Back again with another comment. Scott Seidl from "The Greasy Shop Rag" RUclips channel has been doing over-the-bench videos for over a year now and they work out pretty well for the most part. He's in the same situation - working for a company so he can't take the time to do video work while he's at work. He narrates them after the fact so all he has to do is turn the camera on and work.
