Hi! I am Joconde.
This is a really moist and soft White velvet buttercream cake.
The recipe made after many tests.
First of all, it is very moist, soft, and has a deep vanilla flavor.
There is a pink velvet cake in my old video. The way to make it is similar to that.
This time I added vegetable oil, increased the amount of butter, and added sour cream.
And fold in the egg white meringue.
It is really delicious.
I used vanilla ermine buttercream (also known as flour buttercream.) which goes well with this.
In my Chocolate Cupcake video, I introduced Chocolate Ermine Butter Cream.
The paste made by boiling milk and flour is mixed with butter.
This buttercream is fluffy and light. It is like vanilla whipped cream.
So I think this cream goes better with the white velvet cake.
This recipe is with sugar reduced. So try the taste while making.
If it doesn't seem to be enough, add a little condensed milk.

♥︎ White velvet cake (15cm diameter)
250 g cake flour
5g baking powder
2 g baking soda
2 g salt
125 g sugar
200 g butter
40g vegetable oil
225 g sour cream
10g vanilla extract
200g egg white + 125g sugar
♥︎ Ermine buttercream
40 g flour
150 g sugar
2g salt
220 g milk
12g vanilla extract
220 g butter
1/2 tsp (3-4 g) kirsch
♥︎ Sugar syrup
60g water
15g sugar
♥︎ Tools
No.16 star tip, No.18 star tip, No.352 leaf tip,

i finally made this cake, and i’m so glad i did! it was very decadent and sweet-not too sweet, just lightly so. it felt light and the flour paste in the buttercream took this cake over the top! that combined with the eggy and fluffy cake, it was great!! thanks so much for the recipe 💕

@@sharonsolana oh it totally took this buttercream over the top! i thought it would have an odd leftover flour aftertaste, but the stove and heat got rid of it lol. you should try to make a small batch and see how you like it! plus it pairs well with the sour cream cake!

Stunning. I'm learning a lot about turntable frosting technique from watching your videos! And the Ermine buttercream looks fantastic, I've never heard of it, but it'd be a good alternative to anyone who has egg allergies and allows you to use slightly less butter and sugar to make it "healthier." I like how you think outside the box with the cake preparation, also...cutting the butter into the flour instead of creaming with the sugar.
It’s called the reverse creaming technique. Not such an uncommon technique. Happy Baking.
I am 76…and I have always loved white cake best. I do not like chocolate like most women like chocolate. I used to crave chocolate right before my period but no other time and since I went through menopause in my mid-50’s I could care less about chocolate. My sweet Mother, who has been gone now for 39 years, used to make me the most wonderful spice cake with raisins in the batter for my birthday. I think the recipe came right out of the old red and white Checkerboard, 3 ring binder Better Homes and Gardens cookbook. She knew that I would rather have a good, moist white cake or a delicious moist spice cake instead of any kind of chocolate cake. And my mom LOVED chocolate cake or a wonderful chocolate cream pie! These recipes for a good moist white cake are ones that I want to compare and then I definitely want to try one. I do have a number of wonderful recipes for delicious chocolate cakes. You see, I have 5 daughters and they all love chocolate! I can’t wait to try a White Velvet Cake. I do love Red Velvet Cake and when I make one I make the original cooked white frosting for it not cream cheese frosting. I love baking. Always have. Thank all ya’ll for posting these recipes.

I never heard of ermine frosting before, it's very interesting. Most of your cakes use a lot of cream, this seems a little lighter.

Thanks for the recipe. I made this cake yesterday. I think the sugar should be reduced. The genoise is quite sweet and the buttercream is super sweet.

I may be a kid, but I personally love watching your vids. You do a great job, and one of my favorite parts of a video is when you turn off the music and let the sounds of mixing come.
