Magic Custard Cake | Stunning Three-Layer Cake

  • This magic cake has a fudgy base, a soft custard center, and it's topped with a fluffy sponge. And this is all made with ONE simple and quick batter! Magic Three Layer Custard Cake: It’s like, well ….MAGIC!
    If you love vanilla sponge cakes and custard, you are going to be obsessed with this cake! It looks like it’s been carefully layered with three different components. But it’s not! You just pour one simple batter into a cake tin, pop in the oven, and this is how it comes out! Try it and you will be amazed!

    INGREDIENTS
    1 cup (125g) all-purpose flour
    2/3 cup (135g) sugar
    2 cups (460g) whole milk, room temp
    1 tsp (7g) vanilla bean paste (vanilla extract)
    1/2 cup (107g) melted butter, room temp
    4 whole eggs, room temp
    INSTRUCTIONS
    Preheat the oven to 325 F (160 C) degrees
    1. Separate eggs and add the egg whites to a bowl and whisk until stiff peaks. Set aside.
    2. Beat the egg yolks & sugar until light and fluffy for 5 min. Add vanilla bean paste or vanilla extract and soft butter. Beat for two mins. Add the flour and mix it in until fully incorporated.
    3. Slowly start adding the milk and beat until everything is well mixed together. Add the whipped egg whites, a third at a time and gently fold them in using a spatula, repeat until all egg whites are folded in.
    4. Grease and Line 8-inch x 8-inch baking tin with parchment. Pour batter into the baking dish and bake for approx 45-60 minutes or until the top is lightly golden. Cool completely then cut into 9 pieces, dust heavily with powdered sugar and serve.

      Oh wow you are paying good attention 👏🏻 you saw that right! I am using Kerrygold butter. This butter is so rich and that’s why it’s yellow.

      think good it’s very hard to see on the picture, but if you look closely you see it has a sponge on the top, fudgy base and a soft custard center. It’s really three layers! So magical ✨

      You can use 460ml for this recipe, sorry I didn’t change it to ml

    I tried a recipe VERY similar to this and when it came out of the oven there was a huge indentation on one towards the middle. It looked like a giant crater in the middle of it. I'm not sure what I did wrong. Any thoughts of what might have went wrong and how to fix it?

      Hey, there was a little indentation in mine as well. There could be a two reasons why it happened. First: maybe the egg yolks or egg whites weren’t beaten enough. Secondly: at the end were you fold on the beaten stiff egg whites, were folded to much so you batter thinned out to much. I hope these tips help you next time ☺️

      Bella B that’s a interesting idea! Try to add 1 tablespoon of cocoa powder to the flour. I never done this before so I have no experience 😁

      There is a video of a chocolate magic cake on the same list. The only difference is that they add a quarter cup of cocoa powder in with the flour. Otherwise it’s identical to this.
