I had to adjust the ingredients with the ones that I have and substituted the apple sauce with pineapple purree/jam, ketchup instead of tomato paste. The kitchen smells amazing and the curry tastes even better! I added a bit too much vegetables though, (carrot, potato, chayote, corn, peas, lentil) but thankfully the flavors are foolproof.... Thanks for the recipe!

I've been making this weekly for my kids, and it is an excellent recipe! I use curry powder from Oaktown Spice (the BEST spice shop!), and the flavors of this curry come out so complex and fragrant and delicious. It is slightly different each time, depending on what apples I use, and if I have ginger on hand, or if I throw in a sweet potato, but every time it is a big hit in our household. So, thank you for sharing this recipe with us!

that's because there is no such thing as one curry powder in India. It's a foreign thing (blended spices to make "indian" curry). Although, here I think we can use garam masala wherever she says curry powder.
