  • If there is one dish reserved for the kings of ancient Egypt, it would be Molokhia. The kings ate this plant most likely because they figured out the health benefits back then!     We eat it Bangladesh, it’s grown there so much, we cook it with lots of chopped garlic and green chillies and then eat with rice. And with Bangladeshi lemon, this takes it to another level. We also cook it with fish or dry it and cook with caramelised onion and dry chillies. It’s so good for the stomach. We use the stems to make linen clothes and burlap material. Big industry in making the fabric in Bangladesh

    Ghana, Nigeria we call it Ayoyo and it delicious 😋 my grandma love it too much and she makes us eat a lot but we tot she is annoying.but now I even miss it bcoz I left my country but I will look for it since now I know the English name thank you for the recipe

    I must admit that when I lived in the Middle East it took me some time to warm up to molokhia, it’s definitely not a foreigner-friendly dish. Over time though I’ve come to really love it, and I make it with chicken and rice about two or three times a month now. I describe it to people who don’t know about it as sort of a cross between collard greens, spinach and okra.

    My husband is Egyptian I'm from England when I first tried Molokhia I have to admit I didn't like it, I am getting used to it now but will try it with lemon juice :) Thanks for sharing

      Yes it is most definitely an acquired taste. I did not like it at all throughout my childhood, but as an adult I appreciate it much more, especially with a ton of garlic and lemon ;)

    I am not an Arab or Egyptian , but growing up in Saudi and having Egyptian neighbors who would always bring us Molokhia, and thats how I fell in love with this dish, specially during Ramadan I have to have molokhia , I get frozen ones though, and sometimes our local Arab stores make this dish as good . Thankyou somuch for the recipe 😍💕

      Sorry this video is already shot, edited and uploaded. I can’t change it at this point and I have never eaten Kamut as traditionally in my family we eat it with rice. But I took note of your suggestion and will explore kamut in the future thank you!

      @@blanchetv same here, my family always had it with rice but being Arab as well I think rice isn’t part of our natural diet and is contributing to the health problems we face like diabetes, I’ve been leaning towards things like kamut, bulger and freekeh, like my sido always used to say, the younger generation isn’t living as long as the older generation…people used to live into their 80-90s and now it’s 60-70s, it’s the western diet…sorry for long reply but if it helps one person it’s worth it:)

      @@RA-nq1xs Yes I totally understand. I think a big problem is the portion size, the mountains of rice certainly do not do any favors I totally agree. That is why I have a lot of freekeh and bulgur recipes on my channel, and will continue to provide them.

    Molokhie is so delicious. I love the way you made it. I also love lots of lemon but usually use the dried leaves as I like to crush them very small. Sometimes I just made a lemony chicken broth with the dry crushed molokhie to have for lunch or to take in a thermos. So delicious and nutritious. Thank you 😊

    I fell in love with moloukheyya the moment I first taste it in Genena Mall, Cairo during winter season. Had it with grilled rabbit. And, was served frequently by Egyptians friends when I visited their homes coz I made it known, I ❤️❤️❤️ moloukheyya.

    Yum! thank you for reminding me of this dish! We in Aleppo make it a bit differently.. we only use dried mlukhiya, only garlic and dried coriander, no fresh one.... first fry the dry mlukhiya with lots of ghee until the stalks of the leaves become light brown and then add the chicken stock with the chicken, let simmer for 1 hour and then add the fried coriander plus garlic like your mum. We add lots of lemon juice while frying the mlukhiya because we don't like the "sliminess". I love allllll versions except the Egyptian one which is basically soup lol. BTW, I have the same pyrex bowl like you.

    These “virgin” stories sure add a nice twist to this amazing dish 😁😁. You gotta love this cute momma’s ways of cooking traditional dishes plus her accent, which makes things even more authentic somehow. Love it!
    Had this dish on several occasions at friends’ but personally never cooked myself thinking it’s a complicated dish to put together. Now after watching this lovely mom and daughter vid who know how to dumb things down for chickens like me, I kind of grew the nerve to make it.
    My personal preference is adding finely chopped raw red onions with vinegar on top of the dish just before digging in. Everyone else in the family and friends like it with lemon.
    Blanche, please make a video on Moughrebiyeh also. I’d looove to watch your mum’s “virgin” of yet another amazing Arabic dish. Please, please, please?

    It is definitely a great dish in Cyprus possibly the most popular too, normally made with red meat and cooked from dried Molokhia leaves which cook for 4 hours until soft and very tender.
    One problem is you may need a toilet near by if you eat too much, lol.

    I grew up on this dish. I still have it during the winter. When my mom would make it for us we would have it with rice, red onions, chicken and toasted pita bread

    In the Northern part of the Philippines where my mother came from they call it Saluyot, very popular to Ilocanos who buy them by the bunch at Farmer’s market in SF. They cook it differently but will try your recipe for a change I’m a subscriber and this edition from couple months ago pop up on my screen.

    American girl here. Learned to make it from my Egyptian/Armenian MIL, same for friends. All we do is make is make pretty much a big pot of chicken soup. Onion, (I add celery, whatever) But with some garlic. Take out the chicken, strain for broth, save the chicken. Put the Molokia (the one you used is the exact same one lol, the only one!) lots of chopped garlic in quite a bit of butter, in a separate little pan, cook until fragrant, add a lot of coriander, bring to a simmer, add to soup. Chopped onion in vinegar, the chicken, toasted pita in the soup. We have FOREVER, all of us, argued in a friendly way about how to eat this lol. Soupy? My nephews wife, he used to make fun of her because she used the actual Molokia as just a little topping, rather then a soup. As to Toppings, and what order? This is serious stuff 😂. But I love it, and it’s in regular rotation at our house, especially when it’s cold out. It’s a great dish. And the frozen you used is the same one I use. It’s the best one. No grit.

It truly has a cult following and everyone has a strong opinion on how they like it. In my fam we eat it on top of rice, so not as soupy. But some people insist this has to be soupy lol!

    Because I love a very brothy stew (more soup like) I would double the water.
    My husband almost always used lamb cubes for making this but did use chicken on occasion. Must say I like both equally. Thank you so much for sharing this and I'm hoping my sister will stop in Dearborn for me on her way to visit mid-September. I have quite an extensive shopping list!

    I love this video Blanche! This is one of my favorite dishes. I grew up eating it layered in a bowl with crispy (homemade) pita chips at the bottom, then chicken, then rice, then molokhia, then topped with a little bit of red vinegar mixed with red onions (in lieu of more lemon). I have to ask... What is that Egypitian movie? It looks like a good watch!

    Great dish!
    Since you always welcome comments, I will say that I have never seen a spicy hot Mulukhiyeh. I have always tasted it as a very mild dish. I have tried it in two authentic Lebanese restaurants, each in a different country. In both cases, it was served with small bowls on the side, containing finely minced onions floating in diluted vinegar, at room temperature. This is a sauce that is added and mixed with the rice, usually one little spoonful at the time, thus keeping the acidity under control.
    I almost forgot that my first contact with this dish was decades ago. It was prepared in my Egyptian aunt’s kitchen. Her family was enjoying it, but not me. I was a kid, and I hated that slimy green stuff that I was seeing for the first time. I tried, but I couldn’t eat it.

      Yes you and me both, as a kid I didn't want to eat it at all. I have grown to love it more as an adult-- I learned that the frozen molokhia is less slimy than fresh for some reason. Usually it is not made spicy, but there are pockets of people in Jordan and Palestine (including my parents) that love to dump a ton of jalapeno on this dish. All a matter of preference of course.

    I love watching your wonderful videos. I wanted to make this recipe, but need to find the Molokhia frozen or fresh. What markets in the Bay Area can you find them at? I have looked, but so far can't find it. Please share where. :)

      The markets I have spotted them are in Millbrae on Saturday mornings, or in Mountain View on Sunday mornings. However, the season is almost over, and I do find that not only is the frozen kind much easier to prepare, but it tastes just as delicious. You can find the frozen kind at Mosaic Market in San Mateo, or Rose Market in Mountain View--hope that helps!

    What vegetarian/vegan recipes can you use the molokhia in? Can you demonstrate some?

      I suggest you follow our method, but boil the molokhia in vegetable broth. So saute the garlic and onion in the beginning, add the spices, add the veggie broth. Then for the topping add garlic, cilantro, and optional jalapeno in a couple of tbsps olive oil. As far as proteins you can add chickpeas to the broth.

    I miss having this. I don't eat chicken anymore. Di you think it wouldwork with monk fish or another sturdy fish??

      It would only work if you just made the stew with greens, garlic and lemon juice, and pour it over fish that was cooked separately.

    i never use to make it till very recently i didn’t think it was that aeasy How old is I do not like boiled chicken so I think what I’ll do is I will cook the chicken much more than what your mom and dad and the oil itself and then add the water however I’ve seen people add onions and lemon sedan and poured over I have not seen that much garlic before but I will try it with selfish garlic we only have the frozen kind here we don’t have farmers market that sell that

      Frozen works great, and in Egypt they use all kinds of meat for this dish, even shrimp! If you cook the chicken too much though be aware that the meat will get tougher.

      @@blanchetv yeah I know man times i don’t really do it with chicken i just use the chicken organic bone broth but i like the way your mom cooked it way more garlic than i do but i like the idea i do not make it often maybe once or twice a year it is just for me family does not like it my kids did not grow up with it i didn’t make it when they were young. Do you wanna difference I would make it has the chicken and cooking in the part I would just let a brown more before I put the liquid in there

      Yes it is from a very funny classical film named Hamati Malak. ( my mother in law is an angel) the singer was the one who composed the funny lyrics of this song and he gave a spectacular comic performance . His name is Yusef 3of. يوسف عوف. 👍

      Try it with spinach, I know it is not the same, but with the garlic, lemon juice and spices it's still pretty good ;)
