  • Aubergine Parmo is probably something you have never seen. This is a flavour-bursting dish. Aubergine, parmesan, mozzarella, basil, and a tomato and onion sauce. Delicious!

    Taking Cooking food back to basics.
    Ingredients
    - For the Aubergine
    - 2 large aubergines or 4 small
    - Salt
    - Olive oil
    - For the Bechamel Sauce:
    - 2 tablespoons butter
    - 2 tablespoons all-purpose flour
    - 2 cups milk
    - 1/4 teaspoon nutmeg
    - Salt and pepper to taste optional
    - For the Tomato Cheese Topping:
    -1 onion diced
    - 2 cloves garlic minced
    - Salt and pepper
    - 1 tsp All spice
    - 2 cups grated mozzarella cheese
    - 1/2 cup grated Parmesan cheese
    - Fresh Basil for garnish (optional)
    Preheat your oven to 190°C (380°F)

    I haven’t had eggplant since 1972. My grandmother grew it in her backyard garden, and she’d make it for supper.
    She peeled it, sliced it, piled it into a column, and let it sit in the frig overnight. She would dredge the slices in flour and pan fry it. I loved the crunchy outside and the soft inside.
    Thank you for this video, and the memories it brought to mind.

    Another amazing dish with aubergines, just wish my hubby would eat them also Parmesan cheese. He doesn’t like either, so i know what am eating for Friday night evening meal.don’t know what he’s having lol

    Abso LOVE how you cook mate! I'm an Aussie, I made this recipe but I cut the 'egg plant' lengthways and layered, as per, in a glass lasagne dish!!... I also added a topping of cheddar to hold for serving firmness!!... Excellent!!... Thankyou!🎉 Next time I'm going to add some chopped, sauteed green capsicum to the tomato sauce! Thanks again!

    I make eggplant Parmesan,and I prefer it without the breadcrumbs,not so soggy that way.I don’t use bechamel as something about tomato sauce.and a cream sauce doesn’t do it for me,so I do the mozzarella,and Parmesan.I am in agreement with you Rik,just throw in the milk into the butter,and flour,and whisk away.😊

    I agree that eggplant isn’t as bitter as its reputation anymore… for the most part. A few years ago my neighbor shared eggplants he’d grown and they were so bitter!! Maybe he grew an heirloom variety 🤔?

      Quite likely. The Florida types were very bitter. Give him a packet of one of the Japanese eggplants, like Ichiban. They grow and produce well too.

    You must have scored a cartload of aubergines for a cheap price😁. Wish I had the opportunity! Aubergines are my favorite vegetable, so I can't get enough of them. This one looks delish also. Another incitement to get me a new oven!

    I have made this lasagna style, which is easy, but this is a lot more presentable. This would be perfect for guests. The food snobs will gasp in horror, but I use drained cottage cheese a lot in things like this, it's delicious. This recipe is excellent. Thanks Rik.

      SIDE NOTE: I have a bunch of soup cans that I cut the bottoms out of for making things like crumpets. I bet this would work cooked in those, and you could make them a mile high :)

    OMG Looks delicious and the smell must be out of this world! Another winner! You've created an instant classic which will inspire many imitators! Excellent demo!!! I always wondered if you shop in those amazing open air markets with rows and rows of vendors with amazing fresh fruits and vegetables, seafood and fish, fresh meat and local snacks or local supermarkets or both? I've seen videos of amazing huge markets with locals buying all those exotic items which we can't get in the states!

    I have made what I have called, cos that was the name of the recipe of the first version I made some years ago 'Aubergine Parmigana' several time. But I lost the ricipe of the first version so have made it differently each time.
    Mine is different to yours, no surprise and although there is enough for four (according to the recipe) it raely last till the next day.
    Same ingrediants as yours but all in one dish. A big gooey slab of gorgeousness. I love Aubergines. I'll try your version next.
    While you were doing the taste test my jaw was working in sympathy. Aubergine and Mozarella on the shopping list this week.

    Looks great now this one has much less salt than the Moussaka (it looks that way from watching the video) I’m going to have to try it out! My mother used to make a eggplant parmigiana almost the same way she made lasagna she just substituted the noodles with the eggplant slices

    Looks like eggplant haven't had Aubergine (or will when I make this). Nice video! Eggplant fried is a lot like fried green tomatoes if you haven't had them try to get some green tomatoes and give it a try. Zucchini and summer squash (yellow squash) are good too. Flame grilled is less fat though.
