I love matcha latte so much, but people tend to use the lower-quality stuff unfortunately and it makes them think like it's overly bitter and not tasty - that's why when I try to convert a friend to matcha I make them the ceremonial grade.
Wow. Way to up your production. The double straining is a nice tip. Usually, for photos, I've learned to whisk the matcha less get better milk texture, but straining it again is probably better for actual drinking.
Count me inspired. I haven't ever tried real matcha, but I have equipment and a few different teas on the way. I wondered how this would look/taste with houjicha as well. Would be interested to see some houjicha art if you had some to try it with.
It will likely make the matcha aromatic and less bitter. The catechins are more heavily released when hot. That being said some of the flavors will certainly change.
