  • The Crispiest & Tastiest Fried Zucchini Recipe - Courgette Pakora - Vegan Recipe & Gluten Free
    If you think zucchini to be bland and tasteless then I guarantee you that this recipe will change your mind. The gram flour does all the magic and following some tips and tricks you will get the crispiest and yummiest zucchinis you've ever had.

    Ingredients required for making fried zucchini - serves 3 to 4
    * 476 gm/ 17 oz / 2 small to medium zucchinis. Please do not use zucchinis that are too large as those are more watery with more seeds. You can cut the zucchini into smaller sizes or circles as well.
    * 80 gm/5 tablespoons heaped gram flour (besan). You can substitute gram flour for chickpea flour ( garbanzo bean flour)
    * 20 gm / 2 tablespoons cornflour (cornstarch). You can even use rice flour instead.
    * 1 teaspoon level baking powder
    * 1/2 teaspoon salt or as per taste for batter
    * 1/4 th teaspoon turmeric powder
    * 1/4 th teaspoon red chilli powder (optional)
    * 1/3 rd cup water (may need more )
    Serve this immediately after making as an appetizer or as a side with rice and dal. If you would like to have this with a chutney the link to a video is given below where i showed how to make a green chutney -

    First I thought its a beguni, A very unique and nice Pakora, look so crispy and delicious. I will definitely try Zucchini pakora.

    I absolutely love fried zucchini. I used to do it with round discs but that's very time consuming. yours is a great idea. I did mine italian style with panko crumbs and parmesean cheese sprinkled on top and some garlicky aoili sauce. really good but a lot of work for an appetizer.never occurred to me to just use long slices like you did here. I'm not completely wild about the taste of garam flour so I think when I do this I will mix in half and half regular flour. this would be great dipped in a corriander chutney

      You can definitely combine flour to gram flour . Actually gram flour has this nutty kind of flavor which stands out in pakoras. Another tip , you can even add an egg to your batter if you plan to use only plain flour. Giving you the link to one of my videos where I showed how to make a green chutney-

    Don’t those gloves give you a lot of confidence when using a mandolin? I don’t think I would use mine without them! This zucchini looks beautiful and since I have a surplus of zucchini, I truly appreciate the recipe! I hope you have a wonderful weekend.

      O yes the gloves do give a lot of protection. There is a protective guard that came with the slicer but I feel more comfortable with the gloves. Your neighbor will start loving zucchini if they make it this way 😀 . Take care Dianna.

    The final product looks like BEGUNI.
    Zuccinis aren't availablle easily in India, so can I replace them with egg plants

      But one of my viewers from Mumbai said that it is easily available where she lives. Yes definitely you can replace them with brinjal 😀
