- Learn how to make an amazing sorfran (turmeric) vegan rice pilaf in day 2 of our 5 days of Christmas recipes series. Chris (CaribbeanPot.com) is joined by chef Marc (RitasIceHamilton.ca) to bring you a delightful one-pot rice dish that fully vegan and can be considered gluten free as well.
Packed with Caribbean flavors, fresh vegetables and perfumed Jasmine rice, this vegetable rice pilaf will be enjoyed by you, your family and friends this holiday season.
For this Turmeric Rice you'll need...
4 cups Jasmine rice
2 large carrots (diced)
2 stalks celery diced
3 cloves garlic (diced)
2 scallions (chopped)
2 shallots (diced)
1 red bell pepper (diced)
1 green bell pepper (diced)
2 tablespoon coconut oil
2 tablespoon olive oil (divided)
1 tablespoon salt (divided)
3 tablespoon parsley (chopped)
1/2 cup raisins
3/4 teaspoon turmeric
4 1/2 cups veg stock (use chicken if not doing this vegan/vegetarian)
2 scotch bonnet peppers (leave whole)
1/4 teaspoon black pepper
4 sprigs thyme
IMPORTANT: If doing this recipe gluten free, be sure to go through the entire list of ingredients to ensure they meet with your specific gluten free dietary needs. especially the stock you choose to use.

I greatly appreciate your recipes. I'm originally from Brooklyn where we have a large Caribbean population. I've moved to the Midwest so now I must learn to cook the meals my friends would eagerly make for me.
This dish looks wonderful and I can tell that it would also be very tasty. By the way, the rice being washed would not give you a soggy or lumpy dish! You just have to know how much water to use. I've been making this kind of rice for more than 20 years now and I've always used Turmeric or Haldi as my mom used to called it. I've also used pre-soaked Saffron threads; the taste is slightly different. I washed the rice every time and the end results have always been lovely; you can see every grain of rice! You just have to know how much water to use to get grainy rice; that's the secret! I've been cooking and baking etc for the past 53 years; I've done catering in Trinidad and am still doing it today but not as often; only special orders. I'm here to view how others cooked the same types of food; sometimes I learn a couple things and shared some things as well. Thank you guys, Happy Holidays and God bless!

I tried this recipe for Christmas Dinner. It was very successful. I did substitute basmati for the jasmine rice. This was the first time I could take eating lots of basmati at one time, I must have been cooking it wrong before. Its nice to seen vegan cooking from Caribbean perspective.

🌸 mirepoix is to gently cook your vegetables without browning, to sweeten rather than caramelise them. This is different to a saute, which will cook them too much. Note further cooking will be done later
Wash rice and use fine strainer, it will get dry for cooking later. If you don’t wash your rice it will have an unpleasant flavour don’t believe me smell unwashed rice, that is what you will taste in your finished dish if you are not careful

I’m sure this tastes great and in the scheme of things is healthier than what many people eat, however using olive oil with high heat cooking, turns the oil to bad, unhealthy fat ... use avacado oil or grape seed in addition to the coconut oil instead ... also most olive oil on the market is not really olive oil, it’s cut with cheap oils and flavored or colored
