God says forgive and that's where I'm at with it. Till then I'm gonna continue to build on my life and make the best of it. Chris! You make delicious food! Every time I use one of you recipes my Jamaican in-laws (mother, brother, aunts, uncles, all of them) are surprised and ask how I do it. I tell them my island friend taught me how to do it hahaha. Just made some green seasoning last night and have some curry chicken for today.
This is interesting. I usually put everything on the chicken, mix it up with a bit of oil and then add that to a hot pot and cover. Then I stir & add water as needed and finish it off as I like. Think my way is quicker but gonna try this too

nah, the coconut milk will sweeten it. However if you like it with coconut milk (not traditional to the Caribbean type curry chicken), rock it yea. @@SallyMangos
ginger if you like, I'd say no to coconut milk as it will change the pure curry flavor (go a little sweeter). Additionally, keep in mind that some people cannot digest coconut milk easily and can cause cause toilet visits
East Indian cuisine favour coconut milk in their Currys and I my self prefer it every time, so if you want to use it, use it. Use recipes as a guide line and adjust to your personal preference. No dinner recipe is written in stone.

I'm not from India, never been (I had the chance) so my recipes reflect what I learned from my forefathers. Im sure it will work, but I'm not a fan of garam masala so I rarely use it (I dislike the aniseed undertones). You can always add a bit more ground roasted cumin if you like.
