For this curry dish you'll need...
3 lbs chicken
1 tablespoon Caribbean Green Seasoning
3/4 teaspoon salt (adjust)
1/4 teaspoon black pepper
1/4 scotch bonnet pepper (optional)
2 tablespoon veg oil
2 - 2 1/2 tablespoon curry powder
1/4 teaspoon cumin seeds (geera)
1 shallot (or small onion)
5-7 cloves garlic
1 bundle Bodi (about 4-5 cups when trimmed)
1 - 1 1/2 cup water

Hi Chris love this recipe, but I couldn't find any yard beans so i used breadfruit instead... love it.
In the southern state of Kerala in India, we call it odi payar. It gets the name because we break them (odi and payar means beans) like you did in the video. I have never had with chicken. Definitely trying this recipe!!

Salt=flavor lol but really that's not too much salt. Always have to factor in all the other ingredients. Those yard beans are a trip. I started growing some because just 1 is a snack. Food looks good. Always leave this channel hungry ☺

if you can't get bodi, rock the string beans.. just don't cook as long or it may go mushy

You are correct, Guyanese call it Bora. I usually cook Bodi but I haven’t had it curry style like this. I will have to try this one.

Erma.. yea the addition of potato is def a good choice. Do adjust the salt if adding potatoes.

Question, I've tried making Chicken curry at home but I find the meat gets dry inside and the curry flavor and color doesn't penetrate the meat that much. In some jamaican places I go to in Mississauga, the curry Chicken is insanely juicy and the color goes deep inside the meat. What's the trick to making it moist and deep color and flavour??

I usually add potato while it's currying.. and add coconut milk to give it more flavour.. and i usually just add a bit of chili flakes instead of the fresh pepper..
potato is a common addition, especially when you want to stretch the dish for more people

Is it me or bodi takes very long to soften?
They look like green beans aka string beans(?)
they may look like it, but it's about 3 times the length and bit different flavor
the bodi hv too much off water to cook bodi does cook in it's own juice.
2 things.. you need the water to cook the 'raw' chicken and the make the bodi tender (keep in mind that the one I get (not like the Caribbean) takes longer to go tender. 2. This is how I do it.. while I respect the way you do.. I'll stick to my way.
