I love this Claudia Roden recipe, it’s been my go to recipe for years. So glad you reminded me Geoff, and thank your sister
HI Susy. I am glad this brought back some memories. The recipe I used is slightly different to the Claudia Roden one, in that it uses a little less sugar and no baking powder. But I am sure the result is very similar.
CR recipe has 250 sugar 250 ground almonds but yes it does have a teaspoon baking powder. Either way Geoff, it’s a great cake thanks for the share

HI there, you are very welcome.
I’ve discovered this wonderful orange almond cake in the Near East when traveling in Lebanon, where most of their pastries are almond based. The only difference with your cake is that they use a pinch of cinnamon. Greetings from Athens
Hi Fjord Hellas. I love cinnamon, so maybe I will try that next time I make it.

Hi Cindie. That''s great. I am glad you like it.
This is the best version on youtube of orange almond cake. ❤️ the syrup looks phenomenal! Can I use a blender if I dont have a food processor?
Yes you can certainly use a blender for the oranges, but I think I would mix everything in a large bowl, by hand. It will work very well. But I think a blender would probably be ok too.
I was just about to ask the same question! 😊
Geoff thank you for showing the recipe being made slowly and thoroughly. It looks delicious! But i would put less sugar in it since there is the syrup added to it as well.
HI there, you are most welcome. Often I worry about how sweet something might be but in this case I found it just about right. But, of course, it is all a matter of taste so less sugar will be fine too, though it might change the texture a little too.
@@geoffsbakingblog thank you for your reply. I will bear it in mind.

Hi Lirije Kastrati. Thanks very much.
Thanks for sharing, hello from Australia!
Can we substitute the caster sugar for honey something else?
Hi. I did some searching and found that it is possible to use honey instead of sugar in baking. However there are some differences. So, for instance, this is one article that I read on the subject: Some people use it cup for cup, others prefer 1/2 cup - 2/3 cup of honey per cup of white sugar. Reduce the amount of other liquids by 1/4 cup for every cup of honey used. Lower the oven temp about 25 degrees F to prevent over-browning and add 1/4 teaspoon of baking soda for each cup of honey to your batter.
Hi Geoff! I just made this recipe, I can't wait to eat it. Thank you for sharing this recipe. Our house smells like a bakeshop now
Hi Brenda. That's great. I do hope you enjoy the cake as much as I did.
I came back to your recipe after going through loads of similar.but it was your delight at tasting that made me return! Despite the long pauses and much heavy breathing😂

Hi Geoff!
From America…. Made orange and almond cake following your recipe for Christmas.
Thankyou so much for sharing.
I am looking forward to trying the blueberry fragepanie tart from your collection of recipes too. Will let you know how it turns out which without a doubt will be delicious!
Merry Christmas!! 🎉

@@jacinthadcruz9479 Oh that's great. I am so glad you enjoyed the cake. I hope all goes well with the blueberry frangipane one too.
Made this cake today..one of our favorites it's so moist....as you said simply wonderful😂it Went down a treat😜 ... Also the nut squares they turned out well with the walnuts... I picked them out the mixed bag of nuts!!! Happy Easter Sunday 🎉💐🐰🐇🐣🎊
Hi Henrietta, it is a lovely cake. Perfect for a lovely day like today. I am glad the squares turned out well. I had to take mine over to family this morning, before I ate them all.
Yes Geoff this was the one ii did but I don't have a food processor so I just, zested and juiced and it worked fine still orangey... I couldn't remember when you said about the whole orange that's why uhhhh what am I like.... Been bothering me all last night... Because I write the recipe down my way Haha. 💋
very tasty thanks i like your channel
Thanks very much, I am glad you like it.
Geoff, did you put the syrup on the bottom of the cake or the top? It looks like the cake was upside down, which makes sense as the other way would not be so open. Looks delicious and will definitely try it.
Hi Teresa. To be honest I cannot remember now. But looking at the video I believe it was upside down, since the colour is not as dark as the sides.
Another recipe I can't wait to try. Great dessert to make and bring to a dinner party! :-)
HI Philip K. This is a lovely cake so be sure to add it to your list.
@@geoffsbakingblog Absolutely! :-)

Hi Tina, I am glad you like the cake. You are 'near' neighbours with my sister it seems.

@@tinacox9782 She lives around Port Pirie.
G’day Geoff. I made this yesterday and it’s absolutely superb. With a thick dollop of King Island cream it’s to die for. Thanks mate. 🍊
P.S.
Would a lemon version of this recipe be worth trying?
HI Gone Guy. That's great! I am so glad you enjoyed it. I think a lemon version would be very nice. However quite how many lemons to use might pose an issue. To obtain the same volume as for the oranges would require 3 or maybe 4 lemons which might make the flavour rather too intense. However I think maybe using just two lemons would make a slightly less moist cake but with a more mellow flavour that would be very good.
Hi Geoff tried this cake recipe for my husband's birthday today 🥳 Orange Almond cake is our favourite 😋 . Iam sure he's gonna love it 🤗 Loved your presentation so neat and crisp. Thank you 🙏
HI Deepa Grace. Thanks very much. I do hope you both enjoy the cake.
Oh my goodness I was literally salivating watching you eat that cake. Droooool. But I have a tiny question. Since you have use d pith etc all of d orange in the cake is there like a bitter-ish taste ( of d pith)
Hi Oceanic Blue. From memory, and it is a couple of years ago since I ate it, there was no bitter taste at all. Just a lovely moist orange flavoured cake.
Hi Geoff. Ok I tried it today and from the recipe I made three cakes. Yes there is no bitter after taste n it's yummy. I sprinkled almond slivers on the top of the cake as a border n when done I used d orange syrup but added orange blossom water to enhance it further n finally decorated it with candied orange slices. Man that was super cool. Thank you very much for yr recipes yr patience n also for replying. Cheers Delilah of oceanicblues.
@@oceanicblues2496 My, My, My Delilah, that sounds so good. I am glad it worked out well for you.
Geoff Cooper
I am Persian, we have a famous food That we make with orange peel and cranberry, rice and chicken, how we do we boil the orange peel three times until we take off the bitterness from the orange then we add sugar and some zaftan then to cranberry just add a little bit oil and mix it with orange peel to cover the rice that we already made it we already have it in beautiful plate
@@arefehshahani8197 , Hi, that sounds really delicious. I will have to try to try it for myself.

Geoff hi it’s Hayley again, sorry for bothering you so much, your Madeira cake came out really good it’s finished already and only made it yesterday afternoon, what I wanted to ask was did you peel the oranges, or did I miss something, thanku
Hi Hayley. I'm glad you enjoyed the Madeira cake. The answer to your question is no. The whole orange, including the peel is used in this cake. Only any seeds are removed. Boiling the oranges beforehand softens the peel very well and it breaks down very well when processed, giving such a lot of flavour.
Oh, my goodness this looks amazing... my mouth is watering and I haven't even seen you taste it yet... That always makes me hungry... I will be trying this on the weekend... Thank you Geoff for another brilliant recipe... 😀🇨🇦
HI Carol. Thanks very much. It is quite an easy cake to make, and with no wastage either, so that's a bonus. I do hope you enjoy it.
I just tried and was amazed by the juicy orange taste (also applauded by my friends). Thank you so much for the great recipe. One question: during baking in an oven (pin/needle test) and when eating, the center part looked/felt as if it is a bit undercooked. Can you please advise whether it is normal or I need to bake more. Thanks a lot.
Hi Planman. The cake is always. going to be very moist, due to the amount of moisture in the oranges and eggs. It will also be a dense cake as ground almonds don't bake the same as wheat flour does. However the cake should be cooked all the way through. If you think the centre seems a little undercooked you can bake for longer, and perhaps place some aluminium foil on the top with a hole cut in the middle, to allow the centre to cook through.
@@geoffsbakingblog Thank you so much for your quick and great advice. Will definitely do so. 🙏
Try with fresh orange. I don't boil it and it comes very nice. Thanks
Hi Hala Seror. That's good if it works for you.
Looks tasty and delicious, can we replace oranges by lemons?!
Hi Zozo Moknine. Thanks very much. You can replace the oranges with lemons, though using the same volume of lemons might make the cake very tart indeed.
🖒
I have a Marianne nordic ware pan...do you think I can make it in that pan???? loved the video
I think it will be fine to use that pan. However I think the cake may not be so high, and putting the syrup/icing on top my be more difficult.
hi there!!! thank you for such a quick reply...I'm in south florida...hope all by you is well....
by the way there is a lady who uses brown sugar instead of caster...
Yes all is well for me in the UK, thanks. I am sure soft brown sugar will be fine too, it will just change the flavour very slightly since light brown, and more so dark brown, sugar has more of a molasses flavour to it than the refined sugars.
You are so cute!
Wowowie🎂🎂🎂
:)
Can I substitute granulated sugar? Looks yummy!
Hi Pat, yes you can use granulated sugar. I use caster sugar as it is finer and dissolves quicker. But in this type of cake granulated sugar will work just as well. I hope you enjoy the cae if you make it.
Geoff Cooper thank you!
