For this vegan carrot rice dish, you'll need...
2 cups parboiled brown rice (or your fav)
3/12 cups vegetable stock (gluten free)
1 1/2 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 scotch bonnet pepper
1 scallion
1 glove garlic
1 large carrot
1 tablespoon parsley
3 sprigs thyme
2 seasoning peppers (aka pimento pepper)
pinch saffron

Wow...I do mines different, i boil my rice first which gets rid of the starch. I then toss my veggies with golden ray and cooking oil then I add the cooked rice and sort of fry it up....but hey everyday we learn something new

Hi from Trinidad. Great video. I kinda make my own broth. I add green seasoning, a maggi cube, saźon, garlic and onion powder and salt and pepper to taste. Then I add water and leave it to come to a boil. 😊
butterfly2847 forget about maggi use herbs flavours, like basil,sage,turmeric, oregano and Cayenne. Mmmmmmh the best organic flavours.
may I recommend you try not to use the 'cube/ sazon'.. that stuff is only laden with sodium.

Beautifully-cooked rice, chef. I do something like this quite often when I want some rice with a little flair.

I think the only difference is your Chili and I like to put my rice in there dry with the sweating veggies and cook it till it starts toasting a little in the hot fat.

caribbeanpot I made it and it was delicious! Perfect way to use up the fresh parsley I had that was about to go bad! I used Quinoa instead of rice and added tons of garlic powder and Maggie seasoning. It was delicious!
Request: I love brussel sprouts, broccoli, string beans, bok choy, etc. (veggies) Any meals of that matter? Flavors?

Looks great. Coconut milk can be added, and if so how much would you suggest?
Id go half coconut milk and half stock.. or you risk it being rich and sticky

yes you can .. the chicken stock is for extra flavor but water will work perfectly.
