You can bake the meat in a separate pan, take it out and then bake your onions in it and deglaze that pan using your beer. But your method is also fine👌. Yes I'm Belgian, from Ghent, where this dish was invented. Look for "Gentse stoverij". Thanks for showing this great dish to the rest of the world🙏

Yeah. Darkest brown sugar you can find. Stroop is molasses. Molasses is sugar. This one has a slight fruitiness. But use dark brown sugar. Some people dont even use sugar because it is too sweet.

I had a lil belgian frituur as we call them in ghent as a kid and friday was the day 🇧🇪👊 at 8pm we were sent off with a paper note to get our dinner, mine was always biggest portion of frites with stew and mayo and a piece of meat🤤

There are very different varieties of beef stew in Belgium. Some use garlick. Some use none. Others use white onion and siroop. Or red oninions or jam. There is no right or wrong in making belgian stew. So long it has beef, brown beer, mustard, and the most important thing, love. And of course the taste.

No, he did everything correct. He never mentioned it's a german beer. He said that when he was in Russia he couldn't find a good belgian brown beer, so he had to use a german one.
This isnt belgium stoofvlees this is a monstrosity 1 you need to glaze the meat make it crispy 2 keep the fat 3 put beer straight after meat in the pot to have these tastes combine and heating up the meat Gonna make it much more simple for everyone to understand A first put butter (never olive oil) in pot when melted put meat onions and garlic in it at the same time when meat leaves alot of charred remaines put beer in pot until it retracts then put your meat chunks in and wait for gains a thicker solution then move off fire and smear bread with belgium mustard see that you put two - three pieces of mustard bread with mustard facing down and let it rest for around 2-24 hours yes you can let it rest for a day to gain more flavour

It's not the traditional way how you make beef stew (Stoofvlees.) But, I must say it looks amazing.
