Your videos have sincerely helped me figure out many of these things for myself.

If I use a thumb starter there is no reaction in the timing (about 0.20s faster than competition), but when using the freelap e-gun the time is started at the gun.
my 30m fly is 2.75 that doesnt make sence because yours is the same as mine through 40-70m and I ran it consistently for 10 trials *electronically timed* between 2.85 and 2.7 flat but my 100m is 12.4 how do i get to 10.3 like you

With a 2.75 30m flying you should at least run 10.60-10.50. How do you time your runs?
