  • Ingredient list and measurements
    * Add Palm oil a cup of palm oil
    * Add 2 medium sized purple onions
    * Fry it till the onions becomes translucent
    * Mix 3 cups of grinded egusi with water. The consistency should be thick
    * Add to the fried onions
    * Fry the Egusi till it goes from a paste to a clumpy texture
    * Next Add your beef stock and your beef
    * Blend a cup of crayfish, 2 scotch bonnets and 1 tiny Okpei and add to the mix and allow to cook for 3 minutes
    * Add your washed and chopped Ugu leaves and your soup is ready

      Okpei is a local Nigerian seasoning made from Castor seeds that is used in major Nigerian Local dishes to boost the food aroma and taste.

    This is nice...no seasoning cubes like Maggi just Okpe (local Igbo seasoning made from locust beans). This is the way soup is made. You don't need all these online chefs telling you to stuff all kinds of protein in one pot of soup. If the client was not particular about just beef only, just a little fish like stockfish for instance, would have been ok, not with all the so many kinds of meat and fish. Don't know where online chefs get those kind of recipes from. Their mothers and our mothers didn't cook that way, and practically all Nigerians don't.

    This is the way I prepare my egunsi, I fry it. With that, egunsi cooks better. With the other method of not frying, I notice I purge when I eat it so I stick to the frying method

      missed the the egusi.which is dried blended pumpkin seeds .. fried after adding the onions.... and you missed the greens... you can use spinach.....

      It’s Okpei and it’s made from castor oil seeds. It’s a local seasoning and adds a robust flavor to soups and stews.
      The green is Ugu leave also called pumpkin leaves

      I blended crayfish, fresh pepper and Okpei (Okpei is a dark-brown local seasoning that originated in the Igbo region of Nigeria).

      The spice level is dependent on the quantity of pepper you choose to add, you can always add little if you don’t want it spicy

      Yes, the water from the paste should dry
