I would love to see a discussion on milk portioning. As someone who is a solo coffee drinker, I can’t figure a good way to make a cortado or smaller drink without wasting milk. Is there a good way to fill a pitcher with less milk and still have appropriate depth from a steam wand? I love the videos though! Super thoughtful and informative for the at home barista.
No need to waste milk.. just keep resteaming it. 🤷♀️ Drives me crazy to see any milk thrown out. Keep it in the fridge and keep adding fresh milk to your 2 leftover ounces from the previous day… milk steams perfectly fine when it’s cold. Even if it’s been steamed before. Give the cows a break!

So since it's nearly impossible to correctly steam less than 50-60ml of milk, just add more to help you and avoid steaming milk everywhere and then keep the left over in the pitcher and put the pitcher back to the fridge for the next day?!? 😮
It would be kinda cool if the company that made the pichter had like an emilee kit. Which would consist of the pichter she likes with a fill line for cold milk and maybe a line for when the milk is fully expanded and then a cup that matched her recommended spec

After a year of learning latte art I finally found out the cup size role in laying the base of the art, and the spout shape. THEN I find your video and I have a deeper understanding of what you are saying. The advice I learned from you is the larger pitcher after steaming in smaller pitcher. I will try it I think that will be it. Just ordered 8oz latte cup after been having problems with a clean base in the 12 oz cups with 34g shot. (Too shallow) Edit: the 22oz round pitcher is OOS :(
WOW, great info on the cup. I had been using a china "mug" shaped cup. So even though it is about the correct volume, the mug shape was probably a major cause of my difficulty. I just replaced it with a cup that looks like Emilee's cup, rounded on the inside. First try was a LOT easier to do 🙂 I still have a LOT of practice to do, but at least I am not fighting the cup now. Thank you. Edit: 2nd day and my milk pours are MUCH better in a round bottom cup, than it ever was with the mug with a squared bottom. As you said, the shape of the cup DOES matter. I've been pounding my head against that problem for years, and the solution was simply a different shape cup.

if you are going to transfer to a pitcher to pour i bet there is a better shape they could come up with to make perfect steamed milk . it seems having two tools optimised for each of the two jobs would be better than using the same tool twice in different sizes . (im a chef so we have different tools for everything haha)
I've been working on pours into a Not Neutral 6 oz cup for years with a BH 400 ml pitcher and have always sworn that great latte artists seem to have so much more ease getting a smooth flow out of the pitcher. And now that you explained your reason for a large pitcher, I realized that all my favorite Instagram pours are with a large pitcher and it totally makes sense! Gonna have to order a 22 oz stat!
Sorry I’m just seeing this! Yes it was a HUGE click the first time I tried one. I was trying to save some botched milk by transferring and then I had buoyed the flow so much I adopted it as a new style for my pours. Haven’t looked back.
"Use a bigger pitcher" is the best nugget of advice I've gotten for a while. It will take a bit of time to get used to the increased sensitivity in flow rate, but I just tried this for the first time today and it is effortless to get a nice crisp start to the base. Previously I was using how much smaller pitcher to pour, but my base always started out beige. With a larger pitcher it separates so much better; the microfoam just effortlessly slides off onto the top of the drink. Thank you for the tip!
Goodness me... discovered your marvelous channel a couple of days ago. Just love a good, creamy coffee (in my country #NZL, we love something called #flatwhite, which I describe like something close to a Latte, and which also requires a wonderfully stretched milk). The milk is not stretched too much though. Anyway, came for your talk on pitchers --amazing!-- but ended up in something never gave a thought: the FORM of the CUP. I use an (emotionally!) favourite colourful cup from IKEA bought many years ago. Well, now will try my old, normal, "cappucino" cups! Many many thanks... will watch some of your other videos. 🍮🍮

I think ,it does matter what kind of milk pitcher you used plus how comfortable you hold it when you pour it in the cup , but in the end it takes lot practice ,until you got that technique 👌
David Schomer from Espresso Vivace agrees with you saying latte art does not work well with a shallow spout. I bought a better pitcher and starting to realize better results. By the way Espresso Vivace beans are at another level. All of their beans are amazing.
@@EmileeBryant I have not been to their Cafe's. I have bought beans from the website. He says their beans are a Northern Italian style. Where even the lighter beans are not acidic. I have an excellent grinder that does a good job keeping the acidity to a minimum. These beans are amazing. You can buy a specific bean except for the single origin. For the single origins you get what they are roasting that week. I usually buy a 12oz single origin and a mix. I promise you will be amazed. FYI - I have no connection with them other than being a customer.
Great information - going to try the pitcher transfer approach and see how my “art” improves. Only concern I have is that moving it to another larger pitcher will cool down the milk and - given my setup is a single boiler (beginner setup) - hot latte is already an issue even with a preheated cup. Any tricks of the trade for maintaining temperature of the beverage overall? Love my coffees but love it more hot.. Thxs.
Turn the steam wand on with the empty pitcher under it and it will heat it up! Or alternatively you can keep some hot water in the pitcher and dump it right before! Though non of this is “necessary” I do think you’ll enjoy the feeling

Not sure if you’ll see this but wondering if you think the 15oz is big enough for an 8 oz cup or should i hold out for the 22oz. They have been out of stock at slow pour supply for a minute.
You can use either! 15 is on the smaller side though so you might have a slightly harder time getting close to the coffee surface I know plenty of champions that use smaller. I just very much prefer a larger 22oz for the ease of flow and starting sooner in small cups. But for 8oz you will be great!

I am joining the 22oz WPM round spout club! I think my biggest mistake is that I take too long to pour and therefore the foam has stiffened up. Flow rate and incorrect foam texture being 2nd and 3rd scumbag mistakes.
Hello Emilee when I froth the milk in a smaller pitcher then transfer it into a 20 oz pitcher I get bubbles after the transfer process. What can I do about that?

Hey Emilee! I bought some Notneutral cups (180ml) but I always use a double espresso for my cappuccino, so I think its to less room for milk.. could you please help me with a few questions? At first, sadly your linked cups doesnt show off so I don’t know what you recommend, are notneutral cups good? Also can I use the latte cups from notneutral (240ml) for my double espresso cappuccino or are these ones to big or doesnt have the right shape for latte art? Hi! I always drink in 5oz cups and I am steaming milk in a 12oz pitcher... same pitcher I use for latte art! I am ordering right now a 22 pitcher to pour the milk, and I am also thinking on ordering a 10oz for steaming? I feel like when I watch latte art videos I always see alot milk left over in the pitcher. Is that better than having the right amount of milk in the pitcher? When I have the right amount, it seems like I run out and don't have enough to push the foam forward.

Thanks Emily, just curious if you would need to steam the milk hotter? By the time you transfer to the larger pitcher, then into a cup, the coffee may no longer be hot enough.
You can always pre heat the pitcher you’re transferring into. I use the steam wand to do that. It will still be hot and delicious so long as it doesn’t take forever :)

Not sure if you’ll see this but wondering if you think the 15oz is big enough for an 8 oz cup or should i hold out for the 22oz. They have been out of stock at slow pour supply for a minute.
You can use either! 15 is on the smaller side though so you might have a slightly harder time getting close to the coffee surface
I know plenty of champions that use smaller. I just very much prefer a larger 22oz for the ease of flow and starting sooner in small cups. But for 8oz you will be great!

I am joining the 22oz WPM round spout club! I think my biggest mistake is that I take too long to pour and therefore the foam has stiffened up. Flow rate and incorrect foam texture being 2nd and 3rd scumbag mistakes.
Hello Emilee when I froth the milk in a smaller pitcher then transfer it into a 20 oz pitcher I get bubbles after the transfer process. What can I do about that?

Hey Emilee! I bought some Notneutral cups (180ml) but I always use a double espresso for my cappuccino, so I think its to less room for milk.. could you please help me with a few questions? At first, sadly your linked cups doesnt show off so I don’t know what you recommend, are notneutral cups good? Also can I use the latte cups from notneutral (240ml) for my double espresso cappuccino or are these ones to big or doesnt have the right shape for latte art?
The last question would be if you think the WPM handleless pitcher with rounded spout would be good for a beginner because I think the control would be better for me without handle.. also is the size (150 OZ) to big?

Hi! I always drink in 5oz cups and I am steaming milk in a 12oz pitcher... same pitcher I use for latte art! I am ordering right now a 22 pitcher to pour the milk, and I am also thinking on ordering a 10oz for steaming? I do not really fill the 12oz as much as I should because I do not like wasting milk, do you think I will be more consistent on steaming using a smaller pitcher and filling it right to the spout? I feel like when I watch latte art videos I always see alot milk left over in the pitcher. Is that better than having the right amount of milk in the pitcher? When I have the right amount, it seems like I run out and don't have enough to push the foam forward.
When i foam my milk i always have some at the bottom of the jug that is just unfoamed milk.... 😕🤔

Thanks Emily, just curious if you would need to steam the milk hotter? By the time you transfer to the larger pitcher, then into a cup, the coffee may no longer be hot enough.
You can always pre heat the pitcher you’re transferring into. I use the steam wand to do that.
It will still be hot and delicious so long as it doesn’t take forever :)

Any smaller size is fine. Just so the milk isn’t too shallow in the pitcher when you steam.
