A good substitute for dairy whipped cream is whipped coconut cream. You can either buy coconut cream in a can or get it from the top of a can of full fat coconut milk. Just chill the coconut cream and whip it as usual.
All the squirrels in South Carolina are named Fred and Fredericka. Lol all of them have imaginary numbers after their names. Haha. I was attending USC Columbia and didn't know the squirrels were so friendly. I was outside eating and Einstein bagel one day and a squirrel buddy just jumped up on my table and kept creeping closer and closer and closer to me. I finally nipped off a piece and laid it in front of me. The squirrel took the bagel bite and ran off. From them on, I generally named them Fred and Fredericka. Lol no reason for the names except they were the first to come to mind. 💙

This was the first birthday cake that I remember having, just me and my dad in a tiny little apartment, with no air conditioning. As my dad was cutting the cake, the DJ on the local radio station wished me a happy birthday. Thanks for the memories, Emmy.

This is my mom's traditional 'baby's 1st birthday' cake! There are pictures of my brother and I making such a mess of it. It is wild & cool to see such an everyday part of my growing up through someone finding it for the first time.

Ok. So australians know this recipe as "Chocolate Ripple cake" due to using Arnotts chocolate ripple biscuits which are thicker than yours, and most of us will also soak the ripple biscuits in baileys or sherry before we glue it together with cream haha! Totally recommend the adult version ;). You can also use ginger biscuits to make a gingerbread style one!
you beat me to it except I remember using orange juice not Bailey's to dip ( underage drinking was not encouraged in home economics classes at my private girls school during the 70s - now I use Contresu)

My mom made this cake, one of my favorites! But she always left it plain. No chocolate shavings or fruit. I have 4 siblings so it had to be cut in 7 pieces which were not very large. I told my mom that when I grew up I was going to make one and eat it all myself. 😳 For some reason, it tasted better when I only got a small piece! 🙂
Hey emmy, in Portugal we have a cake like this, its literally called "Bolo de bolacha" wish means cookie cake. but instead we use our traditional "bolacha maria" cookies and we soak the cookies in coffee and stack them like little towers 4 or 5 together and make layers of cream between the cookies and cover it in cream and refrigerate! its a great easy dessert!

The coffee addition sounds delicious. I have made something similar without the coffee, but use vanilla extract or even almond extract. I am sure it would be even better with amaretto or baileys.

I think this would be great to make individual cakes with. Stack them one on top of another and get a mini-cake. And when you cut through it with your fork, there's the zebra!
I'm in Australia and I do a Ginger version of mini cakes. I use Ginger biscuits which I dip in Ginger Beer and coat with Cream. I have add sugar, Cinnamon, Ginger spice and a little nutmeg to the cream. I decorate the tops with Glacè Ginger or Crystallised Ginger.
In my family, we call the ginger version Tiger Cake. Never thought of those additions, though-that’d take it to the next level!

@@andrewthezeppo not when using Ginger Nuts. And it is a quick dunk not a soak. I need to test on the Aldi biscuits as they have pieces of ginger in them.
If someone wanted it a little sweeter, they could sweeten the whipped cream. You could also mix some fruit preserves into the whipped cream (strawberry, perhaps) to add to the flavor.
I think whipped cream, especially when you add vanilla needs a small amount of sugar. Not a lot, max a tablespoon.
Also whipped cream cream cheese frosting.

My mom always added some sugar to the cream. Another tip is try brushing the cookies with a touch of Amaretto.
You can also make it adults only by adding some baileys irish cream liquor to the whipped cream.
The cross-section kind of reminds me of the Viennetta we used to eat when I was a child. You used to get one as dessert in the KFC family bucket 😋 (London UK)

@@mjgee2713 we are in SC, so we don't have Kroger. 😩 I grew up in WV and Kroger was one of the few grocery stores we had. Miss them, but thankful for Publix. Maybe Food Lion would carry them??? They are a Kroger based company, I think?? Thanks for the info!!
I remember seeing them making this on "Zoom" when I was a kid and not being able to get the wafers so I got Oreos and just made it with those. It was so dang good I made it all the time. I love how we all have different memories of the same basic "cake".

OMG. I did this same exact thing! Also saw on zoom and made with oreos lol!
In Australia we call this a chocolate ripple cake as we use arnotts brand choc ripple biscuits (instead of the wafers emmy used) but its still sandwiched together and coated in cream the same way as emmy did it, however we prepare it on a sheet of foil then lightly wrap it in that foil and place it in the fridge overnight to set and then its cut in the same way emmy cut it.

02134.. LOL.. I think.. actually, I was a young married lass the first time I watched zoom (I was only 16), but I remember it fondly.
I remember it from zoom too! Literally anytime I hear someone mention "whipped topping". I think of that segment. Even as a child watching it. I somehow knew that refrigerator wasn't plugged in. I can still see her cut into it and it breaking apart as she stood over this mess of a cake and decided which crumbly frozen slice she wanted. Always careful to remember to tell the children to cut the cake with an adult to be safe, but really it was so they couldn't be sued.
We made this often in the summertime, we called it "refrigerator cake" - it was wonderful.... mmmm.. now I want to make one!
It was a Christmas/ New Years tradition for us. Dad was always the one to make it, and for whatever reason finding the wafers was always a pain (Meijer loves to move their stock around.)

Hi Emmy, I've made a similar cake in the past. The recipe called for the biscuits to be placed on a 45 degree angle as you construct it, so you can slice the cake as you would normally do. You just need a half biscuit on the ends. This worked beautifully. It was my contribution to a dinner party. When the hostess sliced into the cake, everyone was very impressed with the striped. You do a great job, thank you for sharing.

This is almost exactly like what we in Australia call a Chocolate Ripple Cake, named after the biscuits/cookies that are traditionally used. I remember having these in the 1970s!

This is one of my favorite desserts since childhood (I am mid 50s). My mom used to jaxx it up with some creme de menth in the cream which has quite a bit of sugar.
This was my dad's birthday cake and mine too... I used to make it for my son in law as well. I enjoy this cake with Nyåkers Pepparkakor ( a Swedish ginger snap cookie .. thin and wafer crisp like the famous chocolate wafers) - makes a nice change of pace! I love this cake any way I make it! We always did ours as a double wide so you got a double strip of cookie & cream...

In Australia, this is a chocolate ripple cake. My mum used to make it all the time..great mum but not the best cook, this was foolproof, even for her. So may variations too, ginger nut with cardamom flavoured cream..so good
When you mentioned dipping the cookies in coffee, it reminded me of a recipe I tried last summer called "chocotorta" which uses thin chocolate cookies like those, dipped in coffee, and layered with dulce de leche (also a refrigerator cake!) SOOOO YUMMY!

This is one of my favorite desserts of all time! We also made one called Maria Cake using Goya Maria cookies dipped in coffee and layered with chocolate pudding. You should try that one too!

Stauffer's brand chocolate animal crackers are a good substitute if you just want to munch on the cookies, not make a cake!!
When we couldn’t get the Nabisco wafers we scraped the icing off the Oreos and just used the cookies. They are a little small and somewhat thicker, so they benefit from a full overnight refrigerator stay. Shaved chocolate on top and preserved chopped ginger. -So delicious!

yes and this Chocolate Roll cake was considered the quick and Easier version of the antique Swiss Roll, which involved baking a cake in a jelly roll pan and rolling it up like a Yule Log cake - NOT a zebra cake - but she's too young to know all the OG stuff
This reminds me of a chips ahoy no-bake pie my family makes! You take chips ahoy original cookies (or any off-brand hard cookies), dip them in milk, place a layer of them in a graham cracker crust, and then cover the layer of cookies with whipped cream. Then repeat until the crust is full and refrigerate! It’s absolutely delicious!

Here in Australia we use chocolate ripple biscuits, whipped cream and sprinkles. If you are fancy you can dip the biscuits in orange juice and then layer with the cream as usual. It adds a lovely orange flavour. Super easy dessert to make.

@@Iceechibi it lends a nice flavour. Just make sure the dip in is like for a second or two - in and out. Otherwise the biscuits (cookies) will fall apart.

As a child I watched someone make this dessert on that pbs kids show called "zoom". This video brought back all the nostalgia! I can't wait to make and try this dessert 😋
We make that every year almost.. usually at Christmas and sometimes we get creative with the shapes, sometimes in a wreath shape but we generally do whipping cream n sugar not vanilla.. might try that.. is yummy and easy to make

LOL we call this a "log" in my family and make it every christmas. Definitely one of the first desserts I ever learned how to make and bring to family dinners.
The most popular version of an icebox cake here in the Philippines is the mango graham cake-just graham crackers, whipped cream but mixed with condensed milk instead of vanilla, and mangos. It's basically the same preparation as this one except the crackers are just lined up horizontally with the mangoes in between. It's a favorite treat of mine when I was a kid and even today 🤤🤤
Edit: there's also a version that uses avocados instead of mangos (we eat avocados mainly as dessert) and it's not as sweet but just as good 🥑

Add 2 tbs of confectioners sugar to the heavy cream before whipping will make it sweeter. It’s basically what you’re supposed to add when making whipped cream. 😉🖤🖤🖤

This reminds me of a no bake eclair cake, where you make a custard out of vanilla pudding mix and whipped topping- line it with graham crackers and top the whole cake with melted chocolate or frosting. Refrigerate it overnight and the cream absorbs the crackers and becomes soft like a cake. It’s soo good- I’ll have to try this as well.

I’m lactose intolerant too and I’ve found coconut cream in replacement of heavy cream makes really yummy whipped cream!
As a vegan I thought about using coconut cream, too!
We call this "The Christmas Log Cake". My mom has made this for our family Christmas dinner for over 30 years. I wait all year for it. It's my favourite.

I think my family would love those cookies. We love Oreos, but the cream is too sweet for us. I've never seen those cookies before, I'll definitely keep an eye out for them!
My experience has been that these cookies are often found at the end of the ice cream aisle or sometimes even in the baking aisle at the market. They are rather expensive, upwards of $6 for a sleeve, but so worth it!
These are some of my favorite cookies, I have the same thought about the Oreo filling. They are delicious.
I have found these cookies at my local grocery store on the cookie aisle, but up on the top shelf.
So hard to find famous wafers and expensive but so delicious and much better than Oreos for making a chocolate cookie crust for cheesecakes/pies
Why not whip the Oreo filling into the whipped cream as a sweetener? It will be very smooth and creamy. And probably more stable than if you just used sugar.
No use in throwing the filling out.
I just don't like wasting food.

I make this with a thicker biscuit dipped in orange juice and I add coffee to the cream. In Australia this is our Yule log for Christmas.

This is an Aussie classic! We call it chocolate ripple cake! It’s so yummy! We have it every Christmas!
My grandma taught me a similar “cookie pie” where you do something very similar. Dip original chips ahoy cookies in milk and lay them in a layer in a pie dish, cover with a layer of whipped cream or cool whip. Keep alternating until you run out of space and leave it in the fridge for 24 hours. It’s divine and reminds me of my childhood

This reminds me of our Mexican Pay helado de Limón. It is made with galletas Maria, a can of condensed milk, a can of evaporated milk and half a cup of lemon juice, the liquids all mixed in the blender, you layer the cookies in a mold and cover them with the mixture like a sweet lasagna and put it in the freezer for a couple hours and bam! You have a delicious dessert! 😋

I used to think this as well, but when I got a store bought Vienna Cake it was quite different than this. The one I had was made with very thin crispy chocolate and ice cream.

As a Southerner, I was shocked by no sugar in the whipped cream…we like sweet desserts. My grandmother used to make this cake, and she added a half cup of sugar to two cups of whipped cream, and a teaspoon of vanilla.
Kinda reminds me of "Dirt Cake" my mom would make it for us. Its pretty much a giant parfait lol with layers of Oreo that were put in the pool processor, pudding, and whipped cream, always end with Oreo on top. My mom served it in a large flower pot with fake flowers in it for my sisters birthday once and the guest were shocked when she took a big scoop of the soil lol. its optional to top with gummy worms too.

For those who want it a little sweeter they could actually sweeten the whipping cream before whipping by adding 1/4 to 1/3 cup of sugar depending on their tastes.

@@moniquemosley2122 yeah that's a good idea. When I use granulated sugar, I just put it in the cream and stir gently for a minute or two to allow it to dissolve.

Fresh whipped cream is so simple and totally worth doing, it tastes much better in my opinion. Most people add a small amount of sugar, thought it was a little odd Emmy didn't.

I remember my mom making this (I tried to find some of the wafer cookies to make it for the grandkids early in lockdown but the price was skyhigh). Mom also used the wafer cookies to make a type of Baked Alaska.

Hi, Emmy - when I was attending our local Lutheran church, the German heritage women of that church used to make a cake that is (I think) exactly like this one. It would appear at pot-lucks with some regularity. When a couple of the non-German speaking congregants asked what kind of cake it was - that was before it was cut into - they gave us the German name. Unwittingly, we said, “Ooo, that sounds delicious.” They laughed and then translated the name of the cake. It was “Cold Dog’s Nose”!!!!!!! We were all non-plussed by the translation. We asked why on earth such a lovely cake would have such an unappetizing name. They were still laughing and told us that they had no idea why it had that name, it just was called that. I think there must be something to do with the German sense of humour. They would tell us some standard German jokes, which would have them laughing, and then translate them into English for us. The English versions were almost always totally not funny - at all. Even they themselves found it strange. Anyway, perhaps there is a German heritage person out there who knows about this cake and could give me the German name for it.
Also, if you are making this in the summer for an outdoor bbq, whipped cream tends to melt at room temperature, after a little while of sitting out. To keep it from doing this, these same German women would use this little pack of German powder called “Whip-it” in English and it was made by the Dr. Oetker company. I believe it is a calcium based powder (often with vanilla flavouring or plain) and was/is found in the “Imported/European Foods” section of the grocery store. Any time you whip cream and want to have it sitting out for people to use in their hot chocolate, or to ice a cake (Black Forest comes to mind), or whatever else you can come up with - if you add this little pack of powder to the cream (follow package directions) your cream will stay whipped for days!!! And it won’t melt at room temperature. I have used it and it works wonderfully. The size of the pack is about the same as an individually-wrapped tea bag, maybe a bit bigger. The German "Kalte Hundeschnauze" or "Kalter Hund" is a bit different. It's made of plain butter cookies and chocolate, so it sets quite hard. But the idea is the same 😋
@@Cricket_265 - thank you for that clarification. 😀 I do remember clearly that their version was made with the chocolate cookies and perhaps in their explanation of the “cake’s” name I misunderstood (or better yet, I have mis-remembered, lol) the story that went along with it. Anyway - I appreciate you giving me the German name(s). I believe they used the name “Kalte Hundeschnauze”. No matter the name, it is a definite winner as a dessert!

My mother used to make this when I was a child more than 50 years ago. It was always a treat and has stood the test of time. Nice to see it again!
There’s a strawberry ice box cake and a “poor man’s eclair cake” (also an ice box cake) both made with Graham crackers that my family loves! So easy but delicious!
Fun fact, heavy cream has little to no lactose in it if you ever want some but are out of the tablets. 😋
IIRC pretty much every milk product except for milk itself is low-lactose or lactose-free
@@EnigmaticLucas yep. I’m lactose intolerant after weight loss surgery but it’s only milk and ice cream that gives me trouble. Cheese, yogurt, etc don’t bother me.

I never knew those cookies existed and I need them. The cream was always my least favorite part of oreos. Way too sweet for me. I need to find them on my next trip to the grocery store.
We have this in Australia too, using Arnotts Chocolate Ripple cookies. We call it Chocolate Ripple cake haha. Soo yummy

No Emmy, it’s not sacrilegious. This is what an Oreo should have been and always be. No cream, just delicious crunchy chocolatey cookie! My favorite store bought cookie 😋 so glad you finally tried them and this recipe!
