  • Thick chewy udon noodles soaked in a rich, fragrant curry sauce! This Japanese Curry Udon will satisfy your noodles craving in an instant. Bonus: it’s simple enough to throw together on a busy weeknight.

    INGREDIENTS (Please check the website for detailed info)
    ½ onion (5.7 oz or 162 g)
    2 green onions/scallions (finely chopped)
    1 Tbsp neutral-flavored oil (vegetable, canola, etc)
    6 oz thinly sliced pork loin (170 g; Or use your choice of protein; cut into small pieces)
    1 Tbsp sake
    3 cups dashi (720 ml)
    2 cubes Japanese curry roux (Roughly 2 oz or 50 g total. You can make homemade Japanese curry roux.)
    2 tsp soy sauce
    2 servings udon noodles (6.3 oz/180 g dry udon noodles; 1.1 lb/500 g frozen/boiled udon noodles)

    OMG! I absolutely LOVE Udon noodles! Ever since I visited Japan years ago I have craved Udon noodles. There was a little shop not far from the hotel in Ikebukuro. I went there quite often just to get a bowl of Udon mixed with meat and veg. And seeing you make this dish reminded me how badly I miss them. Thank you so much for this, Nami-san!

    Thank you for making these videos! I love curry udon! A couple of questions - what is the black pot that you use? And what curry roux brand do you like? Usually I just use my own curry powder and add mirin.

    There's a Japanese restaurant about 15min from where I live, it's the only place I've been to that has some dishes that compare to the stuff I got in Japan.
    Their Takoyaki was what convinced me I was just gonna love Japanese food as a whole (it's made out of 3 ingredients I hate... but was absolutely delicious). And my favorite thing on their menu is a Beef Curry Udon. (Although their spicy tonkatsu ramen and okyakodon are high on the list as well).
    That dish... is just about my favorite thing in the world. It's no secret that a good meal can sorta salve the soul, but getting that from time to time is my best example of it. I could be having an absolutely shitty week, and treat myself to a bowl and I'll be feeling on top of the world afterwards.

    When I went to the bambu forest we found a restaurant that had this dish, my wife and me got amazed with the combination of two things we liked and just today we made this recipe and it was truly amazing, we felt again on Japan.... arigatou

    Nami-san, since I'm single, can I make the curry, eat one serving on one day, and keep the second serving in the fridge overnight to eat the next day? I'd make a single serving of udon each of those days.

    OMG Nami san. I make this recipe a LOT particularly w/ leftover curry that barely make 1 serving. I simply add 600ml dashi & udon noodles and out come 2 servings of curry udon.

      Yes! Wonderful!! 🙌🏻 It's so easy to make it into curry udon soup. I grew up with "thicker" curry udon (pretty much a tiny bit looser curry that most ingredients are gone previous day + udon). It's so nice to have variations so we never get tired of it!

    3 cups of dashi water seems wayy too much overwhelming (for 2 serving as suggested) I tried it and I got a 70% soup final result
    the golden curry package says 540mL water for 5 serving '^'
    I believe the water should be at least cut in half

    Hi nami -san, i am a big fan of your cooking, i started following you in fb as well. You have help cook a lot of wonderful dishes and i would like to return the favor by giving you some suggestion to help make JOC alot better.
    Might I suggest a feature for your blog. I think you will like it also as well as your fans
    Its like a ingridients ratio calculator. Like in this udon recipe you can allow the user to edit how much grams of noodle he or she has. And it will automatically edit the other ingredients quantity base on ratio. Its simple mathematics.

    Hello Nami! May I ask for your help in identifying a Japanese dish? I had it a couple of times for Kyuushoku when I taught in Elementary schools in Japan. It’s a small fried and cubed white fish that tastes a little bit like chicken. It has a brown glaze and sesame seeds on top. The glaze is a little sweet and salty. It would be served with a side of vegetables, rice and a soup. It was my favorite Kyuushoku meal and my Japanese teachers told me the name of it but I can’t remember it. I never saw it in restaurants in Japan and I cannot describe it well enough to find it on the internet, I get Nanbanzuke as a result, but it is not this. Could you please help me? I would love to try and make it.

    Slowly melting the curry roux into the pot is the most time-consuming part. My parents just chuck it in and one time I diced the curry roux before throwing it in. Turned out fine but def not proper lol.

      Hi! You can add curry powder but have in mind that the roux, the tablets, contain flour and that makes the soup the consistency that it has. So you would have to either reduce it more or add some kind of thickener if you want the same consistency

    That is truly beautiful and I know it has to taste fantastic. I love curry dishes and I have never understood any that doesn't. But we are all different in tastes. As for me I want to try this.     I cannot find the Japanese curry roux cubes; since i have not used Japanese curry powder before, i plan to make the roux using the recipe you published earlier with the garam masala. Can you please let me know what constitutes the curry powder ?

      I actually don't know exact. I checked S&B Curry Powder on Amazon (amzn.to/2SJTnnG) and it says: Turmeric, coriander, fenugreek, cumin, red pepper, black pepper, cinnamon, ginger, star anise, cloves, cardamon, fennel, nutmeg, laurel leaves, allspice, garlic.

      There is no liquid dashi sold. You can use dashi powder or dashi packet. But it's easy and quick to make it from scratch too. :)
