Full Recipe: everydaygourme...
Ingredients:
1.5kg chicken thighs, skin on, bone in
1 tbsp coconut oil
150ml coconut water
2 tbsp red curry paste (below)
2 medium potatoes, cut into 1cm cubes
2 medium carrots, cut into rounds
½ red capsicum, cut into pieces
1L chicken stock
1 brown coconut, flesh grated, or fresh coconut chunks
1 red onion, diced
2 garlic cloves, finely chopped
1 tbsp ginger, finely chopped
Red Curry Paste
1 onion, diced
1 stalk lemongrass
1 large tomato, blanched and peeled, chopped
2 tsp red chilli powder
½ red capsicum, sliced
2 tbsp peanut oil
2 red chillies
2 makrut lime leaves
2 tbsp coriander roots, finely chopped
15g ginger, sliced
2 cloves garlic sliced
Chicken Marinade
1 tsp coriander powder
1 tsp cumin powder
1 tsp turmeric powder
1 tbsp chilli powder
Salt & pepper, to taste
2 tbsp peanut oil
To Finish
1 tbsp soy sauce
2 tbsp fish sauce
½ cup coconut milk powder
Coriander, to serve
2 limes, to serve
Jasmine rice, steamed, to serve

I think the title should be Kelvin's style chicken curry. I come from Singapore and I cook chicken curry. I have also tasted different kind of chicken curries from Singapore. I don't use some of the ingredients he use in my curry. Also where are the curry leaves???!

Some of the comments are hilarious. Gotta love the age of social media, everyone is an expert. Of course, these “experts” don’t actually make their own videos, they just criticize other people’s videos.

Fish sauce in chicken curry ???? Yuck
Fish sauce actually works, just that I think he should cook the onions a little longer before adding the ginger and garlic. Let the onions caramelise and let its flavour release .
This is horrible!!! An hour or two for chicken? What's he trying to do? Prepping chicken for a sandwich? That chicken looked like it was ready to disintegrate.
And he put the coconut powder into the curry!!! That's why there were lumps all over that curry.
Those chicken pieces looked great. It's a pity he destroyed them by overcooking it.
He doesn't want to use a lot of garlic, then proceeds to use an insane amount of garlic. Bro, his hair is barely hanging on 😅 This recipe is trash!!!

This is such a fake curry, no Indian would call it CURRY.
Indians aren't the only people in the world who eat curry. There are many different cultures that have curry, and many different styles of curry. This is a Singapore style curry as the title of the video states.
