The kitchen smells amazing and the curry tastes even better! I added a bit too much vegetables though, (carrot, potato, chayote, corn, peas, lentil) but thankfully the flavors are foolproof.... I use curry powder from Oaktown Spice (the BEST spice shop!), and the flavors of this curry come out so complex and fragrant and delicious. It is slightly different each time, depending on what apples I use, and if I have ginger on hand, or if I throw in a sweet potato, but every time it is a big hit in our household. that's because there is no such thing as one curry powder in India. It's a foreign thing (blended spices to make "indian" curry). Although, here I think we can use garam masala wherever she says curry powder.

Garam masala is an Indian spices btw make idli dosa and vada
you should add 4-5 curry leaves instead of bay leaf it will totally change the taste of curry i personally do not prefer bay leafs
