초코시트와 캬라멜 생크림으로 맛을 낸 케이크를 만들었어요.
초코와 캬라멜이 만났으니 더이상 설명이 필요 없네요.
초코시트는 제 초코 제누아즈 레시피로 만들었어요. 아주아주 촉촉하고 부드러운 최고의 제누아즈죠.
아래에 제가 사용한 레시피 있습니다. 1cm 두께의 시트가 5장 정도 나와요.
그리고 만드는 자세한 방법은 제 영상 “초코 제누와즈의 종결자 시크릿레시피!!” 에 있습니다.

영상이 오래전 것이라 많이 구리지만.. 자세하게 나와있습니다. ^^;;
여기에 버터나 물을 제외하고 진하게 고은 캬라멜로 생크림을 만들고
여기에 초코 캬라멜 마카롱 까지 올렸어요.
이번 영상은 좀 길~어요. ㅎㅎㅎ 케이크만 보실 분은 앞부분 모두 보시고요.
마카롱은 케이크 영상 뒤에 초콜릿 꼬끄와 캬라멜 버터크림 만드는 과정이 나와있어요.
그리고 저의 이전영상 프렌치 마카롱 영상을 참고 하시면 뻥카없는 마카롱 만드는 방법을 자세히 알 수 있습니다.

여기 - • 속이 꽉찬 프렌치 마카롱 ...
캬라멜은 하루전에 만들어 사용했어요.
물이나 버터를 넣지 않고 같은양의 설탕과 생크림 으로만 만들었어요. 좀 덜 흐르는 캬라멜을 위해 그렇게 만들었답니다.
물론 이 것도 만든 후 바로 쓰면 많이 묽지만.. 하루 정도 지나면 진득해지는게 사용하기 좋았어요.
캬라멜 생크림의 경우 캬라멜 양을 생크림과 마스카포네치즈를 합한 양의 20% 정도 넣었어요.
적게 넣으면 존재감이 없더라고요. ^^ 하지만 덜 단 것을 원하시면 18%만 하고 시트사이에 필링 하는 양을 늘려도 괜찮을거예요.
만일 마스카포네가 없으면 넣지 않아도 좋습니다. 마스카포네 양 만큼 생크림으로 대체 하세요.
이 때 캬라멜이 너무 묽지는 않은지 확인 하세요. 하루 전에 만들어두면 농도가 딱 적당해요.
캬라멜 드리핑 하기전에 케이크의 뒷면에 1~1.5 cm 가량 짜서 놔둔 후, 흘려 보아서 마음에 드는 농도가 되면 사용하세요.
실패 하지 않고 드리핑 잘 할 수 있을 거에요.
마카롱 꼬끄는 코코아 가루를 첨가 했고요. 캬라멜 버터크림 필링 에는 약간의 소금을 넣었어요. 솔티드캬라멜은 정말 환상적이네요.

설탕 140g
생크림 140g

캬라멜 105g
마스카포네치즈 70g
생크림 450g

달걀 2개 + 노른자 1개 약 120g
설탕 70g
달걀흰자 55g
설탕 55gg
박력분 70g
코코아 12g
생크림 37g
♥︎ 초코마카롱 (3.5cm 꼬끄 24개)
달걀흰자 35g (계란 1개 분)
설탕 35g
아몬드가루 47g
슈가파우더 47g
코코아파우더 4g

무염 버터 60g (부드럽지만 살짠 차가운)
캬라멜 42g
Hello ~
I made a whipped cream cake flavored with the chocolate sheets and caramel.
Chocolate met caramel! I don't need any further explanation.
The chocolate sheet is made with my Choco Genoise recipe.
It's very moist and soft. You must try it!

Here - • 속이 꽉찬 프렌치 마카롱 ...
The Caramel was made a day ago.
It is made with the same amount of sugar and heavy cream without adding water or butter. I wanted to make thicker caramel.
Of course, if you use this right after making it, it may be very thin, but it was good to use the next day.
If you don't have mascarpone cheese, you can omit it.
Replace it with heavy cream as much as Mascarpone.
At this time, check if the caramel is too thin. If it is made a day ago, the consistency will be just right.
Before dripping the caramel, we need a test.
Squeeze it about 1 ~ 1.5 cm on the back of the cake, leave it on.
Keep going on when you feel it reaches the desired thickness.
You'll not fail.
Added cocoa powder for Macaron shells.
A pinch of salt was added to the caramel buttercream filling.
The salted caramel is fantastic.

105g Caramel
60g Mascarpone Cheese
450g Heavy cream

2 eggs + 1 yolk (approx. 120 g)
60g Sugar
55g Egg white
55g Sugar
70g Cake flour
(or 60g all-purpose flour + 10g corn starch)
12g Cocoa powder
37g Heavy cream

35g Egg white (for 1 egg)
35g Sugar
47g Almond flour
47g Icing sugar
4g Cocoa powder

What is your own personal favourite sponge to do ?? You bake beautifully every thing is so neat when I bake my kitchen looks like the cocoa and the icing sugar had a fight and the flour was the referee and it got out of control, I wear it I decorate the counters with it, tastes fine but my word the mess, which is why I do it so rarely now.

That cake looks amazing! Where did you get the metal bars you used as guide for slicing the cake?
You can get them from any hardware store , in different widths . So if you want to cut your cake layers thicker you buy a larger bar.

Hey, I made the caramel cream and I disappointed because the cream broke even I tried twice :( I also thought add a gelatin but I did not. ☹️
Also it seems to be very soft, after I finished decorating it I put it in the fridge and I will wait until tomorrow, I hope it will be thicker... Tomorrow is my husband's birthday; do you have any advice? 😢
해먹어 봤는데 맛있었어요ㅎ 다들 먹어보고 칭찬하더라구요^^ 정말 감사합니다😊 그냥 카라멜 시트가 아니라 초콜릿 시트여서 맛있었던것 같아요ㅎ 카라멜이랑 초코는 진짜 어울리는 조합이에요😍😍 그리고 초코시트는 엄청 촉촉하고 일반 시트보다 쫀쫀한? 느낌이였어요! 카라멜은 조꽁드님의 데세라체? 그 레시피 보고 했더니 기본 카라멜 보다 정말 맛있었고요 케이크 장식은 조꽁드님 처럼 이쁘게 하고 싶었는데 카라멜 묽기 조절 실패로 생크림 장식이 다 흘러 내려서 화산폭팔 케이크가 되긴했어요ㅠㅠ 그런데 대충 만들어도 엄청 맛있는데 조꽁드님이 한 완벽한 케이크는 얼마나 맛있을까요ㅠㅠ 앞으로 더 맛있는 케이크 많이 만들어 주세요😍

If you use a kitchen scale it’s easy to measure everything in grams. Some of these quantities are so precise that cup measurements will not work - they’re not accurate enough.

Hi Joconde! Is the caramel meant to be sweet? I've made it 3 times now (just the caramel) but it's never sweet for me. It always has a sour taste to a greater or lesser degree
it might be burnt, try taking it off the heat earlier or using a lower heat setting.
