    The ingredients for Stir Fried Chicken with Onions are so simple, you probably already have them at home. It is so easy to make and so delicious to go with rice. It's another great dinner idea, and you just need to pair with a vegetable dish. Enjoy!

      If you like this, we add thinly shivered bok choy, napa cabbage, snow pea pods. For tge chicken, we velvet the chicken which is 1 egg white, pinch of salt and 1 tsp of corn starch. Velveteen softens the chicken and turns it the white look you see in restaurants. I place marinated velvet chicken in refrigerator for an hour while I sliver the veggies. I put oil, ginger and garlic in the pan to get aromatics going in a minute I add chicken. While chicken cooks I blanch the veggies in boiling water for a minute, remove them and put them in cool water. This keeps the snap or crunch. I add the onions to the chicken and cook them for 1-2 minutes. Then I add blanched veggies, 1 cup of broth, I like to add powdered ginger. Once broth comes to a boil, thicken withe 3 tablespoons cold water 1 heaping tsp of corn starch. Great served over choice of rice or noodles (hard, fried, steamed). So fun to experiment with!

    We add our chow mein vegetables in this, bokchoy, celery, napa cabbage, ginger, snow peas and water chestnuts. All veggies sliced thin across grain except the onion, we cut the onion with the grain. I like plenty of sauce I use chicken bullion or broth, oyster sauce, ground ginger, white powder and garlic for sauce then thicken with slurry. Nothing like stuffing a mouthful of savory flavored chicken & vegetable goodness!!!

    Sure gonna try this, soon! In fact, just 2 says ago, I cooked chicken with mungbean sprouts. To that, I also added scallions. Very similar. It's from a cooking book from 1989, when ingredients for chinese cooking just became available in Germany. Imagine: no internet. And some ingredients where very difficult to find, still. I will mention ginger syrup. Still never found this, today. I would recommend to grate some fresh ginger. Or just skip it. Back in those days, I had no fresh ginger. Not even a wok. It didn't stop me from trying to cook it the best I could. That recipe goes like this:
    same amout of veggies as of chicken breast (in weight). 2 large cloves of garlic, cut into slices. (chicken cut just the way you showed it here, Ling.) I cut my 2 scallions in 2 inch pieces. And then lenghtwise, about as fine as the sprouts. 1/2 tsp of salt and sugar, premixed in a cup (stir-fry is F A S T! Never underestimate!) Mix 1 tbsp of starch with medium dry sherry or Shaohsing wine and 1tbsp of soy sauce, 1 tsp of salt and 1 tsp of ginger syrup. Mix that well with your chicken. Heat your wok up to high and add just a little oil to coat the surface. Add your garlic. Stir fry for about 30 seconds. Toss in your sprouts and sugar/salt mixture and stir fry for about a minute. Take out of the wok. Add a little bit more oil and stir fry your chicken. As soon as the chicken is done, turn off the heat and add the sprouts back in. Stir in. You're ready to go!
    Optional could be a (very) finely sliced chili.
    But this recipe made me a fan of mungbean sprouts. Some 30 years ago.

    hey ling, i made this tonight with a little soy sauce and sesame oil. i used shitake mushroom instead of onion. it was a big hit with my "foodie" 10 year twin boys. i now know what my dad meant when he said to me when i was growing up, "the first thing i think of when i wake up is what to make for you and your sister today". it's hard to change up the menu all the time. good thing i can watch your videos and get ideas.

      Good question 👍 In Chinese cooking, we often use white pepper powder to season. It has milder and smoother flavor than black pepper and it’s slightly earthy.

      It helps to seal the seasoning and make it tender. It can also help from sticking to the pan. Sometimes we use egg white. Thank you 😊

    I have a trick I use to safely cut chicken breast. The problem with chicken breast it is not firm like pork or beef so I put the breast in the freezer for 10 to 15 minutes - just long enough for the flesh to firm thus making it very easy to filet. Just thought I'd pass that along. Love your videos, btw.

    I made my own version of this today! I really liked it, and want to try it again. Here's a list of my "modifications":
    - My wife likes mushrooms, so I cooked baby Portabellos first in the wok, then removed them. Then added them back with the chicken.
    - When preparing the chicken, I forget to add the oil! Still, the chicken came out fine.
    - Did not have any potato starch on hand, so used corn starch instead.
    - My local stores were sold out of green onions, so had to skip those.
    - But, I did have some fresh basil, so added that, at the same time I put the chicken in the wok.
    Even with all my modifications, the dish still came out great. I do want to make it again, but next time I'm going to try to make it EXACTLY how you did it.

      What about adding more Chinese vegetables to it . How do you make a white gravy or sauce and put over rice. How do you make gravy or sauce? I don’t know how to do that

    Is the chicken breast normally sliced into ribbons rather then wide slices in Chinese cookery?
