I roast my tomatoes, garlic, pepper, and onion all wrapped up in foil on an open flame. The foil keeps the juices inside and prevents a mess. They all get roasted nicely within 15 minutes. Tip: I use the grill shelf from the toaster oven to rest the foil on. Works perfect. Also, in the chunkae (sp?) oil I add a few slices of pepper, a few slices of onion, and a few crushed garlic cloves. Might as well flavour the oil as you're heating it up I say. I got these tips from Choka makers doing this for 50 years or more and theirs was LASHING! So I follow their tips. Just passing it along.

I recently went to a Jamaican restaurant here in Greenville, SC and they had served me carrots with my rice & peas and jerk chicken. They were shredded, savory, and just refreshing. Do you have any carrot recipes? I love carrots!
i like the way you're cooking. unfortunately i'm in the middle of europe, so i cant get some things here. and the tomatoes right now are not good at all. but i'll try it in some weeks.....
soak with hot water or.. place a laundry dryer sheet in it with hot water and let it soak. works with baked-on oven dishes as well. A lil bleach cleaner works as well.
