3-4 lbs chicken
3/4 tablespoon salt
1/2 teaspoon black pepper
3 tablespoon Caribbean Green Seasoning (divided)
3 tablespoon olive oil
1 medium onion
5-8 cloves garlic
1/2 scotch bonnet pepper
5 1/2 cups water (divided)
2 heaping tablespoon curry powder
1 teaspoon roasted geera (cumin)
1 teaspoon anchar masala
5 medium potatoes
3 tablespoon chopped cilantro

Chris I been watching you for years man since I was about 16 I'm 24 years old now and I've been on my own since being 18 I grew up in a Caribbean household but didn't have a good family life you have been such an amazing part of my life and I'm happy that you still make videos I always tell everyone to watch you because of you I still can go back to my roots and eat the food I loved especially where I am now there are NO Caribbean places its tough! lol keep it up brother much love !

Enjoy watching your cooking. As a Haitian I can relate a lot to what you cook. As I am vegetarian /plant based, I always adjust it as I believe we have to do better health wise without sacrificing taste😎.

I had learned to make curry chicken many years ago from my Guyanese friends. and even though I had made it several times and although each time this I made it has turned out great, In my opinion this one has been the my best one. I believe the green seasoning makes a big difference. Thank you so much Chris for this wonderful tip

Thank you! That's in response to your question about Caribbean people getting salmonella from washing chicken. Never happened round by me. We does know how to wash chicken (and beef and duck) cleanly without splashing things all over.
I think you could have saved that chicken back for some soup, though, along with those wing tips. 😋

Hey Chris. Just made this curry and it is on point. I learned how to make curry chicken from your video years ago and was equally impressed by this updated version. I stuck with adding the tomato ketchup you added in that vid, since I feel it genuinely adds depth to curry. Especially true if the curry is subpar. Great and flavorful recipe. Also I had no potatoes on hand so I used some carrots and the curry carrots were delish 😋.
@el-Cu9432 ketchup is a plus AND I also add a little bit of ground dark roast coffee. 1/2 - 1 tablespoon worth depending on quantity of meat/vegis/water. It gives a nice fuller taste!

I'm going to have to try this one again. I appreciate the way you broke down that chicken into smaller pieces, which speeds up the cooking process. Another great touch in this recipe is leaving out those extras. I love my coconut milk, curry leaves, and bay leaves, but sometime leaving all that out brings out some of the subtle flavors in the spice mix and the chicken too. One thing I would do differently is use coconut oil instead of olive oil, since it has a higher smoking point. Otherwise, I think this was a perfect curry chicken. Thanks again for a good video.

Wooden spoon Yessss. 🙌🙌. Great from an Haitian descent. Grew up on more moist seasoning spices then dry cause it absorb better on the poultry or meat and easy on the digestive system.

Followed this vid loosely tonight in making curry fore the first time in years. When all was said and done, it was similar to how I used to do it, but I paid more attention at the beginning to get a better state of sizzle on the herbs and seasoning. Went significantly hotter with Habanero peppers, and I added New Mexican roasted green chile to the mix. I like to think the heat would have worked for you = )
