Air pockets are inevitable because when we whip freshcream we are basically incooperating air until it forms soft peaks. To get rid of big visible pockets I work the cream using a palette knife before going onto the cake. Also ambient temperature is important work at night or make sure the room is cool enough when you ice your cakes. All stoves off!

Sometimes its not really necessary, this is most ideal for butter cream cakes
