I just made this and ooo boy it’s so good!! My siblings and I didn’t like spice growing up, so the way my mom taught me was without all the peppers. Now that my palette is grown, I finally followed the traditional recipe with alll the peppers.. and wooow so much better

Your pots will LAST LONGER if you use WOODEN spoons instead of metal ones. The metal scrapes away they material on the bottom of the pot whete wooden spoons do not. They, simply glide across the bottom of your pot without damaging them ❤ And it prevents you from scraping AWAY the metal into your dish!❤❤❤❤❤❤❤❤❤❤
I put my tomatoes last like in the stew you don’t get flavour from chunks of tomatoes in the raw chicken marinade, unless the tomatoes has been juiced/blended, but hey it still looks very delicious

EVERYTHING IS GREAT...EXCEPT...I would not use ginger because I can't stand the smell. Ginger, ginger tea....anything with ginger makes me want to gag! But this recipe is excellent because I tried it without the ginger.

Is there a difference between using a brown seasoning VS the cooked darkened brown sugar?
The Jamaican version uses the browning seasoning. This is the Trinidadian version. He also used different seasonings in his Jamaican version
