I was born and raised in India and it's amazing how this recipe is so similar to where it came from and yet, it has the unique Trinidadian twist added - heavily influenced by African cuisine .. I learned something new today.

@@mangopudding5979 I guess you failed to see The Binoy Vudi is from India and he said how amazing the recipe is and how similar to where it came from which is India. Then he said it is heavily influenced by African cuisine, I think an Indian from India where curry was originated would notice the subtle differences now I know that some of you from the islands have a problem with accepting that you may have African heritage and some may not I really don't care but to make an argument about something that was stated overtly is a reading comprehension problem or willful ignorance I will let you decide! I know which one it is and I think it's a little of both!

Is there a substitute for culantro? Is there a West Indian online grocery where I can order Culantro and other products from Trinidad? II used to order from a place in the New York area but can’t find it now. I spent a year in Trinidad and Tobago in1967/68 as an exchange nurse at the hospitals and remember well heading to Port of Spain to buy chicken and beef roti at a Roti Shack. When I make curry now, I only use Chief products that I order from Amazon but I would prefer to order from a small business

When you toast it that long, doesn't it have a bitter taste? I've never toasted my curry that long because I always thought it would taste bitter.
