One thing that immediately stood out to me is that the actual Remaster features aliasing and I'm a sucker for smooth edges. Lighting is also way better, which this shouldn't come as a surprise considering how well Nightdive were able to apply lighting to something like Quake 2. They are absolute masters at doing that at this stage.
The Remaster (for as simple as it appears) does a shit ton of stuff under the hood. I really only played Jedi Outcast back in the day, so it was my first play of Dark Forces. Yes, 30 bucks is a bit steep but to me it was worth it because, A: it was a butter smooth, bug free way to experience the game and B: it's an extra step to support the endeavor of moving classics into the modern age. I just played through Kotor 1 and 2 and I can tell you, I'd love a Dark Forces style remaster for those. Getting those games to run effectively on Win10 was a pain in the ass. I was half tempted to run it on my old XP machine but laziness and stubbornness won out and I got it to run on my desktop. To reiterate, Nightdive's remaster is a good trend to be seeing. Some much needed tlc on the old titles is very appreciated.
The mod's a faithful way to play the original, with updates but the same feeling as original. But the remaster is still, as named, a remaster and a solid one at that, it expands and improves the visuals and overall game. I think they aesthetically have different uses. Comparatively, for people who play doom mods; Doom 1 and Chocolatey doom are like original and fan made, and then gzdoom is like the remaster with more settings and graphics options.
You forgot to compare the imuse midi music. It sounds worse in the remaster. There are tiny pops and cracks and timing is way off. Track volumes also seem off.

I think the big thing for me is now I can play Dark Forces on my Xbox
Remaster is a great advantage for console players, I agree, unfortunately there are no mods on consoles
I like both but I like the remaster more only problem is lack of quick save
