Bravo....I would just say to reserve 20% of the garlic paste and add 30 minutes before the end. This is a restaurant trick ...its basically garlic butter and it delivers that Indian restaurant flavour.....

Another great video definitely one to help keep warm on the cold nights... Id advise one thing never put boiling water in a glass without a spoon to conduct the heat you will get away with it most of the times but its nasty mistake if you dont ....i worked with a girl who did it and it was a nasty burn
So appetizing to watch. A lovely idea all of it, but surely you can't eat the lemon quarters - they would be eye wateringly sour - I would remove them all before serving. Even so this was a great way to do beef brisket. I definitely give this the thmbs up.
Please try it. It’s not sour after it’s cooked. The curry has a sharp flavour obviously because of the lemon juice however the lemon rind has a bitter umami flavour

I'll settle for EP Veeraswami's method of a squeeze of lemon juice and a shake of salt to taste. After a 2 hour Dum in the curry gravy as the meat tenderized I tried to sample a chunk of lemon with the softeneed rind - HORRIBLE sour as hell and not a good compliment to the smoothness of the madras curry - so I won't be using that technique again but the madras curry was a great method. It's one I will definitely do again.
@ the lemon isn’t for everyone’s taste however i use for flavour. I tell my customers to leave out the lemon when eating but if you add to curries it enhances the flavour…

My question is if you have a recipe for say two people and you want to make it for eight is it simply a matter of multiplying the spices along with all other ingredients else by the same proportion (4) or do you not need to add the same ratio of spices ?

I went on the Keto diet some years ago. I managed to lose 40lbs. I was prediabetic. Latif’s recipes played a massive part in me losing the weight. However you’ll have to go without rice, potatoes and Nan bread. But don’t dispair you can have a second helping of the curry instead. Best wishes.
Less of the curry, paired with steamed vegetables and rice to soak up the fat. And exercise! This is good fuel, the stuff to really stay away from are the simple sugars and booze
Made this one and it is fantastic (did blend the sauce though). The 10 fresh chillies were a bit much for me and I am used to restaurant madras. Very hot going in and even hotter coming out.

My local Asian shop oner taught me a few things when making a curry such as adding a teaspoon full of garam masala towards the end of cooking is this normal with home made curries such as madras

I know your pain. I was lucky when I moved last year and managed to find a small indian market near me that does them. Your best bet is Amazon if you can't find them locally. Search for "Tej patta" and you should find them OK. Just make sure the leaves you're getting are not the standard european ones (sometimes the pictures will be misleading). Tej patta are about 2-3 times the size of the usual laurel bay leaves we usually get in UK supermarkets and use in a spag bol, and also paler. Well worth it. Good luck!

@LatifsInspired Shatkora isn't to everyone's taste, plus lemon has alkalinity properties and great for digestion. It's really creative adding lemons. I personally love Sylheti lembu. Would it be a good idea to brown the meat in the pan before adding the onions ? Also better flavour profile on meat.
Only really for flavour it's a myth that browning seals in the moisture.

Just give it a go. This is how we do it in traditional cooking. It won’t be melt in your mouth texture but nice texture
