- I review the Signature from Cotswolds distillery. A fantastic newcomer in the whisky scene, Cotswolds produces it's whisky with passion and love in the idyllic setting of the rural area it takes it's name from.

Haven't tried Cotswolds yet, but have been intrigued after hearing the owner Daniel Szor talk about whisky, his passion is evident and what has piqued my interest in his distillery.
Such passion behind the project really shines through in the spirit and the people who work at the distillery. I absolutely loved the vibe and the attitude at the place, just happy people knowing they make a good product. Hope you get to try it soon 🥃

@@thewhiskyenthusiast There are some micro boutique spirits distillers in my area but Kentucky and Tennessee are a good 18-20 hour drive. I’ve visited over a hundred breweries throughout the country. My bucket list someday is to visit Scotland.
Great review. I'm just starting to get into English Whisky and haven't had any Cotswolds yet, have had some Bimber and Filey Bay. You talked about the STR casks in the Cotswolds and it seems to me either people really like STR or they don't, no middle ground. I myself haven't had much STR cask whisky so I'm still trying to figure out whether I like it or not.
Thank you! I haven't had any Filey Bay yet but Bimber is doing good stuff. Their new make is particularly delicious as well! How are you finding them?
I don't know if people don't like the taste or the idea of STRs because I have met people who argue the use of STRs are a short cut and kind of a smoke and mirrors trick if a distillery doesn't trust it's young spirit but taste wise they all seem to enjoy it 🤔 I personally like both the idea and the taste. I think it's a genius way for new distilleries to make enough money to be able to release unhindered raw whisky which the hardcore enthusiasts seem to want but the STR is what the general consumer will enjoy.
@@thewhiskyenthusiast So the Filey Bay I have open at the moment is The Flagship its quite could light & fruity I'm thinking it reminds me of Aultmore 12yr. Interesting thoughts on why some may not like STR.
