    Hi Emmy! I have developed a keto molecular gastronomy egg noodle/spaghetti noodle recipe I would like to invite you to try! It’s right up your alley! It’s extremely low carb (2g or .5g per batch), gluten free, dairy free, no nut flour or coconut flour! Many influencers have already tried it and the recipe is being shared everywhere in the keto world. Please help me reach out to the diabetic community as well! They can really benefit from this recipe health wise!
    I’ve watched your orbeeze video a long time ago and you seem to enjoy molecular gastronomy, so you will love this recipe!!!

    LOL. It's a sous vide egg made in the most difficult way possible! 🤣The main issue here IMHO is that the melting point of polyethylene is only ~10-20 degrees (F) higher than the boiling point of water. The best you can hope for is a long poach. Maybe try a mylar bag instead. 500 deg melting point. This is a fun new subject to explore though. What other alternate cooking methods are there? Solar? Hot springs?

    • @sarahallegra6239
      @sarahallegra6239 2 года назад

      I remember cooking a hot dog with solar as a science experiment when I was a kid. You suspended it on a skewer across a sheet of foil outside on a sunny day and like 30-45 minutes later you have a lukewarm hotdog without any of the character you’d get cooking it in a pan. It did technically work, but I bet there are other, much better alternative methods out there! It would be a fun topic for Emmy to explore!

      There's a really fascinating method where a special outdoor oven is built to collect and focus a lot of heat when sitting in the sun. You can basically use it as an oven/kiln without any flame or electricity. I've mostly seen it used by doomsday preppers and serious homesteaders who want to live as off the grid as they can.

      I had a coworker that used one to heat his lunch and make coffee with on the jobsite far away from electricity or roads. It was a fairly simple piece of kit, actually. A parabolic mirror about twice as large as a basketball cut in half. A tripod with a shelf that sat inside of it, the shelf being near the focal point of light, which was about 150mm above the 'spillover plane' of the rim. A glass dome that fit it all and voila! Bob's your uncle! Imagine a satellite dish with a bell jar dome, shrunken down to portability.

      @@Wulfslove That would come into play if you had the egg in the water for a long amount of time, like days. You can test it out with dyes, and it takes more than a day for the inside to get stained. Seeing as to how Azo dyes are similar in bulk to toxic molecules in plastic like Bisphenol A, it would be reasonable to think the permeation rates would be similar but also take into account that it would need to go through the eggshell and the placenta since these are two distinct layers in eggs. Most experiments done with eggs and dyes also require the shell to be gone as well

    I have discovered a way to reheat leftovers in the oven. I plate up the lefties on a heat proof plate, and cover with plastic wrap. I place the plate in the oven set to the low side of WARM, and heat for 20 to 60 minutes, depending on the portion size. It always comes out like it was cooked fresh. The plastic will not melt at this temperature.
    Because it's preventing steam from escaping, the plastic wrap gets wet. That moisture keeps it from getting any hotter than 212 degrees. And most plastic wraps won't melt until they get to 220 to 250 degrees.

    Emmy @emmymade, there's an easier way!
    In Boy Scouts we've picked up a lot of fun fire cooking hacks, like steaming a cake in a plastic bag, but if you want to boil an egg then you use a paper cup! The water seeps into the paper a bit, so it doesn't burn up, but the temperature conducts directly into the water and you will get a full boil in a paper cup!
    The top of the rim might catch fire, but because the egg is enclosed in its shell, we didn't really mind if soot ends up in the water, but you really can put the paper cup almost right on top of the coals for a solid boiled egg.

    Blue gas flames burn at over 3500 degrees Fahrenheit. I couldn't find a reliable temperature for smoldering charcoal, but I can safely say that it is MUCH less than that of blue gas flames. Most of the figures I found were in the high hundreds of degrees F. I think you're exactly correct and your heat source was just WAY too hot. The outside of the plastic heated faster than the water on the inside could cool it. Still, this was a very cool video that inspired me to do some fun and interesting research. The fact that you don't shy away from showing the fails is one of the many reasons you're one of my favorite RUclipsrs!

      Also, another thing I just thought of: plastic shopping bags are much thinner than the type of bags you were using. One would think that would be a disadvantage, but the opposite may be true. Heat transfer would be significantly faster through the thinner bag than the thicker one. The outside of the bag would be cooled by the water much more quickly. The heat source was still probably too hot, but just another thing to think about if you try this again.

    NICE!! I've seen water boiled in a plastic drinking bottle, but not a plastic bag, nicely done.

    Fun to watch. But, I'll skip doing it myself. ☺
    I usually make a dozen hard boiled eggs in my Instant Pot in just 4-6 minutes.
    If I'm making just a few, I'll actually poach them until the yolks firm up. It's really quick.

    You need food grade plastic and more water to fill the bag. So that the water can cool the plastic all over. The part that was not in contact with water will heat up and melt becos no water to draw away the heat from the flame and melt the plastic.

  • @rocksfire4390
    @rocksfire4390 2 года назад

    likely the problem was with the bag you where using.
    not only were they thinner but they also had the little bits at the bottom (near the heat) that where being melted and causing the leaks.
    a ziplock bag would likely work much better, they are much thicker and thus take more thermal energy to melt.
    also heat capacity is one thing but something not brought up is thermal conductivity, which plays a massive role in all of this. the heat needs to get through the plastic before it reaches it's melting point (i suppose more accurate failing point). so if it cannot conduct the heat fast enough into the water, it will simply melt. this also means the input of heat has a pretty big role in balancing all of that.

    I have never done this but I gotta think it's the heat source and water level along with the amount of bag that was not in contact with water.
    Great demonstration and tenacity.

    Try it with a brown paper bag folded so that there are no pasted edges to leak. Let the bag get soggy, then cook the egg in that. The water that soaks through the paper bag keeps the paper from burning. This might work better than a plastic bag.

    The key to preventing leaks is picking the right plastic, some can go up to some high temperatures before melting, others just give up too soon, but, yeah, can't beat a proper metal pan for boiling stuff in... :P

    Maybe to lower the heat source put a pan over the flame and use the heat from the pan to cook the egg in the bag?? So it's more of an indirect heat?
