    Ingredients:
    500g sliced beef (flank steak, topside or sirloin) I used topside
    1 tsp baking soda/sodium bicarbonate
    pepper
    little water
    1 red bell pepper, sliced
    1 green bell pepper, sliced
    1 yellow bell pepper, sliced
    1 small onion, sliced
    2 tablespoons light soy sauce
    1 tablespoon oyster sauce
    1 tablespoon hoisin sauce
    1 teaspoon cornstarch
    1 teaspoon sesame oil
    2 tablespoons vegetable oil
    3 cloves garlic, minced
    1-inch ginger, minced
    1 tablespoon Chinese cooking wine - Shaoxing I use
    ½ teaspoon sugar
    cornstarch slurry - 1 tbsp cornstarch 1 tbsp water
    1 teaspoon chilli flakes (optional, for a bit of heat)
    2 spring onions, chopped (optional)
    Toasted sesame seeds for garnish (optional)
    Steamed rice for serving

I fall apart in the UK heat😂 so god knows how you cope in Thailand, so for you to cook all these meals in a red hot kitchen...then edit the footage which must take ages...and respond to all your comments is truly admirable mate! your hard work has paid off

    I love all the tips and tricks thats right up my tree being a south yorkshire man .
    All the Chinese dishes i learnt off Alex wilkie in lockdown all the indian dishes i learnt from the curry kid and als kitchen ,bread from foodgeek foraging from uk wildcrafts, growing from digwell green fingers.
    You can see i am a Yorkshire man but you can see i spend wisely but i get the best in life by doing it yourself and i praise people like Rik who spend alot of there time to teach and show you how to do things the best and right way.

    I really love watching your videos Rik. You remind me so much of my dad and his way of cooking. He was away at sea a lot but when he was home I loved watching him cook for us and you cook exactly the same way. He passed at 54 years old. Too bloody young but Rik you are such a wonderful comfort to me ❤. Watching your videos brings back so many memories. Thank you. Keep up the good work. X

    Gotta say it Rik but this is top dish and explained with no fanfare. I do like mine with noodles though but both work. Your cooking methods have so many hidden tips all you uploads are worth watching twice and just for the detail.

    Hi Rik, I just made this for the family, with the only tweak of adding a bit of fish sauce and some fresh coriander at the end to keep my wife happy. It was superb - better than a takeaway as it was lighter and fresher. It all got gobbled up.

    Made this last night Chef. Tasted outstanding and we even used a cheap slab of stewing steak. The trick is definitely bicarb for tenderising and steaming the veg. Thanks for the recipe on this outstanding flavourful dish. Great work.

    Spring in another few days here in Australia 🇦🇺 so we will have hot weather soon enough. Stir frys are pretty quick so kitchen doesn't over heat. Looks yum. I tried your meat tenderising and it was delicious🤤👍💜

    Rik, I just want to let you know that I used your baking soda trick on a ribeye steak yesterday, and I was thrilled with the results! I've never had any luck cooking steak because it always came out tough no matter what I did, until yesterday. I like my steak medium well, and it was so tender I couldn't believe it. ☺️

    We make this often using Chinese spices and sesame oil and served with rice. Southern food in the coastal USA uses rice like potatoes. We had rice plantations. You can still see the old fields if you drive north from Florida up to NC on the old coastal hwy.

    I made this today, swapped out hoi sin for chilli flakes for some spice and it was very tasty. The corn flower gives it a nice edge and the sesame for the shine. Lush.

      Dry Sherry: This is one of the closest substitutes for Shaoxing wine. It has a similar flavour profile and can be used in equal amounts in recipes.
      Mirin: A Japanese sweet rice wine, mirin can work as a substitute. However, it's sweeter than Shaoxing wine, so you may need to adjust the sugar in your recipe accordingly.
      White Grape Juice and Vinegar: Mix 1 tablespoon of white grape juice with 1 teaspoon of white vinegar to mimic the acidity and sweetness of Shaoxing wine.
      Rice Vinegar with Sugar: If you don't have wine on hand, you can mix 1 tablespoon of rice vinegar with 1/2 teaspoon of sugar as a non-alcoholic substitute. This will give a similar tangy and slightly sweet flavour.
      Dry White Wine: You can also use dry white wine, though the flavour won't be as close to Shaoxing wine. Use it in equal amounts as you would Shaoxing wine. Thank you. Best, Rik

    Another winner! Love ginger on many things, sweet or savoury; candied ginger makes a good snack as well in baking.
    Do you have a good recipe for M&S Jamaica Ginger Cake? A lady at work, from Wapping, had a wonderful recipe but her lips were sealed. It had several types of ginger, was rich and moist, lovely with butter.

      Soy Sauce with Sugar: Mix soy sauce with a small amount of sugar to mimic the sweet and salty profile of oyster sauce. Start with a ratio of 1 tablespoon of soy sauce to 1 teaspoon of sugar and adjust to taste. Thank you. Best, Rik

    Hey Rik, I hope this isn’t a stupid question however I have a seafood allergy and usually just omit oyster sauce and such. Is there an alternative that I could switch for to add that bit of depth the oyster sauce gives? Thanks

    Definitely ginger, it takes a dish up a notch. Could you give me the name of the wine you use, it's not listed in the recipe? Also, I have spicy sesame oil that I would us at the end but then again, I love spicy.
