizons!
Apologies, I can see what you're saying! Afterwards, I saw a few more videos and realized that you were trying not to eat animals. I respect that. I'm actually going to try a few of these recipes, I see the lions mane is actually good for you. You gained a new subscriber! Thanks for making these vids! I actually want to grow the lions mane now! ☺@@DerekSarnoChef
IMSOFUCKINGEXCITEDFORTHIS!!! SOCOOL! Yay! I have been meaning to try my hand at growing these but needed a push. I already make my staples (milk, yogurt, etc) from dry beans and and seeds and need to get back to growing my perishables. This will be a fun re-entry into gardening in containers.
My little sister gave me the chance to see one of your videos for the first time. Absolutely amazing, also for the fact that we're interested in Lions Mane specifically.
But what I really wanted to comment on, is that: I WANT YOUR APRON!!
The jean kind of look texture is amazing with a little wicked kitchen logo, *mwuah* :3! Thank you so much, subsribe button called for me instantly.
Love this! Between thinking cows are amazing animals and my family history of Cancer means I need to avoid BLV and heme--I'm always looking for beef alternatives--thanks so much for sharing
oh man this recipe looks incredible, i am going to try it on some regular white button mushrooms instead of lions mane!!! soooooooo excited!!!!!!
Awesome! Give it a try and let me know how it goes!
Well done, that’s impressive. Maybe coulda used a flip after the first day marinating, or just more marinade so it was actually submerged. Gotta say, though, as someone who was a chef that cooked professionally for about 15 years, I definitely don’t miss the tong clicking. Gives me ptsd, lol.
WOW. My mind is f*king blown!!! 🤯🤯🤯🤩🤩🤩
❤
OMG!!! You are an amazing and innovative Chef. Can’t wait to try this recipe. Thank you so much❤
You aren an amazing commenter! Thanks for watching and supporting, Hathaly!
And thank you for bringing an excellent chef and a wonderful human being!
That looks phenomenal! Thanks for another awesome video!
You bet! Thanks for watching!
Dude, have you considered buying a cast iron press? They're very handy and Amazon sells them for $10 bucks.
Just made this with the marinade for the first time. Second time making lion's mane steaks. I obviously guessed with the quantities for the marinade recipe and my marinade came out a deep deep red and very thick. Probably shouldn't have used 3 beets lol. I marinated for 2 days and got only a little red on the smallest pieces of mushroom. Most likely due to the thickness of my marinade. The steaks were delicious and I used the excess liquid from pressing to make the most delicious gravy. I found getting the right amount of pressing a bit tricky and the tenderness of my steak came out super tender like a rare filet mignon. Guess I need to press for a bit longer. Not firm enough for my liking. I prefer medium rare. My first attempt without the marinade came out with a medium rare consistency. How do you get your marinade thin enough without adding water? Need quite a bit of volume to properly marinate and I can't imagine you use several cups of olive oil. Can't wait for the recipe video. I feel like I'm very close to nailing the process and can only imagine how much better these already delicious steaks can be. Can't believe how close these steaks are to animal flesh. Truly game changing. Love what you guys are doing. Legends!
What does it taste like?
@hankmoody5514 it tastes like meat but the type of meat it mimics depends on how much of a sear you get and how long you press it. The longer you press it the denser/tougher it gets. It can mimic chicken, pork or beef imo. Just depends on your technique. Give it a shot and experiment. I think you'll be pleasantly surprised.
I guess "acclimated" came about the same way 'conversated' did, by back-formation without the knowledge of already-formed words such as acclimatised (acclimatized in US English) and conversed. Languages are weird and amazing! 😉 Also, I love the stuff you do! Wicked Kitchen is wicked. Can't wait til you get to Aussie shores 🙂
Waste of lions mane
I wish they ship the shrooms to Portugal
Hopefully you can find it me more local to you online.
Fungiperfect sells growing kits, imma order from them soon
Definitely trying this one I have some lions mane in the fridge
Awesome! You got this.
Looks amazing :-) what’s the brand of mushroom kit you use? Thank you In advance
Please! Where can I buy the Wicjed Kitchen Bbq beef Seasoning? I went to the website, and can't find it!
Wow that looks just like a steak. I have one in my refrigerator I'm going to cook tomorrow. Thanks 😊
I'm currently cooling a 12 Oz 12 day hung REAL Rib Eye.
Looks amazing. Definitely going to try this!
Hope you enjoy and let me know how it turns out!
where did you get the cast iron pans from? We had our ole reliable but my bf set ours down on a rubber pot holder and melted plastic on bottom so it's ruined :( Need a good solid investment in a new one!
I just tried making a small little piece cuz I don't like mushrooms but I gotta say it better than meat in this case cuz it absorbs flavor so much better and the small piece I had was so gooood. Melts in your mouth
After making these for the first time this weekend I'll be leveling up with this marinade. Curious, I know the water content varies on these and when I cooked them I had a lot of water come out submerging half of the mushrooms. Would you recommend pouring off the water when it's that excessive? Is that excessive? Thanks for everything you do. The lion's mane mushroom steaks were the closest thing to the real thing I've had in eight and a half years of being vegan.
Thanks for watching. Believe we answered this on another post you commented on. I sometimes pour off and use for a sauce or let it evaporate just depends.
@@DerekSarnoChef thanks for the replies. Many times I don't get notifications when someone mentions me or replies for some reason. Thanks again.
😋😋😋
how many times can you harvest from a kit
Twice is usual.
Once you buy your kit, or bought mushrooms, can you get spores to continue growing more without kit?
I've been vegetarian for over a year now and I wanna try a "steak" made out of a lion's mane mushroom.
Do the mushrooms regenerate or do you have to buy different mushrooms kits???
Love your "castanets" 😊
Clever stuff, Chef Sarno.💚Never would of guessed that beets create the blushing pink colour! Great video.😊🙏🏻
Thanks, Sarah! I'm all about experimenting and glad you enjoyed this one!
Love how you use your tongs like castanets lol 🙃
Unreal!! So curious; what is the difference in the method used for the video short where the marinade DID penetrate? Thanks in advance:)
Thanks for watching. Working on more ways that we’ll share soon.
I just found wild lions mane in the woods and j am wondering the best way to cook it
That legitimately looks just as appetizing as a steak.
@WickedKitchenFood Could u do this with a George foreman grill
Dunno, don’t have one, give it a try and let us know. Thanks for watching
Looks great, but making this at home would set off my apartment smoke detectors instantly.
that's living life on the veg for ya
This tongclapping is going on my nerves watching this interesting video.
Amazing looking steak. Is it ok if your mushrooms are brown. Does browning affect the taste in any way?
Browning is where all the flavor is.
@@DerekSarnoChef relieved. Thanks for your reply
Can I just use beet juice instead of cooked beats and blending ? Also how do you think cooking a red wine sauce would turn out
Of course you can try it all, thanks for watching.
I still can’t believe this is possible I’m wowwed
What are the ingredients for the marinating sauce?
I am veggie and love cooking shrooms.
It's written in the description. Thanks for watching.
Will more mushrooms grow, or do you only get a couple?
Unbelievable 😮......it looks exactly like real cooked meat!!!
Taste like shit i bet
Wow that look like real meat
Right!
Too bad it can’t be cooked to medium or medium rare 😊
This just made my heart smile! I am definitely going to try this recipe. Thanks for sharing.
Please do share! Thanks for watching.
wow i would never think that was a mushroom.
I am unable to find the marinade recipe. This current video doesn't show list the ingredients. I understand that there's beet juice in it however I'm having difficulty finding on your website the marinade
looking for the marinade as well
Wow!!! Looks amazing!!!
Looks amazing. Appreciate you. Looking forward to creating n indulging.
Enjoy! Thanks for watching!
Do a seven day marinating
I’m so gutted that the Tesco vegan steaks disappeared… They were the best on the market so far. Could this be replacing them one day!? 👀😍
Maybe someday. Thanks for watching.
Do you have an updated version yet? I know you said you haven’t perfected it yet on here but Instagram says you have! Really excited to try this. Thank you
Nice...can't wait to try this. Also, between those tong castanets, the knife and steel, and your cutting board, you've got Kitchen ASMR nailed. Now, if you could come up with a cube steak recipe for the more adventurous myco-chefs out there. :)
You should start a band with your tongs!
I wish I could use mushroom growing kits! You can't buy fresh mushrooms like lion's mane here in Poland, and my tiny apartment doesn't have any cat-proof spaces where I could set it up. 😢
Have you made bacon with that yet? That looks fantastic.
Thanks! Not out of Lions Mane, however, in the Wicked Healthy Cookbook we share loads of ways to make bacon' out of plants.
It so frustrating what you do with tongs
Why keep the thyme out of the marinade?
Horrible vibes from the video. Boo 😢
I mean if you miss streak that bad just say it
Now this I can get behind.
