Instead of or in addition to the vanilla, try adding either lemon
or almond extract for a different flavor profile.

The fruit fly issue I totally understand, I have had the same problem over the last month, so my mom taught me to make a fruit fly trap, take an old plastic bottle (like from an ice tea or soda etc.) and poke some holes in the cap just big enough for the fruit flies to get into, and then put about a half an inch to an inch of a wine vinegar or straight wine in the bottle, and the fruit flies are so attracted to it that they go in and can't get out. It works really well, and I also will sometimes treat my sink drains, because they seem to breed in them sometimes, with a mixture of baking soda, vinegar, boiling water , and just for pleasurable sent a few drops of an essential oil, and after a few days they are completely gone. You can usually find a great recipe for the drain treatment online. If you haven't already fixed your fruit fly issue I really hope that this will help. If you drink wine, leave the bottle with a little wine in it on the kitchen counter, no need to make any traps. Also I use a hand vacuum if I see any in cabinet doors. The best is to have isopropyl alcohol in a spray bottle and spray them. Here in hot and humid Texas bananas always bring them in but you can even spray bananas with that alcohol.

I also have issues with fruit flies. Solved by getting a pitcher plant. Almost overnight, all the flies vanished without a trace. My son is very allergic to most pesticides, and I hate sticky fly papers, so a nice plant that sits next to the fruit bowl is perfect.
I now want to try this again. Several years ago when I tried making it, I only got 2 layers. They tasted great, but I was disappointed that it was missing the custard.

As far as the fruit fly problem the thing that finally fixed it for me was I bought a Mexican Butterwort aka pinguicula aka the flypaper plant. It’s a carnivorous plant that specifically targets small flies like fruit flies and fungus gnats. After getting it and letting it settle in for a week I no longer had a problem with fruit flies and the proof is there in the dozens of tiny flies stuck to its leaves 👍🏼

By the way, that hard Cuisinart spatula you were using in this video is specifically designed to scrape a food processor workbowl - not really that effective when used with mixing bowls (I tell my baking students to use silicone spatulas or spoonulas for mixing/scraping). Another baker's tip to pass along to you - cold eggs separate better than room temperature (room temp yolks break very easily), so separate when cold, but allow them to warm to room temp before using (cover yolks to keep them from drying out - a spritz of water or cooking oil can also help). I wanted to try making the magic custard cake, and found a recipe online that got great reviews, I followed it to a T and my cake was a greasy, jiggly disaster, so disappointed. OMG that hand mixer is crazy strong 😂 I think even after only 2 minutes the egg whites were a little bit overmixed? Once they hit the stiff peak stage and get to that fluffy cloudy look, it gets really hard to incorporate them well into a batter. Still a super tasty looking cake though 🤤

Did you ever try grape nuts puff pudding? A very old recipe, it was Mother's favorite, also separates into layers in the oven. It's the one with lemon.

I have a hand mixer with too much power. My remedy is 2 take a paper plate, make 2 small holes n the center so end of beater bars will fit through them. Now I have a disposable splatter guard. Easy clean up

Hi! I'm making this as we speak, or I type, so its only been in my convection oven for about 15 minutes and the tops gone brownnn I understand I can't poke this cake with a skewer to check for doneness... thats a word... anyway so should I just let it sit in the oven for the whole 40 minutes?

Could you get away with reducing the sugar? From 3/4 cup to 1/4 cup?
you were NOT supposed to let it cool completely in the pan. 10 minutes or so in the pan then remove and set on a rack to cool. you would have had less shrinking! still looks good.

In Romania we use to bake this quite often. We call it "smart cake" (prăjitura inteligentă) 😅😅 because it separates in layers like that.
I made this recently and the recipe from Jo Cooks said she found the recipe in another language and then in another post she said it was from Romania and they called it Intelligent cake! So I am so loving learning about Romanian sweets now. This is the best cake ever.

@@emmymade I've made Bon Appetit's burnt cheesecake and it turned out really well. Much less stress than a regular cheesecake because it is supposed to burn and crack (and you don't need to make a crust).

@@spacegirl6590 longer time at a lower heat. It's something that can't be rushed. I usually do mine for an hour plus at 150oC
