    The only problem I've had with aqua faba meringue is that it has to be even more carefully kept away from all moisture, even in the air. The stuff turns to mush if you even look at it moistly

    Helpful tip from someone who uses aquafaba all the time: freeze it in ice cube trays and then pop them into a ziploc baggie. This helps with the odd amounts you’ll get from the can vs what recipes call for. Saves you from opening beans before you’re planning to use them.

    I’ve heard from my aunt that the reason why Japanese snowman has two body parts is because Japanese wear Kimono. (The western snowman has vest and pants=three parts) I don’t think it’s all that true, but I like the theory because it kinda makes sense and it’s cute!!! Anyways, Merry Christmas from Japan!!🎄

    Aquafaba can be used to also make vegan mayo. Very easy and delicious.

    Put the chickpeas in the air fryer and make a crunchy snack. You can put ranch powder or taco seasoning or just about anything or nothing but salt to season the chickpeas.
    Its so darn good!

      @@spookyvegan1402 try and get all the water out first. Make sure they are rinsed well. Place them on a paper towel. Get them as dry as possible. Then place them in a bowl with a lot of salt. This will help pull any excess water out. Don't rinse the salt off. Just lightly pat the beans then add them to the air fryer.

    These are perfect for people who can't eat eggs, don't like them or are vegan.
    I'm not vegan but I'd love to make these.
    I sometimes make meringue mushrooms for my Yule Log. I might try the bean water next time.

    My vegan friend told me years ago that the starchy goop in canned beans could be used like egg whites but I couldn’t quite wrap my brain around it… very cool!!

    I had no idea bean water could do this. So 3/4 cup bean water, 1/2 cup sugar added a tablespoon at a time, and teaspoon of vanilla. They are so cute! 200 degree oven to dry out, an hour or two.

    Assuming it’s no salt added container of chick peas. I made this once but the salt was quite strong.

    Made something similar for Christmas Day this year (highly allergic to egg here…!). 1. Do not skip the cream of tartar 2. Don’t use a fan forced oven! I had very sad looking merengues that I had to turn into an Eaton mess…(which wasn’t bad…just not what I intended!).

      They didn't because meringues aren't really "baked" as much as they're dehydrated. The idea is to leave them in a warm oven for a long time, so that they lose moisture but don't discolour. So that low and slow method isn't enough to liquify the gummies :)

    if you use the water of beans you boiled yourself for this, i highly recommend reducing it down in a pot first- helps so much!

    Idk, ever since I saw Emmy do the worm video and eat worms, I just can’t stop picturing those worms in all the other food. When she said she liked the crunchiness of the garbanzo beans, reminded me of how she also liked the crunchiness of the baked worms. I think I’ve been traumatized. LoL

    Amazing stuff! My wife made a Yule log decorated with aquafaba meringue mushrooms yesterday. You make the tops and stems separately then glue them together using Nutella. Adorable and delicious. Funny seeing you post this video right after we tried that. Merry Christmas!

    This episode helped me figure out why I had problems with the meringue. I never used the cream of tartar since I find it used very rarely, but I see why it's crucial in the macaron recipes for the meringue (egg white or aquafaba)

      Depends on the country though. A lot of countries dont use bone char anymore, New Zealand/Aotearoa for example doesnt use bone char in their refined sugar.

    Just letting aussie vegans know that it's completely fine to use white sugar in this country, bone char is not used in the process here.

    I've had my KitchenAid mixer for like... 20 years? It was originally my grandma's, who handed it down to my mom after getting a new one, then my mom handed it down to me after she got a new one. Still working flawlessly to this day! :)

    You should make my mom's chicken keiv.
    Mix softened butter
    Minced garlic, lemon zest, and a bit of lemon juice
    Tarragon, salt, and pepper
    Can add shallots parsley or make it your own.
    Form butter into balls so you can wrap your chix breast around them firm up in the fridge
    Boneless chicken breast butterfly pounded flat
    Wrap butter balls with breast
    Flour
    Egg
    Bread crumbs/ pankco
    Shallow fry in neutral oil til golden on all sides. I'd turn with slotted spoon so you don't squash the precious butter out. Place on a rack over sheet pan in the oven for about 20 min til cooked fully
    Cut into them and the butter sauce will run onto your plate, and be the most amazing sauce! Tarragon is so under used!!!

    Ahhhhhhh!!!! How did I miss this?!?! I make cookies for a living and actually teach cookie decorating online, I make ALL of my royal icing with aquafaba! As a professional baker/decorator, in my humble opinion, it behaves so much better than egg based royal icing does. No bleeding, stays puffy when drying, floods beautifully, I could go on and on.

    When i made bean water meringue for the first time i was suuuper surprised at how much better it whips up than egg whites. You can still taste a hint of chickpeas but if you like them it’s a nice nuttiness 😊 it’s a really good alternative for vegans and i’ve made these for my mother for lent when you’re meant to eat all vegan.

      Here's what I usually do with the leftover yolks -- put them in a small glass bowl (like a custard cup) and pour cool water over the top to cover the yolks, then cover that with plastic wrap and put in the refrigerator. Then about four days to a week later, pour off the water and toss the yolks in the trash, because I either forgot about them or couldn't find anything to make using them. 😎 I have heard of people adding the yolks to beaten eggs when you make scrambled eggs or french toast, but my timing for meringues never coordinated with french toast.

      Thankfully in Ireland and the UK, most sugars on the market don’t use bone char so are fine for everyone to eat!

      If you know jellied eel is jellied eel you can choose to eat it or not. That something like sugar - made from plants - could have bone char added is not something that most people would ever guess.

      Just a reminder that it is typically cane sugar that uses bone char. It is not done with sugar derived from beets. In the US there are several places that manufacture sugar from beets rather than cane. Please check your sugar before you decide that you have to buy new in order to make a vegan goody. You might use beet sugar and not even realize it.
